1 cup whole wheat flour
1 cup all-purpose flour
1 tablespoon baking powder
3/4 cup skim milk
1/4 cup canola oil
vegetable oil cooking spray

Steps:

  • Combine flours and baking powder, stir well to mix.
  • Add milk and oil, stirring to form a soft dough.
  • Turn dough out onto a lightly floured surface, a knead lightly 2 or 3 times.
  • Roll dough out to 1/2 inch thickness, and cut into bisquits with a bisquit cutter.
  • Place bisquits on a baking sheet coated with cooking spray.
  • Bake at 450 degrees for 12 minutes or until lightly browned.

Almost zero-fat, these delicious non-guilt biscuits are tender and fluffy. I have for years called these Zero Fat Biscuits but, due to an insignificant amount of fat in the flour, they are now called Almost Zero Low-Fat Biscuits. Just follow these easy step-by-step photo instructions.

2 cups flour
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/4 cup non-fat yogurt

Steps:

  • Preheat oven to 400° convection or 425° regular.
  • Combine 2 cups AP flour, 1 tablespoon baking powder, 1/2 teaspoon baking soda, 1/2 teaspoon salt. Mix well.
  • Add 1 1/4 cup nonfat yogurt. Fold in until all dry is incorporated. If you use Greek yogurt, you may need a tablespoon or so of milk.
  • The easiest is to do 8 drop biscuits. If you want to cut biscuits, spread the dough on a floured surface about 3/4 inches thick. You can cut six 2 1/2 inch biscuits or eight 2 inch biscuits.
  • Place your biscuits on a PAM sprayed baking pan.
  • Bake until golden brown. About 12-15 minutes.

I recently was told by the Doc that I need to get my cholesterol down by 30 points in 90 days or I have to start taking statin drugs.......so......cookies have egg yolks and butter.....and they won't help me get to my goal. I made this recipe to accommodate my sweet tooth and maybe even help lower my cholesterol at the same time....

2 egg whites
1/2 tsp salt
3/4 c cooking oil
2/3 c sugar
2/3 c dark brown sugar
1 tsp baking soda
1 tsp cinnamon
1 tsp vanilla extract
1/4 c applesauce, unsweetened
2/3 c raisins
2 c old fashioned oats
1 1/2 c all purpose flour

Steps:

  • 1. In a large bowl, beat the egg whites and oil with the salt and sugars.
  • 2. Add applesauce, raisins, vanilla, soda, and cinnamon. Stir well.
  • 3. Stir in the oats.
  • 4. Add flour and mix just until well incorporated.
  • 5. Chill dough, covered for an hour or longer.
  • 6. Make 1 1/2 inch balls and bake 12 to a sheet in a 375 degree oven (350 in a convection oven) for about ten minutes. Remove from oven a rest on a rack for a minute and then use a spatula to transfer to a rack to cool thoroughly. Store airtight. Makes 36 cookies.

Biscuits are one of those items that go with an array of dishes. I've recreated this recipe to be lowfat and sugar free, so you REALLY can't go wrong with these! They brown nice and light on the outside, yet stay really moist and soft on the inside. Recently, I just made this recipe, sliced the biscuits in half, and stuffed them with a scrambled egg dish and cheese. Really tasty! Of course, they also pair nicely with a good stew, too! Or just eat them by themselves! :0) Enjoy!!

2 cups whole wheat flour
4 teaspoons baking powder
3/4 teaspoon salt
2 tablespoons honey (add more if you want a sweeter biscuit)
1/3 cup vanilla yogurt
3/4 cup milk

Steps:

  • Preheat oven to 425 degrees.
  • In a bowl, combine flour, baking powder, and salt.
  • Add yogurt and honey. With a fork, "cut in" the yogurt and honey to the dry ingredients (like you would with buttter), and combine until crumbly.
  • Add milk and stir until the dough forms a ball.
  • Pat or roll the dough out to 1/2-1 inch thick (depending on how big you want your biscuits).
  • With a floured glass or circular cutter, cut dough into circles.
  • Place biscuits on a greased cookie sheet.
  • Bake for 10-12 minutes, or until lightly browned on top.
  • Enjoy with honey, butter, gravy, cheese or plain!

  • Add 1/2-3/4 cup of raisins
  • 1 tablespoon cinnamon.
