SOUTHWEST VEGGIE QUESADILLAS

Southwest veggies quesadillas loaded with bean, corn, bell pepper, cilantro, spices and lots of cheese and served with a creamy cilantro sour-cream dip. These quick quesadillas are packed with flavor and can be made vegan too!

1 tablespoon olive oil
1 cup bell pepper (diced (colors of choice))
1 cup black beans (canned, rinsed and drained)
1/2 cup corn ((canned, frozen or fresh))
1/2 cup onion (diced)
2 cloves garlic (minced or crushed)
1 teaspoon cumin
1 teaspoon chili powder
salt and pepper (to taste)
¼ cup chopped cilantro
4 medium flour tortillas
2 cups shredded cheese (see note)
½ cup sour cream
1/4 cup mayo (or replace with sour-cream or Greek yogurt)
¼ cup cilantro (minced )
Juice of ½ lime
1 tsp olive oil
Salt and pepper (to taste)

Steps:

  • Heat 1 tablespoon oil in a medium pan over medium-high heat. Add the oil, bell peppers, black beans, corn, onion, garlic, cumin, chili powder, salt, and pepper. Season with salt and pepper and cook for 3-4 minutes or until the bell peppers and onions of softened. Turn off heat and stir in the cilantro.
  • In a clean skillet over medium heat, add a flour tortilla. Top with cheese, cooked veggies mixture, and another layer of cheese. Place another tortilla on top and cook, flipping once, until golden on both sides, about 3 minutes per side. Repeat with remaining ingredients. Slice and Serve with sour-cream cilantro sauce.
  • To Make the sour-cream cilantro sauce. Whisk all the ingredients in a medium bowl until combined.

I like this because it is low carb and there are so few things Mexican to eat on low carb. Sometimes I like to top it with a fried egg and have it for breakfast.

1 whole-wheat low-carb tortillas or 1 low-carb tortilla, wrap
1/4 cup low-fat cheddar cheese
2 teaspoons butter (or use nonstick cooking spray)
1 teaspoon fat free sour cream
1 teaspoon sugar-free salsa
1 fried egg, cooked over easy (optional)

Steps:

  • Melt one teaspoon of butter in a skillet and add tortilla.
  • Place shredded cheese on one half of tortilla and when tortilla softens, fold top half over it.
  • Add the other teaspoon of butter to the pan and flip the tortilla with your spatula, just like a grilled cheese.
  • When it browns, serve it with sour cream and salsa on top.
  • For breakfast, top tortilla with a fried egg and a little more salsa if you like.
  • Otherwise just serve it plain.

1 (6 inch) low-carb tortillas
1/4 cup sharp cheddar cheese, shredded (any flavor)
1/2 tablespoon tomatoes, diced
1/2 tablespoon onion, diced
1/2 tablespoon bell pepper, diced
1/2 tablespoon mushroom, diced (optional)
1 tablespoon taco sauce
cooking spray

Steps:

  • Lightly spray a small frying pan with cooking spray.
  • Cook the diced vegetables in the pan for about 3 minutes. Remove from the heat & add the taco sauce.
  • Lightly spray another small frying pan with cooking spray.
  • Place the tortilla shell into the pan. Put a thin layer of cheese on half of the tortilla.
  • Scatter the vegetable mixture over top of the cheese. Add another thin layer of cheese then fold over the tortilla.
  • Cook on both sides until slightly brown. Cut into half & serve hot.
