1 pound sausage (bulk or chopped links)
1 cup coconut milk
2 cups shredded cheese
6 large eggs
non-stick cooking spray
salt
pepper

Steps:

  • Brown sausage in frying pan until no longer pink.
  • Beat together eggs and coconut milk. Season with salt and pepper.
  • Spray 8×8 baking pan with non-stick spray. Pour a thin layer of egg mixture into pan and cover with sausage. Sprinkle with shredded cheese. Pour the rest of the egg mixture evenly over top.
  • Bake at 350 until brown on top. (about 20-30 minutes)

1 lb ground Italian sausage
8 eggs
1 cup (112g) shredded cheddar cheese
½ cup (56g) shredded mozzarella cheese
½ cup (120mL) heavy cream
½ tsp salt
¼ tsp black pepper
1 tbsp finely chopped fresh chives

Steps:

  • Preheat oven to 450 and coat 9×9″ baking dish with nonstick cooking spray.
  • To a large pan over medium-high heat, add sausage and break apart with a wooden spoon. Cook sausage until browned, about 5 minutes. Remove pan from heat and discard of grease. Transfer browned sausage to a prepared baking dish and set aside.
  • To a mixing bowl, add eggs, shredded cheddar, shredded mozzarella, heavy cream, salt, pepper and, using an electric mixer, mix until well-combined. Pour atop browned sausage in baking dish.
  • Transfer baking dish to middle oven rack and bake until edges of casserole are golden brown and bubbling, about 25-30 minutes.
  • Remove baking dish from oven and allow casserole to cool slightly before cutting and serving with sprinkle of chopped fresh chives.

26 ounces breakfast sausage, cooked and diced
1 tablespoon chopped red onion
6 large eggs
1 ⁄2 cup grated cheddar cheese
1 ⁄2 cup grated Monterey jack cheese
1 ⁄4 cup unsweetened Almond milk, may substitute half and half or cream
4 ounces cream cheese, cut into small pieces
1 ⁄4 cup diced tomatoes (may use canned but drain well)
2 tablespoons chopped green bell pepper
1 teaspoon chopped fresh sage leaves (may use basil, cilantro or parsley)
1 ⁄4 teaspoon kosher salt
1 ⁄4 teaspoon freshly ground black pepper
1 ⁄8 teaspoon garlic powder
SPECIAL EQUIPMENT: 8 x 6 inch oven proof glass baking dish or pie pan

Steps:

  • 1. Place the rack in the center position and preheat the oven to 375 degrees F. 2. Spray the casserole dish with cooking oil and layer the bottom with the cooked diced sausage and onion. 3. Crack the eggs into a bowl with all the remaining ingredients, mix well and pour over the sausage. Bake for 25-30 minutes or until the eggs are cooked through. 4. Remove from the oven and let the casserole cool for a few minutes to set before slicing into 6 servings. Remove each portion with a small spatula or fork and serve garnished with fresh sage leaves. I'm pretty much on a low-carb for life diet and have been for several years so I'm always looking for new recipes and new ideas for something tasty AND that fits within my personal dietary guidlines. This recipe turned out really good and has unlimited options (i.e. beef sausage, hot dogs, chopped ham, chopped up spam or throw in your favorite veggie..) so feel free to get creative with it!!

2 cups cooked cauliflower
2 tablespoons butter
1 cup heavy cream
1/4 teaspoon pepper
1 cup shredded cheddar cheese (divided)
1 lb smoked sausage (I prefer beef sausage)
1/8 teaspoon paprika
vegetables, any you want to add would also work if you prefer, I like mushroom

Steps:

  • Cut smoked sausage in half, lengthwise, and then chop in 1/2 again.
  • (If uncooked, first cook according to package directions until SLIGHTLY browned.).
  • Put cooked cauliflower into 2 quart casserole dish. Add cooked meat and mix.
  • Melt all remaining ingredients (using 1/2 of the shredded chedder cheese) except for paprika in a saucepan over medium heat until warm, melted and smooth. (Use a wisk and stir constantly.).
  • Pour cheese sauce over cauliflower and meat.
  • Sprinkle remaining shredded cheddar cheese on top, and then sprinkle paprika evenly over the top.
  • Bake in preheated 350 degree oven for 35-45 minutes (watch-just until golden brown on top).
