Steps:
- Combine the dry ingredients together add the egg and water and mix well.
- It will be a sticky dough.
- Divide the dough in half.
- Take a half at a time and dust your work surface with protein powder.
- Liberally dust the dough and roll out very very thin on your work surface.
- Fold the dough in half and cut into strips with a very sharp knife.
- Place the cut strips on to a dry towel and let them air dry for 2 hours.
- To cook drop noodles into boiling salted water.
- Use a large pot- water foams.

- Prepare pasta according to package directions; drain. HINT - save 1/4 cup pasta water to add to pasta later if it needs more liquid.
- Stir all other ingredients into hot pasta, saving a little of the Parmesan to sprinkle on top. If the dish seems too dry, you can add a little of the reserved pasta water (the starch in that water helps to bind the sauce).
- A nice variation is to toss in about 20 grape tomatoes (split in half first) as you toss all the ingredients. They add wonderful color and flavor.

- Bring a large pot of water to a boil; add salt, then add the pasta; cook to al dente, about 7 minutes.
- Meanwhile, heat a large skillet over medium heat and add in olive oil and butter.
- Add the garlic and nuts; cook 5 minutes.
- Remove garlic when it gets golden brown.
- Add in broth and cream; bring to a bubble; add in the cheese and melt into sauce.
- Drain pasta well and add it to the sauce.
- Add sage; toss to coat pasta in sauce and walnuts; serve.
