This is a delicious low carb muffin recipe that can easily be changed to other yummy versions, simply by changing the flavors, such as lemon poppy-seed or orange and dark chocolate chip. This recipe makes four muffins but you can halve it to make 2, or double it to make 8. Very easy. I make my own almond flour from raw nuts in a coffee grinder dedicated to food items, but you can also buy it already ground such as Bob's Red Mill brand.

Number Of Ingredients 9

1 cup almond flour
1/4 cup all-purpose flour
3 tablespoons Splenda sugar substitute
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1 pinch salt
2 large eggs, beaten
1/2 teaspoon apple cider vinegar
4 tablespoons raisins, either regular or 3 tablespoons golden raisins

Steps:

  • Preheat oven to 350 degrees. In a medium sized bowl, mix together first six ingredients. In a seperate small bowl mix eggs and vinegar, pour liquid mixture into the dry ingredients and stir together using a spatula or wooden spoon. Mix in the raisins, and pour into muffin tin lined with 4 paper liners. Bake for approximately 15 minutes.

1/2 cup butter, melted
4 eggs

Steps:

  • Preheat oven to 350 and grease a muffin tin.
  • Mix dry ingredients together well.
  • Add wet ingredients and mix well.
  • Fill muffin tins 1/2 to 2/3 full.

The best thing about this recipe for carb lovers is it only has 9 total grams of carbs per muffin, & the NET carbs is only 6 because of the 3 grams of fiber,1 mg of chol,214 Mg of sodium, 1 gram of sugar per muffin. My husband says he could not tell the difference between these & the calorie laden ones. They are moist & tasty.You can have one & not feel guilty. Nutritional info was calculated using MY FITNESS PAL This recipe has 266 calories per muffin. Grab a cup of coffee or tea & breakfast is done. For Carb Counters I am sure you will love & enjoy this light tasty dessert. We sure did.

1 cup(s) splenda

Steps:

  • COUNTING CARBS CAN BE DIFFICULT IF YOU CAN'T SATISFY YOUR SWEET TOOTH EVERY NOW AND THEN. So I created this tasty dessert to have without guilt. Preheat oven to 325 degrees F. Line with paper liners and spray a 12 cup muffin tin with non stick cooking spray. Set aside till needed.I used Super fine Almond Flour & organic Chia seeds.
  • Add all the dry ingredients to a medium size bowl. Almond flour, chia seeds, baking soda and salt. Stir and whisk together to combine, and set aside till needed.
  • Now add wet ingredients to a separate larger bowl, the eggs, oil, buttermilk & splenda & beat till blended together.
  • Next add in half of the chia seed mixture, and beat till blended together. Repeat and beat again till all is blended well.
  • Remove beater and switch to a large spoon. Add in the nuts and Blueberries, and carefully stir the blueberries into the batter.NOTE YOU CAN ADD HALF OF THE BERRIES & NUTS INTO THE BATTER, THEN ADD THE REMAINDER ON TOP. Or add extra nuts & berries on top being mindful that this will add additional CALORIES.
  • Spoon batter evenly between each of the 12 muffin cups. Add extra nuts and berries on top IF DESIRED . Bake in preheated 325 degree F. oven for about 25 to 30 minutes. Remove from oven allow to cool and serve. My helper could not wait until they cooled completely, she had one almost immediately.

Delicious low carb muffins. I got this recipe from Food.com with the title "corn bread muffins" but these are not like corn bread. The taste and texture are more like soft muffins like the ones you get from Famous Dave's but without all the carbs. I have been making these every weekend for about 3 months and my husband and I split one every morning. You can also make a tasty low carb icing but I find these to bee took sweet so I always cut the Splenda in half on those. Also note: You can add 1 Tsp lemon extract and 1 Tsp poppy seeds for a fabulous variation.

2 (1 ounce) packets Splenda sugar substitute (or equivalent)
2 eggs
4 tablespoons butter
2 tablespoons heavy cream
2 tablespoons water

Steps:

  • Preheat oven to 350.
  • Mix together the Almond Flour, Baking Powder and Splenda.
  • Melt the butter and beat the eggs.
  • Add the melted butter, beaten eggs, heavy cream and water.
  • Spray muffin pan with Pam (or equivalent) - I like the Pam Baking Spray.
  • Bake for 18 minutes. This should allow them to fluff up nicely.
  • Makes 5 - 6 good sized muffin.
