1 cup butter (2 sticks) softened at room temperature
1 cup Splenda sweetener
5 eggs, at room temperature
2 cups almond flour
1 teaspoon baking powder
1 teaspoon lemon extract
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F. Grease a 9- to 10-inch springform or a 9-inch round cake pan.
  • Cream butter and Splenda well. Add eggs, one at a time, beating well after each addition.
  • Mix almond flour with baking powder and add wet mixture a little at a time while beating. Add lemon and vanilla extracts, mix.
  • Pour into pan and bake for 50-55 minutes.

2 c almond flour (i used almond meal)
1 tsp baking powder
1 tsp lemon extract
1 tsp vanilla extract

Steps:

  • 1. Preheat oven to 350*F
  • 2. Cream butter and Splenda well.
  • 3. Add eggs - one at a time - beating well after each.
  • 4. Mix almond flour with baking powder.
  • 5. Add egg to mixture a little at a time while beating.
  • 6. Add lemon and vanilla extracts.
  • 7. Pour into greased 9"-10" Springform pan (or 9" round cake pan ~ which is what I used). Bake 50-55 minutes.
