RICE KRISPIES TREAT COALS

- A stocking full of coal might not be such a bad gift after all: These lumps are Rice Krispies Treats! To make some, prepare a half batch of the treats as the box directs, then shape into small irregular lumps while still warm. Microwave 16 ounces chopped dark chocolate in 30-second intervals until melted. Dip the treats in the melted chocolate and place on a parchment-lined baking sheet. Let set slightly, then roll in black cocoa powder or finely ground chocolate wafer cookies.
RICE KRISPIES COLADA
As many Cubans know, a "Colada" is an original Cuban coffee. Since my hubby is a big fan of Rice Krispy Treats and Colada, I decided to come up with a sweet and caffeinated way to keep him up all day long! (This recipe was adapted from Ham On The Street (H.O.T.S))

Steps:
- Melt butter in a skillet over medium heat.
- Add marshmallows to melted butter and stir with a spoon/spatula until they just begin to melt.
- Add in Pilon (or other Cuban coffee blend) coffee grounds.
- Mix until smooth, then remove from heat.
- Add in cereal and mix until cereal and marshmallow mix is evenly blended.
- Turn out mixture onto a greased baking dish.
- Coat hands with cooking spray and pack down Rice krispy Treats tightly into the baking dish.
- Cut into squares and ENJOY!

RICE KRISPIES CHICKEN
I found this recipe in a cookbook from work. I decided to try it and found that it was a BIG HIT with my 3 fussy children and even my husband devoured it! Very delicious:)

Steps:
- Line a baking pan with aluminum foil and spray with a non-stick spray.
- Place Rice Krispies in a ziploc bag and crush with a rolling pin.
- Cut chicken up in the size you wish like tenderloin size.
- Place Rice Krispies and paprika in a shallow bowl and mix well.
- Combine egg and milk in another bowl and whisk well.
- Add the flour, poultry seasoning, salt and pepper and stir to make a batter.
- Place cut up chicken one or two pieces at a time in the batter and cover chicken.
- Dip in crumbs and cover completely and then place in baking pan.
- Melt the margarine and drizzle over the chicken pieces.
- Bake for 30 to 40 minutes or until chicken pieces are a golden brown.
