Steps:
- In a large saucepan, heat butter over medium-high heat. Add mushrooms, celery and onion; cook and stir until tender, 4-6 minutes. Stir in flour until blended; cook and stir until lightly browned, 2-3 minutes. Gradually whisk in stock. Bring to a boil. Reduce heat; simmer, covered, 10 minutes., Add spinach; cook and stir until wilted, 2-4 minutes. Gradually stir in cream, sour cream, salt and pepper; heat through (do not allow to boil). Sprinkle with parsley.

Steps:
- Bring chicken broth to a simmer.
- Add parmesan cheese and mushrooms to broth, stir. Continue to simmer for 3-5 minutes.
- Add frozen spinach. Allow to simmer for 5-10 minutes.
- For Vegetarian use the Vegetarian chicken flavored broth only.

I love wedding soup, but not the calories or carbs that go along with it. So I came up with my own version that loses all the calories and carbs but none of the flavor!

Steps:
- Preheat oven to 400.
- Combine ground turkey, egg, crushed pork rinds, oregano, minced garlic and celery well.
- Form into small meatballs. Place meatballs onto cookie sheet and bake for 25 minutes.
- In large stock pot, saute onion in olive oil until transparent.
- Add squash, chicken, spinach, meatballs, and chicken broth (you can adjust broth to suit your preference).
- Bring to a boil, then reduce heat and simmer, covered, for about 1 hour.
- Serve and enjoy!
- I know it takes time to make the meatballs, but trust me, you'll be glad you did. They are wonderul!
