1 3/4 cups flour
3/4 cup light brown sugar
1/2 cup whole wheat flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon nutmeg
1 teaspoon ground cinnamon
1 1/4 cups low-fat buttermilk
1 1/4 cups unsweetened applesauce
1 large egg
1 teaspoon vegetable oil
1 teaspoon vanilla extract
1 1/2 cups fresh blueberries

Steps:

  • Preheat oven to 400 degrees.
  • Lightly coat a 16-cup muffin pan with cooking spray.
  • Mix together 1 1/2 cups all-purpose flour, sugar, whole-wheat flour, baking powder, baking soda, salt, nutmeg, and cinnamon in a large bowl. Make a well in the center of the mixture.
  • Whisk together the buttermilk, applesauce, egg, oil, and vanilla extract in a small bowl.
  • Toss the blueberries in 1/4 cup all-purpose flour to lightly coat the berries.
  • Pour the buttermilk mixture into the flour mixture and stir until the batter is just moistened. Fold in the blueberries.
  • Divide the mixture evenly among the muffin cups. Bake the muffins for 20 minutes. Cool the muffins in the pan on a rack for 5 minutes. Remove the muffins and serve warm or at room temperature.

I just found this recipe on the side of the egg-white container I bought. I adjusted by using whole wheat and splenda brown sugar sub and adjusted spices. They are REALLY tasty for a low cal muffin!! AND EASY!

1 cup whole wheat flour
1/3 cup splenda brown sugar substitute
3 teaspoons baking powder
1/4 teaspoon cinnamon
1 cup oats
1/2 cup egg white
1/3 cup canola oil
1/3 cup 2% low-fat milk
1 teaspoon vanilla
1 cup blueberries (fresh or frozen)

Steps:

  • Preheat oven 400.
  • Combine fist five ingredients in bowl and whisk until mixed well.
  • Stir in all remaining ingredients except blueberries and mix.
  • Gently fold in bluebberries and fill lined muffin cups to 3/4 full.
  • Bake for 18 - 20 minutes.

1 cup(s) white wheat flour
1/2 cup(s) white sugar
1 teaspoon(s) baking powder
1/2 teaspoon(s) baking soda
1/2 teaspoon(s) salt
1/4 cup(s) unsweetened apple sauce
1 cup(s) skim milk
2 large eggs
2 tablespoon(s) lemon juice
1 teaspoon(s) vanilla extract
2 cup(s) fresh or frozen blueberries

Steps:

  • Preheat oven to 350 degrees. Spray a muffin tin with nonstick cooking spray.
  • Sift together flours, sugar, baking powder, baking soda, and salt.
  • In a separate bowl combine the apple sauce, lemon juice, eggs, milk and vanilla extract. Add the liquid ingredients to the flour mixture, stirring just until moist.
  • Fold in the blueberries.
  • Spoon the batter into 12 muffin cups. Bake at 350 degrees for 22 minutes, or until golden.
