This is pretty much a Seafood Louie minus the lettuce and seafood! My best friend's mom used to make this dressing in the galley of their boat while the crab pots were being pulled up! It's the best Louie (thousand island) dressing I've ever had. I like having it around when I have the craves for a Louie but not the time, because pretty much everything's in there but the lettuce and the shrimp or crab!

1/2 cup mayonnaise
2 tablespoons whipping cream
2 tablespoons chili sauce (such as Heinz)
2 tablespoons green bell peppers, chopped
2 tablespoons scallions, chopped
2 hard-boiled eggs, chopped
2 tablespoons black olives, chopped
2 tablespoons pickles, chopped (I use bread and butter pickles) (optional)
salt and pepper, to taste

Steps:

  • Mix mayo, whipping cream, and chili sauce together.
  • Add all remaining ingredients.
  • Refrigerate.

SHRIMP OR CRAB LOUIS

I have made this using the packaged crab meat and have also made this using both crab and small shrimp, this makes a wonderful lower fat salad to serve for a brunch get together :)

2 lbs cooked small shrimp or 2 lbs crab
coarsley shredded lettuce leaf
chopped tomato
4 -8 hard-boiled eggs
4 large lemon wedges
salt and pepper
1 cup reduced-fat mayonnaise (or use full-fat)
1/4 cup bottled chili sauce
1 finely minced green onion (or 1/4 cup scallion)
2 -3 tablespoons minced green olives
2 -4 teaspoons fresh lemon juice
1 teaspoon Worcestershire sauce
1 teaspoon horseradish
salt and pepper

Steps:

  • Whisk all dressing ingredients together and season with salt and pepper.
  • Prepare four large bowls.
  • Divide the shredded lettuce in the bowls.
  • Divide and top with seafood, then place egg wedges and tomatoes around the seafood, with a lemon wedge.
  • Pass the dressing on the side.
  • Delicious!

This is the my personal favorite of all salads, and it makes a great lunch or light dinner. You don't see it much any more in restaurants since it was popular back during the 1950's (the garnishes of olive, egg, asparagus and cuke are "traditional"), but it's so hard to top, I can't believe it's not on every menu to this day.

1/4 lb baby shrimp (a sustainable product for you "green" chefs)
1 hard-boiled egg, sliced (Instructions below for AB's perfect not-boiled hard-boiled egg.*)
6 -8 slices cucumbers, peeled
3 -4 grape tomatoes, halved
6 -8 black olives, pitted
4 spears canned asparagus (Yes, canned is actually better... fresh is too tough, even if cooked perfectly.)
1/4 cup thousand island dressing (or a much better dressing in my opinion... Louie Dressing (For Seafood Salads or Reuben Sandwiches).)
1/4 head iceberg lettuce, torn into bite-sized pieces (or Romaine if you prefer)

Steps:

  • *For the perfect hard-boiled egg, courtesy of AB: Place a steamer in a large sauce pan with a well-fitted lid. Bring about 1/4 inch of water up to boiling. Place no less than 3 and no more than 6 eggs in the steamer. Cover and steam for 12 minutes. Remove eggs from steamer and drop directly into iced water. The eggs will be firm but tender, easy to peel, and will have a solid and creamy but not dry yolk. Thanks, AB!
  • Place your salad bowl in the freezer for 30 minutes before assembling the salad. All the ingredients should be well-chilled before beginning.
  • Begin assembling the salad with the lettuce.
  • Add the cucumber slices, tomato halves, asparagus spears, black olives, and sliced hard-boiled egg.
  • Top with shrimp.
  • Serve dressing in a separate container so the diner can use as much dressing as they prefer.

I have been trying to find a louie sauce that is just like a fish house we go to here and I think I may have finally found it. ;) Havent tried it yet but had to add it here.

1/4 cup heavy cream
1/4 cup chili sauce
1 teaspoon Worcestershire sauce
1 teaspoon fresh lemon juice
3/8 teaspoon salt
1/8 teaspoon cayenne pepper
2 tablespoons white onions, grated

Steps:

  • Combine the ingredients and mix very thoroughly. Refrigerate for a few hours before serving so all flavors blend.
  • Good on shrimp tacos, crab salad, and seafood cocktails.
