1 pineapple, sliced
2 (750 ml) bottles vodka (2 bottles skyy infusions passion fruit vodka)
pineapple slice (to garnish)

Steps:

  • Layer the sliced pineapple in a large canister and pour both bottles of infused vodka over the pineapple. All of the pineapple slices should be covered with vodka. Cover the canister and let it sit out for a week to 10 days or until vodka begins to turn light yellow.Remove the pineapple slices and slice a few smaller to use as a garnish, and then pour the vodka into a covered container to store.
  • To make the pineapple goldrush, add some ice and a little water to a martini glass to chill it. Then pour out.
  • Drop some more ice into a cocktail shaker and add 2 jiggers of the infused vodka (3 oz.) over the ice.
  • Shake vigorously and strain the drink into the chilled martini glass.
  • Garnish with a pineapple slice.

1 (24 ounce) box frozen strawberries, defrosted (without added sugar)
1 (750 ml) bottle pineapple vodka (or make your own infused vodka, see pineapple goldrush recipe)
bottled lemonade
strawberry (to garnish)

Steps:

  • Make a strawberry puree by blending the defrosted strawberries in a blender until smooth (save this puree in a covered container in the fridge).
  • Fill a 16 oz. glass with ice, then dump the ice into a cocktail shaker.
  • Add 2 jiggers (3 oz.) of the vodka, 2 jiggers of strawberry puree, and 2 jiggers of lemonade to the shaker.
  • Stir or shake the shaker, then pour, including the ice, back into the glass.
  • Garnish with sliced strawberries on the rim.

2 steaks, fresh and never frozen (1-inch thick, any kind except prime rib)
2 -4 tablespoons butter (not margarine)
1 lemon, juice of
Lawry's Seasoned Salt

Steps:

  • Take the steaks out of the fridge, and allow to come to room temperature.
  • Heat a large nonstick skillet (you can even use a cast iron skillet) on high heat until very hot.
  • Rub both sides of the steaks lightly with the lawry's seasoning.
  • Add 1/2 the butter and 1/2 the lemon juice to the hot skillet, next add one steak in the center of the skillet.
  • Cook 2-4 minutes on each side (depending on the thickness and how you like your steak done) with a lid on, and make sure the kitchen is well ventilated because this could get smoky. Do not poke holes in steak to test for doneness, as this will dry the meat out.
  • Once steak is cooked, repeat with other steak, and let both steaks sit for 2-3 minutes to allow juices to distribute throughout.
  • When ready to serve, you can add additional butter, lemon juice and seasoning to your liking.
