My niece Shwana loves this! She always writes my name "Ant" Kelly when we play Rummy or Scrabble - started when she was little and stuck. I always make this when we go tubing in Wisconsin. Prep time includes does not include time to marinate.

1/4 cup balsamic vinegar
1/4 cup soy sauce
2 tablespoons Worcestershire sauce
1/4 cup olive oil
2 garlic cloves, Crushed
1 teaspoon rosemary
1/4 teaspoon fresh ground black pepper
2 lbs london broil beef (approx)

Steps:

  • Mix all marinade ingredients together.
  • Lightly score meat in a diamond pattern on each side.
  • Place meat in a resealable bag. Pour in marinade. Squish meat and marinade around to get all the nooks and crannies.
  • Marinate in refrigerator 2-3 hours or up to 24 hours, rotating occasionally. Can be frozen in the marinade too (see "For Camping" for how I do this).
  • 20-30 minutes before cooking take meat out of the refrigerator to come up in temperature.
  • Cook in the broiler or on the grill on high heat for 5-7 minutes per side depending on thickness and desired doneness. I have been asked about roasting temperatures, I have never done this, always grill or broil.
  • **For camping - Place the fresh London broil and marinade in a zipperbag, squeeze out as much air as possible, seal, place inside a vacuum pack bag. Vacuum pack and freeze (I like to vacuum pack the zipper back to guard against leaks in the cooler). Put frozen in the camping cooler, after a day or two it is defrosted and can be cooked on the grill with minimal preparation and mess.**.

1/2 c balsamic vinegar
1/4 c water
1/4 c soy sauce
1 1/2 tsp brown sugar
1/2 tsp dried thyme
1/4 tsp fresh cracked pepper
2 clove garlic, minced
4 lb london broil
olive oil

Steps:

  • 1. Place London Broil in a glass dish. Pierce with fork (both sides). Rub both sides with olive oil.
  • 2. Combine remaining ingredients in a bowl. Pour over London Broil. Cover and refrigerate 6 or more hours. Turning every 1-2 hours. Let sit at room temperature 30 minutes before grilling.
  • 3. While it is resting bring the extra marinade to a boil for 2 minutes. While grilling baste the meat with the marinade. *(see personal notes for extra marinade ideas)
  • 4. Grill (Charcoal) over medium heat for 7 to 9 minutes per side. Grill until the internal temperature reads at least 145 degrees Fahrenheit. Let the meat rest for about 10 minutes before slicing

1 Tbsp Spicy Brown Mustard
1/2 cup Red Onion, finely chopped
1/4 cup Extra Virgin Olive Oil
1/8 cup Balsamic Vinegar
4 cloves Garlic, smashed and roughly chopped

1 tsp Salt

Steps:

  • Whisk olive oil, balsamic vinegar, red onion, garlic, mustard, salt, and pepper together in a mixing bowl. Place London broil in a ziplock bag or baking dish and cover with the marinade up to 24 hours prior to cooking. Preheat grill to high heat. Grill London broil on high for 4-5 minutes for the first side. Flip, reduce heat to medium-high, and grill for another 5-6 minutes. Remove from heat, allow to rest 5 minutes, then slice thinly and serve. London broil tends to be a tougher cut of meat, being that it is so lean. We recommend allowing the meat to marinate for up to 24 hours to help tenderize the steak before cooking.

  • Stir all marinade ingredients together until blended. Pour into a large ziplock bag add meat turn to coat, seal bag. Refrigerate for 3 to 4 hours, turning occasionally. Remove bag from refrigerator and allow meat to reach room temperature in the marinade. For medium rare, grill the steak over moderate to high direct heat for 6 to 8 minutes per side, allow steak to rest for 10 minutes before cutting.

This is just a delicious marinade. It comes from the cookbook 'Pacific Fresh' which is one of my favorite cookbooks. You can find bottled chili sauce near cocktail sauce in the market. I grilled this and served it with red potatoes done on the grill and a green salad. I hope you enjoy it!

1 (2 1/2-3 lb) london broil beef, about 2 inches thick
1/2 cup dry red wine
1/4 cup bottled chili sauce
1/2 lemon, juice of

Steps:

  • Place steak in a large ziploc bag.
  • Mix remaining ingredients together and pour over steak.

  • Brush a little olive oil on your grill rack and preheat the grill.

  • Mine took about 20 minutes for medium rare.
  • Let stand 10 minutes and then slice thinly against the grain of the meat.

1-3/4 cups vegetable oil
1 cup soy sauce
1 cup Worcestershire sauce
1 cup brown sugar
1/2 cup sesame seeds

Steps:

  • Whisk together oil, Worcestershire, soy sauce, brown sugar, sesame seeds, ginger, garlic powder and dry mustard. Pour over London Broil in a 9 x 13 pan and marinate for least 24 hours and up to 48 hours. If marinade does not completely cover the meat, turn the meat several times during the marinade period. Bring the meat to room temperature before grilling otherwise you will have to cook it too long and the meat will be tough. Let the meat cook for 15 minutes on one side, 10 minutes on the other. If you are not sure use a meat thermometer and cook until medium. It will continue to cook after you remove it from the grill so don't leave it on too long. While the meat is resting, place a few pats of butter on top. They will melt and give the meat a richer flavor. Slice the meat as thinly as you can against the grain. If you totally screw up and cook the meat too long and it's tough, melt some butter and hit it with a bit of soy sauce and drizzle it over the meat, no one will ever know.

A quick fix for an inexpensive cut of meat. Mix up soy sauce, vegetable oil, ketchup, oregano and one whole clove of garlic, then marinate the meat overnight.

1 garlic clove, minced
1 teaspoon salt
3 tablespoons soy sauce
1 tablespoon ketchup
1 tablespoon vegetable oil
1/2 teaspoon ground black pepper
1/2 teaspoon dried oregano
4 lbs flank steaks (see my note) or 4 lbs london broil beef (see my note)

Steps:

  • 1. In a small bowl, mix together garlic, salt, soy sauce, ketchup, vegetable oil, black pepper and oregano.
  • 2. Score both sides of the meat, diamond cut, about 1/8 inch deep. Rub garlic mixture into both sides of the meat. Wrap tightly in aluminum foil, and refrigerate for 5 to 6 hours, or overnight. Flip meat every few hours.
  • 3. Preheat an outdoor grill for high heat, and lightly oil grate.
  • 4. Place meat on the prepared grill. Cook for 3 to 7 minutes per side, or to desired doneness.
  • My Note: Since the title uses "London Broil" and the recipe uses "Flank Steak" I can see where there would be some confusion. I decided to use London Broil because it was on sale. This is definitely a thicker, tougher cut of meat and needs a longer marinating time 48 hours. I know that seems like a bit much but trust me it will pay off in the end. I used this marinade for 1 & 1/2 pounds of steak. I used kosher salt, low sodium soy sauce, olive oil vs. veg., chili sauce vs. ketchup, and added a splash of white wine vinegar. I put everything into a ziploc bag and let it go, turning it every so often and rubbing the marinade into the meat. After it's grilled to your liking cut against the grain and serve with a baked potato and fresh garden salad!
  • Now, when London Broils are on sale, I buy several, make a big batch of this marinade, let them sit a day or two, then put them in individual freezer ziploc bags, with the marinade. Then, on a busy day, I can just pull out the pre-marinated steaks, defrost, grill, and enjoy! Great time and money saver, and so yummy!
  • One time the meat didn't come out very tender so I added about 3 Tbls of lemon juice to act as a tenderizer. I also added about 2 tsp of worchestershire sauce.(we call it rooster sauce), 2 tsp of fish sauce, 1 tsp of ground ginger, chili sauce instead of ketchup and a tsp of garlic powder. I broiled this instead of grilling (due to the nasty weather) and it turned out really good.
  • Using a london broil vs flank steak (as the recipe indicates) I added 2 tsp of lemon juice to assist in the tenderizing process, then marinated the meat for three days. Definitely more tender than a regular london broil using the marinade -- Next time I'll up the garlic and omit the oregano which overpowered the other flavors in the marinade. Will make again with modifications.

2 1/2 pounds top round roast
1/2 cup olive oil
1/3 cup soy sauce
1 tablespoon brown sugar (packed)
1 tablespoon lemon juice
2 tablespoons Worcestershire sauce
2 cloves garlic (minced)
1/4 teaspoon black pepper

Steps:

  • Whisk together the olive oil, soy sauce, brown sugar, lemon juice, Worcestershire sauce, garlic, and black pepper in a mixing bowl. (Read here for other marinade ideas.)
  • Add the roast to a large bowl and pour the marinade over the London Broil. Toss to make sure all sides are well covered. Cover the bowl and refrigerate for 6 to 24 hours.
  • Preheat your oven to 450 degrees. Prepare a roasting pan with a wire rack.
  • Place the roast on the wire rack, discarding the rest of the marinade. Roast for 15 minutes at 450 degrees. Reduce the temperature of the oven to 350 degrees and continue roasting until the meat registers 125 degrees with an instant read thermometer, about 30 to 45 minutes.
  • Remove from the oven and let stand for 10 minutes before slicing. Cut in thin slices to serve.
