- Preparation:.
- Remove 6 pieces of pasta from package.
- Preheat oven to 375 degrees.
- Brown hamburger in large skillet, remove from heat, drain. Stir in Pasta Sauce.
- In a medium bowl beat two eggs with Basil and Oregano. Add Ricotta and Feta cheese.
- Assembly:.
- In a 9 x 9 x 2 inch baking dish, spread ¾ cup meat sauce.
- Place 2 pieces of uncooked pasta over the sauce.
- Spread about 1 cup of Ricotta mixture over the pasta. Spread 1 cup meat sauce over Ricotta. Sprinkle with 1 cup Mozzarella cheese.
- Repeat step 3 two more times. Top with pasta, spread remaining Ricotta, meat sauce, and Mozzarella cheese (add Parmesan if desired).
- Bake:.
- Cover with foil and bake at 375 degrees for 30 minutes.
- Remove foil and bake for an additional 10 to 15 minutes until bubbly.
- Let stand 5 minutes, cut and serve.
THREE MEAT LASAGNA
This is just a variation of my own lasagna recipe. I say variation because I make it differently every time depending on what I have on hand and my mood. This is the first time I've written my lasagna recipe down. Although I have made literally thousands of pans of lasagna throughout my years (I worked as a cook), I find this one perfectly acceptable (and I consider myself a lasagna snob). So you should certainly enjoy this, if not make it the only lasagna recipe you make from now on.

- Cook onion in olive oil in a large skillet until tender, several minutes.
- Add garlic, ground beef, italian sausage, basil, oregano, parsley, salt and pepper to pan and cook until meat is thoroughly browned and breaking up lumps as it cooks.
- Drain fat.
- Add tomato sauce, tomato paste, and brown sugar to pan, mixing well.
- Reduce heat, cover, and simmer for 25-30 minutes.
- Meanwhile, cook lasagna noodles in plenty of boiling salted water for ten minutes, then drain.
- In a mixing bowl, stir together ricotta cheese, eggs, parmesan, salt, pepper, and parsley until smooth.
- Preheat oven to 375°F.
- In a large lasagna baking pan, place 1/3-1/2 of meat sauce in bottom of pan (just enough to cover).
- On top of the meat sauce in pan, layer the lasagna as follows: 4 noodles (to cover pan), 8 ounces shredded mozzarella, 4 ounces sliced pepperoni, 4 more noodles, ricotta cheese mixture, 4 more noodles, remaining meat sauce mixture, 8 ounces mozzarella, 4 ounces of pepperoni, and 1/4 cup parmesan.
- If any corners of noodles try to stick up past the sauce in the pan, tuck them under the sauce.
- Bake at 375F for 30-40 minutes or until heated through and cheese is golden and bubbly.
- Allow to rest for 10-15 minutes before slicing and serving.

- Preheat oven to 375 degrees. Spray baking pan with non-stick cooking spray.
- Brown meat with onion and garlic. Drain grease off.
- In medium bowl, beat eggs, Stir in ricotta, 2 cups of mozzarella and the Parmesan.
- Spoon half jar of sauce on bottom of pan; layer with 2 sheets lasagna noodles, half ricotta mixture and browned meat, and remaining sauce from first jar. Add 1 cup of mozzarella. Layer 2 sheets lasagna noodles, remaining ricotta mixture and browned meat, and half of the second jar of sauce. Top with 2 sheets, remaining sauce and 1 cup of mozzarella.
- Bake, covered with foil until bubbly, 50-60 minutes. Uncover and continue cooking until cheese is melted, about 5 minutes. Let stand 15 minutes before cutting.

Steps:
- Preheat oven to 350 degrees.
- Shred provolone (can use salad shooter).
- Combine all the cheese mixture ingredients and mix well.
- Oil bottom of a 13" x 9" x 2" pan with a thin layer.
- Add 1/3 cup spaghetti sauce (ladle-full) to bottom of the pan.
- Place 3-4 noodles across bottom of the pan.
- Cover with cheese mixture (about 3 tablespoons per noodle) and spread.
- Add 1/3 cup of spaghetti sauce and repeat until top of pan is almost reached.
- Add noodles and then add spaghetti sauce on top.
- Cover with grated parmesan cheese.
- Cover pan with aluminum foil, shiny side down.
- Follow baking direction on back of no-cook lasagna box.

3 MEAT 3 CHEESE LASAGNA
I have tried different combinations of meat, cheese and sauce, and this is the one my husband and I both love the most. Any other lasagna just doesn't compare. Occasionally I have had to use just ground beef, or just mozzarella, depending on what I had, but they just don't turn out as yummy as this combination.

Steps:
- Brown the meat, and drain.
- Add both cans of sauce to the meat mixture, and heat on low, covered, making sure to stir every few minutes.
- While the sauce is heating, boil the noodles according to package directions, and preheat the oven to 350 degrees.
- When the noodles are ready, drain them and run cold water over them so that they are not too hot to touch.
- Put a little bit of the meat sauce on the bottom of a 9 x 13 baking dish.
- Do 2 layers of: 4 noodles, meat sauce, parmesan cheese, mozza-cheddar cheese.
- Final layer is 4 noodles, meat sauce, and parmesan cheese (mozza-cheddar layer gets added later, so it won't burn).
- Bake in oven for 20-25 minutes.
- Take out of the oven and put a final layer of mozza-cheddar cheese on top; bake another 10 minutes or until cheese is bubbly and just starting to brown, don't let it get overdone.
- Let sit for 10 minutes before cutting.

- In a large skillet brown your ground beef. Once browned drain any fats.
- Add onions, garlic and mushrooms cook till onions are clear. Salt and pepper to taste.
- Add tomato sauce and herbs cook for 20 minutes on very low heat. I like to use the Classico Sweet Tomato and Basil sauce.
- Cook lasagna noodles according to box directions.
- Arrange 3 noodles on bottom of a 9x13-inch pan, place 1/3 of your meat sauce over noddles, next arrange 1/3 of each of the cheeses (I like to start with the Ricotta and then the Mozzarella, parmesan and Romano). Repeat this two more times.
- Bake at 375°F for 1 hours. Allow to rest for 30 - 45 minutes and then serve.

I like everything in my lasagna, but there's gotta be 3 cheeses and meat to make it proper. It's even better if you add a little cheddar, feta, and gouda, of course the gouda's just getting excessive...

- Chop the garlic.
- Grind the garlic, peppercorns, salt, thyme, basil, and oregano together with a mortar and pestle.
- Start frying these ground ingredients in a large frying pan with a little oil. Fry for a few seconds.
- Add the ground beef.
- Now boil some water. Add the lasagna noodles.
- Chop the mushrooms, onions, and any vegetables up. Add to the frying meat.
- When the beef is fully cooked, Add the spaghetti sauce, tomatoes, and tomato paste. Continue cooking until the vegetables are cooked.
- When the lasagne noodles are cooked, preheat the oven to 350°F.
- Grate the mozzarella, crumble the ricotta and parmesan, and mix the 3 cheeses together.
- In a lasagne pan, layer the ingredients, starting with sauce, then noodles, then cheese.
- Put 3 layers of noodles, and then more sauce on the top, and finally add some more parmesan to the top.
- Bake in the oven for about 30 minutes.

LOADED FOUR CHEESE AND THREE MEAT LASAGNA
I have always believed that a true cook will cook anything, regardless if it is something that she/he eats or not. I am not a fan of Italian foods, but I cook it and people seem to really enjoy it. For a person who isn't into Italian foods, I must say that I really love my Lasagna recipe.

- 1. On medium heat, cook beef, sausage, garlic and onion in heavy skillet, until well browned.
- 2. Stir in crushed tomatoes, tomato paste, tomato sauce, and water. Season with sugars, fennel seeds, Italian seasoning,garlic salt, garlic powder, beef boullion, black pepper, basil, and 2 tbsp parsley. Simmer, covered, for about 1 1/2 hours, stirring occasionally. Last 15 mins add olives. Last 5 mins add spinach.
- 3. Bring a large pot of lightly salted water to a boil. Cook lasagna noodles in boiling water for 8 to 10 minutes. Drain noodles, and rinse with cold water.
- 4. In a mixing bowl, combine ricotta cheese, sour cream, cream cheese with eggs, and remaining parsley. mix well.
- 5. Preheat oven to 375 degrees
- 6. To assemble, spread 1 cup of meat sauce in the bottom of a greased (9X13) baking dish. Arrange 6 noodles lengthwise over meat sauce. Layer some ricotta cheese mixture, pepperoni, meat sauce, and mozzarella cheese (about 1 1/2 cup per layer). Repeat layers with all ingredients. Sprinkle top with Parmesan cheese and remaining Mozzarella cheese.
- 7. Cover with foil: to prevent sticking, either spray foil with cooking spray, or make sure the foil does not touch the cheese.
- 8. Bake in preheated oven for 25 minutes. Remove foil, and bake an additional 25 minutes. Cool for 15 minutes before serving.
