MINI SHRIMP PIES

Mini Shrimp Pies image

This is a recipe that we just served for a teacher's luncheon. It went over really well - a delicious dish. The cook, Michele, took this from one of Paula Deen's recipes. I prefer fresh mushrooms over canned, but I'm printing the recipe as written. Prep time reflects chilling time for pie crust.

BEST SEAFOOD POT PIE

Best Seafood Pot Pie image

Pot pie ... what is better. Now I like short cuts believe me. I work too, but take the time to cut up a few vegetables and make the cream sauce right in the pan. Well, add a splash of sherry along with some fresh vegetables, some traditional ingredients like frozen peas, chopped shrimp, crab and scallops, and then top with a flaky biscuit. And dinner. My twist ... I like to top with a little cheese before I top with the crust. Pure comfort food

Time 1h20m

Yield 6-8 serving(s)

Number Of Ingredients 18

1 lb shrimp, peeled tails off (I used large and rough chopped)
3/4 lb scallops, rouch chopped (I used bay, the small scallops)
8 ounces crabmeat, 1 can if you can't get fresh just pick through to make sure there are no shells
1 cup onion, chopped
1/2 cup celery, chopped
3/4 cup carrot, chopped
1 cup diced potato, fine chopped skins off
1 cup mushroom, chopped
1/2 cup frozen peas
2 cups half-and-half
1/2 cup chicken broth
1/4 cup butter
2 tablespoons all-purpose flour
1/2 teaspoon creole seasoning
4 tablespoons sherry wine
1/2 cup grated monterey jack cheese
8 country biscuits (I used pillsbury, or you can make your own, no cooked)
2 tablespoons butter (to brush on the biscuits)

Steps:

  • Shrimp -- Prepare your shrimp, scallops and vegetables.
  • Vegetable Base -- In a large pot, melt the butter on medium heat. Add the celery, onion, mushrooms, and carrots and cook until soft. Add the sherry to deglaze the pan, then the creole seasoning, salt and pepper, flour to make a light roux and then add the half and half and the chicken broth. Bring back to a medium heat to lighten thicken. Add the peas, shrimp, scallops, and fresh parsley and stir to combine. The last minute add the crab.
  • Casserole -- Spray the casserole dish or individual baking dishes (soup bowls or small ramikens with Pam or brush with olive oil) and spoon the pot pie mixture inches Top with a little of the grated cheese.
  • Topping -- Take the southern biscuits cut in half, top and bottom half (just thinner so they cook quicker) (Pillsbury or any name brand or you can easily make your own if you want.). Just top the individual dishes or you can top the whole casserole dish. The biscuits can be cut to fit the size of the casserole dish. Brush with some butter to make them crusty brown.
  • Bake -- Heat the oven to 350 degrees and bake until the biscuits are golden brown and the filling is bubbly. About 20-30 minutes depending on your oven. Cook on the middle shelf.

SHRIMP AND ANDOUILLE POTPIES

Shrimp and Andouille Potpies image

Rock shrimp and andouille sausage give these little pies some Cajun flair. Freezing the puff pastry rounds before baking them atop the ramekins helps them to puff into crisp coverings.

Time 1h10m

Yield Makes eight 4-inch potpies

Number Of Ingredients 12

4 tablespoons unsalted butter
4 leeks, white and pale-green parts only, quartered lengthwise, chopped, and rinsed well
6 ounces andouille sausage, quartered lengthwise and chopped
4 garlic cloves, thinly sliced
1/2 cup all-purpose flour
2/3 cup dry vermouth
4 cups fish stock
2 medium Red Bliss potatoes, cut into 1/2-inch cubes
1 pound 8 ounces rock shrimp
2 packages (14 ounces each) frozen puff pastry, preferably Dufour, thawed
All-purpose flour, for surface
1 large egg, lightly beaten for egg wash

Steps:

  • Make the filling: Melt butter in a large pot over medium heat. Cook leeks until soft but not brown, about 7 minutes. Add sausage and garlic, and cook until sausage cooks through and garlic is fragrant, about 2 minutes. Stir in flour to combine.
  • Add vermouth. Let cook for 1 minute. Add stock and potatoes, and cook until potatoes are just tender, about 4 minutes. Add shrimp, and cook until opaque, about 1 minute. Let cool. Divide filling among eight 4-inch (12-ounce) ramekins.
  • Meanwhile, preheat oven to 400 degrees. Make the topping: Roll out puff pastry to a 1/4-inch thickness on a lightly floured surface. Cut out 8 circles that are 1 inch wider than the ramekins; cut a 1/2-inch vent hole in the middle of each. Freeze on a baking sheet for 20 minutes.
  • Top ramekins with frozen puff pastry, and brush with egg wash. Bake until pastry is golden and filling is bubbling, about 20 minutes.

LITTLE PIES (EMPADINHAS)

Little Pies (Empadinhas) image

Number Of Ingredients 5

3 3/4 cups flour
1 1/2 teaspoons salt
4 ounces cold butter
3 whole eggs
SELECT A FILLING:

Steps:

  • Cut the butter into the flour mixed with the salt until the butter is the size of peas. Add one egg at a time until the dough forms a consistency that you can flatten in your flowered hand. Cover with a damp cloth and let rest 2 hours. This dough should not be handled too much. Roll into balls and flatten and place in little 1-inch ungreased pie tins. Fill with beef, shrimp, chicken or cheese filling (see below). Make a small ball of dough, flatten and place on top of the little pie. Squeeze around the edges to seal. Beat an egg yolk and paint the top of the little pies. Bake in a hot oven-400 degrees for 20 minutes and then reduce heat and bake at 350 degrees for 30 more minutes and serve immediately. These pies may be made in any size pans. The small pies are made for appetizers, the larger pies for a main course cut into serving pieces. If it is a large pie, you could call it an empadão. The individual meal size pies are called empada. The baking time will vary according to the pan size.

MINI CRAWFISH (OR SHRIMP) PIES

Mini Crawfish (or Shrimp) Pies image

I am "required" to make and bring these to parties and family gatherings. When I can't sleep I get in the kitchen and cook, actually experiment, which is how I came up with these. They aren't hard to make, but the bread cups can be a little time consuming so whenever you're in the mood, make the bread cups ahead of time and...

Time 55m

Number Of Ingredients 17

24-36 bread cups (see recipe below)
2 lb louisiana frozen crawfish tails with fat, or cooked shrimp, coarsely chopped
1 stick butter
2 medium onions, chopped fine
3 stalk(s) celery, chopped fine
1/2 red &/or green bell pepper, chopped fine
2 Tbsp chives or green onions, fresh or dried
salt and black pepper - to taste
1 Tbsp garlic, minced
1 Tbsp worcestershire sauce (lea & perrin's)
1 can(s) cream of mushroom soup
1 jar(s) 15oz cheez-whiz
1/2 tsp cayenne pepper
1/2 cap liquid crab boil (optional)
2 dash(es) paprika - for color
1 1/4 c italian bread crumbs
paprika or chopped parsley, fresh or dried for garnish

Steps:

  • 1. First you make a roux. NO! NO! NO!, not this time. Just Kidding! Sorry, I got carried away...
  • 2. FIRST - In a large skillet melt butter and add onion, celery, and chives/green onions, and season with a little salt and pepper. Saute until onions begin to soften.
  • 3. Add garlic, worcestershire sauce, cayenne (start with a pinch, you can always add more later), and paprika; continue to simmer 15-20 minutes, stirring frequently.
  • 4. Add soup and Cheez-Whiz, simmer until cheese is melted, stirring frequently to keep cheese from burning.
  • 5. Add crawfish and simmer 10 minutes. Add 1/2 cap, or to taste, liquid crab boil, (optional).
  • 6. Pour mixture into a large mixing bowl and add bread crumbs. Mix well and let sit to allow bread crumbs to expand. The mixture needs to be fairly thick so it won't fall down your shirt when you take the first bite of the mini crawfish pie.
  • 7. Check the mixture and add more bread crumbs if needed, stir and set aside.
  • 8. If you planned ahead and already have your bread cups made, then pop them back into the mini muffin pan and set aside, pour yourself a drink and put your feet up. Otherwise, get started making those bread cups. https://www.justapinch.com/recipes/bread/bread-sweet-bread/sourdough-mini-appetizer-cups.html
  • 9. Once all of your ingredients are ready, use a small spoon and fill each bread cup, pack it in and heap it up on top. Sprinkle the top with a little paprika or chopped parsley. Bake at 350* F for 10 minutes and serve.
  • 10. *NOTE: Before baking, crawfish pies can be frozen then put into a Zip-Lock bag and kept frozen until ready to serve. From frozen bake at 350* F for 25 minutes until hot.
  • 11. *TIP: Alternate method for dough cups - Instead of making bread cups, you can use Pillsbury's pre-made pie crusts (2 crusts) in freezer section of the grocery, or you can make your own fabulous homemade pie crust. Use a cookie cutter to cut rounds that will form a cup when put into a mini muffin pan. Bake for 10 minutes then fill with crawfish mixture. Bake for another 10 minutes to heat through. *OPTIONS: If you don't want to make mini crawfish pies - use this filling to make one full size pie with a top and bottom crust. If you can't get crawfish, use shrimp or crab meat in place of crawfish. Add crab meat last so it stays together better.

LITTLE PIES- SHRIMP FILLING

Little Pies- Shrimp Filling image

Number Of Ingredients 13

1 pound shrimp
1 tablespoon cooking vegetable oil
1 medium onion, chopped
1 clove garlic, finely chopped
salt and pepper
2 tomatoes
1 cup milk
1 tablespoon flour
2 egg yolk
1 can palmitos or can of peas
2 boiled eggs
1/3 cup green olives
3 tablespoons chopped parsley

Steps:

  • Use shrimp that has been cleaned. Heat the frying pan. Add the cooking oil and stir-fry the shrimp, add the finely chopped onion and season with garlic, salt and pepper. Add the chopped tomatoes without seeds or skin. Add a little water and let simmer. Whip the egg yolks, add the milk and flour in a blender. Stir into the shrimp mixture. Continue to stir so it will not scorch. When thick, add the chopped palmitos, grated boiled eggs, chopped green olives and chopped parsley. Let cool. Mixture should be cold and thick before putting into the little pastry shells. NOTE: The same shrimp filling can be used for some of the other recipes in this section. If the filling is for pastéis, it will have to be a little thicker. If it is for empadinhas or pie, it can be less thick. For rocambole use a thicker filling. Less thick if you just want to serve it over rice.
