BAKED HAM AND CHEESE PARTY SANDWICHES



Baked Ham and Cheese Party Sandwiches image

These small, delicious sandwiches are perfect for any party. They are so good that even the pickiest of eaters will eat these.

¾ cup melted butter
1 ½ tablespoons Dijon mustard
1 ½ teaspoons Worcestershire sauce
1 ½ tablespoons poppy seeds
1 tablespoon dried minced onion
24 mini sandwich rolls
1 pound thinly sliced cooked deli ham
1 pound thinly sliced Swiss cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • In a bowl, mix together butter, Dijon mustard, Worcestershire sauce, poppy seeds, and dried onion. Separate the tops from bottoms of the rolls, and place the bottom pieces into the prepared baking dish. Layer about half the ham onto the rolls. Arrange the Swiss cheese over the ham, and top with remaining ham slices in a layer. Place the tops of the rolls onto the sandwiches. Pour the mustard mixture evenly over the rolls.
  • Bake in the preheated oven until the rolls are lightly browned and the cheese has melted, about 20 minutes. Slice into individual rolls through the ham and cheese layers to serve.

MINI GRILLED GRUYERE AND HAM SAMMIES WITH CORNICHONS



Mini Grilled Gruyere and Ham Sammies with Cornichons image

Yield about 4 dozen mini sammies

Number Of Ingredients 6

2 cups cornichon pickles, plus 24, halved lengthwise
12 slices Pullman loaf, or other tight crumb white bread
1 1/2 cups Dijon mustard
12 thick slices Gruyere
6 slices ham
2 sticks unsalted butter, room temperature

Steps:

  • In a food processor, finely chop 2 cups cornichons until they are a coarse paste.
  • Spread one side of each piece of bread with Dijon. Top each piece of bread with a slice of Gruyere. Place the ham on half of the pieces of the bread and cheese. Spread the cornichon paste on the other half of the pieces of bread and cheese.
  • Preheat a griddle or saute pan.
  • Close the sandwiches and press to secure. Butter the outsides of all the pieces of bread.
  • Place the sandwiches on the griddle or pan and cook until the bread is golden brown, 3 to 4 minutes. Turnover and repeat this process.
  • When the sammies are golden brown and crisp on each side, remove them from the griddle and neatly cut the crusts off the bread. Cut each crustless sandwich into 8 neat mini sammies.
  • Top each mini sammie with a cornichon half and secure it with a toothpick.

LITTLE HAMMIES

These little sandwiches are great for any party! After school snacks or lunch!

Number Of Ingredients 8

1 lb ham luncheon meat, diced
8 oz colby/monterey jack shredded cheese
2 Tbsp poppy seeds
1 Tbsp onion, minced
1 stick butter, melted
1 Tbsp mustard
1 tsp worcestershire sauce
2-3 pkg 24 dinner rolls (1x2") in aluminum foil tray

Steps:

  • 1. Mix together the first four ingredients.
  • 2. Mix together hot melted butter, mustard and worcestshire. Pour over step 1 mixture only when ready to spread on rolls. It thickens up almost immediately.
  • 3. Take rolls out of package (do not separate!). Slice in half horizontally so you have a long bottom slice and a long bottom slice (not individual).
  • 4. Spread mixture on bottom slice of rolls and place top slice back on top.
  • 5. These can be made ahead. Place them on paper towel back in the aluminum trays and microwave when ready to serve. Sart with 1 minute and add 30 seconds at a time until hot. If you want them toasted, you can leave the paper towel step out and put the rolls straight in the aluminum trays and bake at 350 degrees for 12-15 minutes until lighly brown.

SLAMMIN' HAMMIES

I always liked the flavors in my baked ham loaf, so I decided to "tweak" that recipe a little and then form the mixture into patties and make on the grill. The result is this delicious "alternative" burger served on a whole wheat roll and honey mustard dressing. This is truly a summertime favorite!

HAMMIES
1 1/2 lb smoked ham, ground
1/2 lb ground pork
2 large eggs
1/2 c graham cracker crumbs
2 oz crushed pineapple with juice (from an 8 ounce can)
1/8 tsp ground cloves
1 Tbsp brown mustard (not dijon)
1/4 c brown sugar
2-3 Tbsp pineapple juice (from can of crushed pineapple)
NEEDED TO ASSEMBLE HAMMIES
6 1-ounce slices swiss cheese
6 whole wheat kaiser rolls
1 c baby arugula, packed
6 slices tomato, 1/2 inch thick
1 bottle honey mustard dressing

Steps:

  • 1. Place all "Hammie" ingredients in a large bowl. Mix with hands until well combined. Mixture should hold together when patties are formed. (NOTE: if too dry, add more pineapple juice, if too wet, add more graham cracker crumbs)
  • 2. Make 6 baseball size patties. Place a "dimple" in middle of each pattie so they remain flat when grilled. Refrigerate for 1 hour.
  • 3. Prepare grill. Coat grids with vegetable oil. Place patties on grill and grill for 5-6 minutes, turn and grill for another 5-6 minutes or until instant read thermometer reads 160 degrees F.
  • 4. During the last minute, place a slice of Swiss cheese on top of each pattie, close lid and cook until cheese melts, about 1-2 minutes.
  • 5. Assemble hammies: Place roll bottoms on serving platter. Lightly drizzle with honey mustard dressing. Evenly divide arugula between rolls and spread evenly. Top each with a hammie and tomato slice. Drizzle the underside of top roll with more honey mustard dressing and place on top of all.
  • 6. Serve with additional honey mustard dressing.
