This recipe makes one dozen individually-sized "bites" which are both easy to make and to serve. Having the potatoes already shredded is a huge time-saver. Browning nicely in the muffin tin, they have that crispy-on-the-outside, tender-on-the-inside texture that everyone adores. The perfect breakfast bite!

1 (20 ounce) package Simply Potatoes® Shredded Hash Browns
4 ounces cooked ham, diced
1/2 lb cheddar cheese, shredded
2 1/2 cups half-and-half cream
8 eggs

Steps:

  • Preheat oven to 400 degrees. In a large bowl, mix together the potatoes, ham and cheese. Fill the cups of one muffin tin with this mixture. Pour 1 1/2 tablespoons of half-n-half into each cup. Cover loosely with aluminum foil and bake at 400 for 15 minutes. Remove the foil and bake for an additional 25 minutes, or until nicely browned. About five minutes before hash brown bites are ready, fry eggs to each person's liking. Serve eggs on top of hash brown bites for a complete breakfast.

2 1/2 cups Simply Potatoes Traditional Mashed Potatoes
1/2 cup ham, chopped
1/2 cup sharp cheddar cheese, shredded
1/2 teaspoon garlic powder
1/2 cup flour

Steps:

  • Preheat a 12-inch skillet with cooking oil spray on medium high heat. In medium size bowl combine potatoes, ham, cheese, and garlic powder, and mix well. Divide into 4 equal patties about 1/2 inch thick. Coat patties with flour, shaking off excess. Fry patties 4-6 minutes on each side, turning only once until golden brown. Yields 4 servings.

5-Ingredient Fix Contest Entry - This is my tasty version of a popular appetizer served at a local restaurant. The crispy yet chewy "baskets" made with the shredded potatoes (hashbrowns) takes this side dish to the next level and is a family favorite.

1 (20 ounce) package Simply Potatoes® Shredded Hash Browns
1 large egg
2 -3 tablespoons flour
1 (12 ounce) package shredded cheddar cheese
8 ounces bacon, cooked and crumbled

Steps:

  • Heat oven to 375 degrees F. Generously coat 2 6-compartment non-stick muffin tins with cooking spray. Set aside.
  • In a large bowl, combine the potatoes, egg and flour, adding just enough flour so mixture "sticks together". Divide evenly among the prepared muffin compartments. Using the back of a spoon, firmly press potato mixture into bottom and up sides of each compartment, making a "well" in each.
  • Place in oven and bake for 20-25 minutes or until just starting to brown. Remove from oven and divide shredded cheese evenly among cups and top each with crumbled bacon. Return to oven and bake another 5-10 minutes or until "baskets" are golden brown and cheese and bacon is hot, melted and bubbly.
  • Remove from oven and let rest for 5 minutes. To serve: gently run the tip of a sharp knife blade around rim of each cup to loosen. Release each basket and place on serving platter.
