I used to eat this when I was in girl scout camp. the kids loved them and so do I. I'm using estimated amounts so you can put as much or as little as you want in them.

FANCY CHICKEN LOG
This is a recipe of my aunts. It is one she makes during the holidays and we ask for it every time we have a get together! It sounds a little unusual but its a must try and will quickly become a family favorite. Also good for baby showers and other parties.

- Beat together first 3 ingredients. Blend in next 2 ingredients and 2 Tbsp parsley.
- Refrigerate remaining parsley. Shape mixture into 9' log. Wrap in plastic wrap and
- chill 4 hours or overnight. Toss together remaining parsley and almonds: use to coat log.
- Serve with RITZ crackers. Yields about 3 Cups spread.

A sophisticated take on the beloved children's snack of celery with peanut butter and raisins, this salad is a study in textures with chewy dates, crisp apple, and fresh herbs.

- Make the dressing: In a large bowl, whisk together 3 tablespoons rice vinegar, 1 teaspoon honey, and ½ teaspoon red pepper flakes. Slowly stream in 3 tablespoons olive oil, whisking constantly until well combined. Season with salt.
- Pluck off any leaves from 10 celery stalks and set aside. Thinly slice the celery on the bias; add it to the dressing.
- Cut out the core of 1 apple by cutting off 4 lobes around it. Arrange the lobes cut-side down on a cutting board and thinly slice them crosswise into half-moons.
- Thinly slice 1 small shallot crosswise into rings.
- Coarsely chop ¾ cup roasted, salted peanuts or crush them with the bottom of a mug or glass measuring cup. Add the apple slices, shallot rings, and crushed peanuts to the bowl.
- Tear the dates into smaller pieces, discarding the pits; add them to the bowl along with 1 cup mint leaves and the reserved celery leaves.
- Serve: Toss everything well to coat in the dressing. Season with salt until it tastes really delicious and serve immediately
BUMPS ON A LOG
I created this one day when my 4yo was tired of the same old snacks. This was all I had on hand but I was able to put it together and give it a cutesy name so my daughter loved it! This would also make a fun breakfast. You could even substitute raisins for the blueberries. Personally, I am not sure about the blueberry/peanut butter combo but hey, my daughter loves it and that's what counts!

- For the filling: Add the peanut butter, cocoa powder, honey, cinnamon sugar and avocado to a food processor and blend on high until smooth and aerated. Scoop into a piping bag or sealable plastic bag. Refrigerate for 10 to 15 minutes.
- For the logs and insects: Choose a tip for piping or cut a hole in the corner of the plastic bag. Place the celery leaves in the recess of the celery stalks and pipe the filling over them, leaving a bit of the leaves sticking up on the sides of each. Top with one of each "insect"--a raspberry, raisin, dried cherry and pretzel--along the length or make logs to your liking.
