CREAMY PEPPER PASTA WITH STEAK STRIPS



Creamy Pepper Pasta with Steak Strips image

This creamy pepper pasta with steak strips is the ultimate comfort food recipe. Tender strips of beef cooked together with mushroom, red onion, cream and peppercorns to make a delicious sauce. It is so easy to make and comes together in under 20 minutes. You can use a cheaper cut of beef, such as flank or skirt steak, making it the perfect cost effective mid week meal. Plus it is so simple to adapt if you want to swap out the mushrooms and add in some bell peppers or broccoli.

2 tbsp olive oil
12 oz skirt/flank steak
1 red onion
12 oz rigatoni
1 tbsp butter
½ cup dry white wine
½ cup beef broth
½ tbsp cracked black pepper
½ tsp green peppercorns in brine
2 garlic cloves
2 cups sliced button mushrooms
1 tsp Dijon mustard
¾ cup heavy cream
2 tbsp chopped parsley

Steps:

  • Place a heavy based skillet over a high heat and leave it to get hot.
  • Season the steak with salt and rub with 1 tablespoon of the olive oil.
  • Add the steak to the hot skillet and sear for 2 minutes on one side before turning and searing for 2 minutes on the other side.
  • Remove the steak from the pan and set aside tented with foil.
  • Chop the red onion into a small dice and add it to the skillet along with the remaining oil. Cook over a low heat whilst move to the pasta.
  • Bring a large pan of water to the boil, then salt generously and add the pasta. Cook until al-dente (usually a minute less than the packet suggests) Set a timer and whilst the pasta is cooking finish the sauce.
  • Increase the heat under your onion skillet, add the butter and sliced mushrooms. Cook until the mushrooms have turned golden.
  • Add the white wine, stirring well and scrape any bits from the bottom of the pan into the wine.
  • Once the wine has reduced by half add the beef broth, cracked black pepper, green peppercorns, crushed garlic clove, mustard and heavy cream . Bring to a simmer then reduce the heat to low.
  • Reserve a cup of the pasta cooking water and then drain the pasta.
  • Add the pasta to the sauce along with 1/4 cup of the cooking water, place back on a medium/low heat and stir to combine.
  • Thinly slice the steak across the grain and then add it to the skillet along with any meat juices that have collected on the plate.
  • If needed add a little more pasta cooking water to thin your sauce, stir well and serve immediately with a parsley garnish.

1 1-pound flank steak or top round steak
3 green onions, cut into 1-inch pieces
2 medium-size red peppers, cut into bite-size pieces
2 medium-size yellow peppers, cut into bite-size pieces
1/2 pound linguine
4 tablespoons olive oil
salt
1/4 pound Mediterranean or ripe olives, pitted
3 tablespoons minced parsley
1/4 teaspoon crushed red pepper
2 ounces sliced provolone cheese, cut into bite-size pieces

Steps:

  • Cut beef flank steak in half lengthwise. Slice each half into 1/8-inch-thick slices, cutting on the diagonal, against the grain of the meat.
  • Cook linguine according to package directions (but don't add salt to the boiling water).
  • Meanwhile, in a 5-quart Dutch oven or 12-inch skillet, heat 1 tablespoon of olive oil. Add green onions and peppers and cook until tender-crisp, about 5 minutes, stirring frequently. Remove with a slotted spoon and set aside in a large bowl.
  • In same Dutch oven over high heat, add 3 more tablespoons of olive oil. When the oil is hot, cook the flank steak with 1/2 teaspoon of salt until the meat is tender and loses its pink color, about 3 minutes. Remove Dutch oven from heat, stir in olives, parsley, crushed red pepper, and vegetable mixture.
  • Drain linguine, add it to meat mixture, and toss to combine. Season with salt. Transfer pasta to a serving bowl, tucking the provolone pieces into the pasta. If not serving right away, cover and refrigerate to serve chilled later.

7 ounces fusilli pasta (about 21/2 cups)
1 pound skirt steak, halved crosswise
Freshly ground pepper
2 tablespoons extra-virgin olive oil
4 ounces baby bell peppers (4 to 6 peppers), quartered lengthwise, stems and seeds discarded
1 red onion, thinly sliced
3 cloves garlic, sliced
1/2 teaspoon dried oregano
1/4 teaspoon red pepper flakes
1/4 cup dry white wine
1 1/2 cups chopped tomatoes from a box (such as Pomì)
1 cup torn fresh basil

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs. Reserve 1/2 cup cooking water, then drain.
  • Meanwhile, season the steak with salt and pepper. Heat a large skillet over high heat until very hot. Add 1 tablespoon olive oil. Add the steak and cook until well browned, about 4 minutes per side for medium rare. Remove to a plate and tent loosely with foil.
  • Add the remaining 1 tablespoon olive oil to the skillet along with the bell peppers, red onion, garlic, oregano, red pepper flakes and 1/2 teaspoon salt. Cook, stirring, until the vegetables are softened, about 4 minutes. Reduce the heat to medium, stir in the wine and cook until almost evaporated, about 30 seconds. Add the tomatoes and 1/4 cup water. Bring to a simmer and cook until the sauce is thickened, about 5 minutes.
  • Add the pasta and any steak juices to the sauce; toss until warmed through, about 1 minute, adding the reserved cooking water as necessary to loosen. Season with salt and pepper and stir in 3/4 cup basil. Divide among bowls. Thinly slice the steak and serve on the pasta. Top with the remaining 1/4 cup basil.

4 tablespoons olive oil
2 (12-ounce) rib-eye steaks
Salt and pepper
2 onions, thinly sliced
2 carrots, peeled and thinly sliced
4 cloves garlic, minced
1 teaspoon dried oregano
3/4 cup dry red wine
1 (26-ounce) jar marinara sauce
1 cup beef broth
16 ounces dried rigatoni pasta
3 ounces Parmesan, shaved

Steps:

  • Heat 2 tablespoons of oil in a heavy large frying pan over high heat. Sprinkle the steaks with salt and pepper. Cook the steaks until they are brown but still rare in the center, about 3 minutes per side. Transfer the steaks to a plate and set aside to cool completely. Add 2 more tablespoons of olive oil to the same pan. Saute the onions and carrots until the onions are translucent, about 8 minutes, with additional salt and pepper, to taste. Add the garlic and oregano, and saute for 1 minute. Add the wine and simmer for 1 minute. Add the marinara sauce and broth. Cover and simmer over medium-low heat to allow the flavors to blend, about 10 minutes. Season the sauce, to taste, with salt and pepper.
  • Meanwhile, trim off any fat from the steaks, then cut the steaks into bite-size pieces and set aside. Bring a large pot of salted water to a boil over high heat. Add the rigatoni and boil until it is tender but still firm to the bite, stirring often, about 10 minutes. Drain the rigatoni.
  • Toss the rigatoni and reserved steak pieces and any accumulated juices from the steaks with the sauce to coat. Transfer the pasta to bowls. Sprinkle with the Parmesan cheese shavings and serve.

1 pound beef top sirloin steak, cut into strips

1/8 teaspoon pepper
1/2 cup shredded part-skim mozzarella cheese
6 cups hot cooked spaghetti

Steps:

  • In a nonstick skillet, saute onion and green pepper in butter until tender; remove and set aside. In the same skillet, brown beef over medium heat until no longer pink; drain.
