Norwegian Krumkake image

The Krumkake is a delicious holiday treat that is versatile, tasty, and a great way to celebrate Norwegian heritage. Great for Christmas, Thanksgiving, or just a fun treat for your family.

3/4 cup of sifted all purpose flour
1/2 cup sugar
1 tbsp corn starch
1/4 teaspoon crushed cardamom
2 eggs
2 Tablespoon heavy whipping cream
1/2 teaspoon vanilla extract
4 tbsp melted butter, but not hot

Steps:

  • Add flour, sugar, corn starch, cardamom to large bowl. Mix well.
  • In smaller bowl, beat eggs and then add cream, vanilla, and butter. Mix well
  • Add liquid mixture into dry mixture and combined until a smooth peanut butter like consistency
  • Preheat krumkake grill
  • Each Krumkake will require about 1 ½ tablespoons of batter. Add one to your Krumkake maker and cook until golden brown. For my tool, this is about 1:30 seconds.
  • Remove with fork and use Krumkake tool to form into cone before it cools down
  • Allow grill to heat back up, repeat until batter is gone
  • Sprinkle with powdered sugar. Fill with whipped cream and fruit. Eat!

A sweet but still tart jam with Swedish lingonberries. This goes really well with classic Swedish meatballs or fried herring (Swedish style).

2 ¼ pounds fresh lingonberries
⅞ cup water
1 cup white sugar

Steps:

  • Place lingonberries in a large pot with the water and bring to a boil. Boil for 5 to 10 minutes, and skim off any foam from the surface. Stir in sugar, bring to a rapid boil, and continue boiling for a few more minutes.
  • Ladle jam into sterile jars, leaving 1/4 inch of headspace. Cover with lids, and screw on rings. Process in a hot water bath for 10 minutes to seal. Refrigerate jam once the jar has been opened.

If you like a mildly flavorful and crispy wafer-like cookie, this is it! Other flavorings can be added in addition to or instead of vanilla. You can even use this recipe to make your own ice cream cones. Easy and quick! Pipe them with whipped cream or dip in melted chocolate.

½ cup unsalted butter
1 cup white sugar
2 eggs
1 cup milk
1 ½ cups all-purpose flour
½ teaspoon vanilla extract
½ teaspoon butter flavoring, optional

Steps:

  • Heat krumkake iron on stove over medium heat. You can also use an electric krumkake or pizzelle iron.
  • Cream together the butter and sugar in a bowl. Add the eggs, one at a time, and mix well using a spoon. Pour in the milk, flour, vanilla, and butter flavoring; mix well.
  • Place a teaspoon of the batter on the preheated iron, and press together. Cook until browned, about 30 seconds per side, depending on the heat. Remove from the iron and quickly roll up around a stick or around a cone before they harden.

I used to have this at The Sanctuary in Chinook, WA. The owner and chef was of Norwegian descent, and with all the elegant dishes I had there, this simple dessert was what I remember most. She always served these upright in wine glasses. Time does not include preparing the Krumkake cones.

8 -12 cookies, Krumkake (Zaar won't list Krumkake as an ingredient)
1 1/2-2 1/4 cups lingonberry jam
2 -3 cups sweetened whipped cream, made with real cream and vanilla is best

Steps:

  • Make your Krumkake from your favorite recipe, there are many to choose from here on Zaar. Roll into cones as you make them. These can be made ahead and stored in an airtight container.
  • For each person you will want to serve 2- 3 Krumkake.
  • Just before serving, spoon or pipe a little cream into the point of the Krumkake.
  • Spoon 2- 3 tsp of jam into the cone spreading it slightly in a line most of the way up the cone.
  • Fill the cone with whipped cream by spooning or piping, serve up right in wine glasses.
  • You can use more or less jam as you prefer.

CREPES WITH LINGONBERRY JAM

2 cups lingonberry jam
4 tablespoons cream cheese, softened
2 tablespoons sliced mint
1/2 cup all-purpose flour
1/2 teaspoon salt
2 teaspoons sugar
1 teaspoon vanilla extract
1/2 cup milk
1 tablespoon melted butter
2 eggs
2 tablespoons freshly chopped mint leaves
Cooking spray
1 cup heavy whipping cream
1/4 cup granulated sugar
1 teaspoon lemon extract
1/2 teaspoon lemon zest
Add all batter ingredients to a blender and blend well.

Steps:

  • For the filling:
  • In a small bowl, mix together jam and cream cheese until well incorporated. Set aside.;
  • For the whipped cream:
  • Using a hand mixer, blend ingredients together until soft peaks form. Refrigerate until serving.
  • Spray a nonstick crepe pan with cooking spray and place over medium-high heat. Add 2-ounces crepe batter and rotate pan until batter adheres to the sides. Allow to cook for 1 minute. Once slight bubbles start to form on the crepe, flip with a rubber spatula. Remove from the pan, place on a platter and repeat with remaining batter. Set aside.
  • Place approximately 3 tablespoons jam mixture in center of a crepe and roll tightly. Repeat until all the crepes are filled and rolled. Serve on a large platter or individual plates with whipped cream alongside, if desired

LINGONBERRY CRUMB PIE

An absolutely delicious tart-n-sweet treat! If you can't find lingonberries, use cranberries - you may want to decrease the amount of sugar in the recipe somewhat, as lingonberries are seriously tart and the amount of sugar reflects that. ;-) Serve this pie with caramel sauce for an added touch of decadence. 125 g butter, softened
150 ml sugar
350 ml all-purpose flour
1 teaspoon baking powder
1 egg
400 ml lingonberries (thawed and drained)
100 ml sugar
1 tablespoon cornstarch
150 ml oatmeal
100 ml sugar
2 teaspoons vanilla sugar
50 g butter, cubed

Steps:

  • Preheat oven to 175°C Grease a 28 cm pie dish.
  • To make crust: Mix softened butter and sugar. Add flour, baking powder and egg and quickly mix to form a dough.
  • Press the dough on the bottom and sides of the pie dish.
  • Combine filling ingredients and mix well. Spread the filling over crust.
  • To make topping: Combine oatmeal, sugar and vanilla sugar; sprinkle the mixture on top of the filling and top with butter cubes.
  • Bake in the preheated oven for 25-35 minutes. Allow to cool completely.
