Linda's Veggie and Cream Cheese Stuffed Celery image

I created this recipe a few Thanksgivings ago, and it is just plain DELISH! Try it on your family for another appetizer to munch on before, during and after Thanksgiving or Christmas dinner!

8 stalks celery, cut into 3-inch pieces washed and dried well (very important)
2 (8 ounce) packages cream cheese, room temperature
1 -2 tablespoon milk
1 (1 1/4 ounce) packet dry vegetable soup mix, I used Knorr's

Steps:

  • Wash, and cut the celery. Dry celery stalks with a paper towel (IMPORTANT).
  • Cut into 3" pieces, and set aside.
  • Put cream cheeses into a glass bowl. Put in microwave for 45 secs., until soft.
  • Add milk and cream together. Start with 1 T. and add more, if needed to make a creamy texture.
  • Add Vegetable Soup dip mix, and mix well.
  • Stuff celery with cream cheese mixture.
  • Put in a plastic container or on a serving plate, wrap, and put in refrigerator for at least 1 hours.
  • Serve.

I can't believe that there isn't a recipe like this already posted but I searched 7 pages and could not find one. It is simple and tasty. Lovely on an appetizer tray or on your salad plate. I like to use McLaren's Imperial but any nice nippy cheddar will do. I use Lite Mayo

1/2 cup nippy cheddar cheese, grated
1 1/2 tablespoons mayonnaise
1 teaspoon paprika (optional)

Steps:

  • Mix the mayo & cheddar together to make a spreadable paste.
  • Fill the stalks.
  • Cut into serving size pieces.
  • Sprinkle with paprika or leave plain & serve.

1/4 cup prepared horseradish
1/2 teaspoon kosher salt (or more)
1 bunch celery, cut into 3-inch sticks
walnuts, chopped very fine
black pepper, for garnishing

  • With an electric mixer on medium, beat the cream cheese, milk, horseradish, and salt for 3 minutes. (You can be refrigerated for up to 24 hrs).
  • Mix the spread with chopped walnuts and then spread mixture on the celery sticks.

I created this recipe along with another I just posted a few years ago for Thanksgiving. These tasty appetizers go well anytime, but a must on my Thanksgiving and Christmas table! YUMMO!

8 celery ribs, cleaned (dried well-very important)
2 (8 ounce) packages cream cheese, room temperature
1 -2 tablespoon milk, as needed
1 (1 1/4 ounce) packet hidden valley dry ranch dip mix
10 green olives, diced very small

Steps:

  • Wash celery. Dry well with a paper towel (very important).
  • Cut into 3" pieces, and set aside.
  • Put cream cheeses into a glass bowl. Put in microwave for 45 secs., until soft.
  • Add enough milk to get creamy texture, starting with 1 T. and adding more if needed.
  • Add Ranch dip mix, diced green olives, and add to all. Mix well.
  • Stuff celery with cream cheese mixture.
  • Wrap, and put in refrigerator for at least 1 hours.
