LINDA'S LOBSTER SALAD SUPREME

I just created this tasty dish for my lunch today, and wanted to share it with all of you, because it was SOOOOOOOO GOOD! The pictures posted are on a sandwich plate, not a lg. plate. This salad is an individual serving, and you can double or triple the ingredients to make enough for however many you want to serve. It is just DELISH! I used Spring Salad mix to make the salad pictured, but I think next time I will just use plain lettuce. You can also substitute crab or shrimp in this lovely dish.

8 ounces cooked lobster meat, chopped fine, you may use imitation
1 stalk celery, chopped fine
6 dill pickle slices, chopped fine (not Kosher)
1/8 teaspoon Old Bay Seasoning
1/4 cup mayonnaise
fresh lemon juice (optional)
salad greens, your choice
paprika, for garnish

Steps:

  • In a med. size bowl, chop lobster meat.
  • Chop celery and dill pickle chips, and add to bowl.
  • Add Old Bay Seasoning and mayonnaise. If using lemon add now, to taste. Mix well.
  • Arrange salad greens on a sandwich size plate.
  • Scoop mix on top of greens.
  • Garnish with paprika.
  • Serve.
  • Makes 1 lunch size salad serving.

My husband loves this and I make it about once a week for him. Friends and family have asked me to make this for them and for get togethers. This salad is basically put together with anything you like in a salad. So you can add or not use what is listed. Have fun and enjoy making your taco salad supreme.

2 lbs ground beef
2 (1 1/4 ounce) packages mccormicks taco seasoning
1 1/4 cups water
1 (4 ounce) can chopped green chilies (mild)
1 (12 ounce) can pinto beans (drained)
1 head lettuce (chopped)
4 medium tomatoes (chopped)
1 (8 ounce) bag shredded fiesta blend cheese
1 small onion, chopped (optional)
1 (12 ounce) bag of nacho cheese plain Doritos (broken into pieces)
1 (3 7/8 ounce) can black olives (sliced)
chopped jalapeno (optional)

Steps:

  • Brown beef and drain grease.
  • Add green chilies, pinto beans,taco seasoning, and water.
  • Cook for about 8 minutes.
  • In a big bowl put in rest of ingredients and mix or layer it if you wish.
  • Then add meat mixture and mix again.
  • Top it off with some nacho chips.
  • Serve with sour cream or taco sauce.

1 1/2 lbs lobsters, chop up meat (If you want, you can subsitute with shrimp or crab meat)
3 stalks celery, chopped
3/4 bunch fresh dill, finely chopped
2 lemons, juice of
1 lemon, zest of
1/2 tablespoon mayonnaise
1 teaspoon malt vinegar
1/2 teaspoon Old Bay Seasoning
salt and pepper, to taste

  • Mix everything together in a bowl.
  • Adjust seasoning to taste.

This is a copycat recipe for Schilling Salad Supreme. Use the entire recipe if making Mysterygirl's Linguini Salad in place of the 1/2 a jar that is called for in the recipe. It would be good mixed with italian dressing on vegetables too.

3 heads broccoli, cut heads into bite size pieces
1/4 cup red onion, small pieces
1 cup raisins (I have used what ever I have on hand)
3/4 cup sunflower seeds (without shell)
1/2 cup colby cheese or 1/2 cup cheddar cheese
1 cup mayonnaise
1/4 cup brown sugar
1 1/2-2 tablespoons apple cider vinegar (to your desire)
1/4 teaspoon ground pepper
1/4 teaspoon salt

Steps:

  • Mix dressing and set a side for a minimum one hour or overnight.
  • Mix broccoli mix and dressing together (add dressing to desired creaminess). Let sit for an hour. Serve.

6 cloves garlic, peeled, divided
¾ cup mayonnaise
5 anchovies anchovy fillets, minced
6 tablespoons grated Parmesan cheese, divided
1 teaspoon Worcestershire sauce
1 teaspoon Dijon mustard
1 tablespoon lemon juice, or more to taste
salt to taste
ground black pepper to taste
¼ cup olive oil
4 cups day-old bread, cubed
1 head romaine lettuce, torn into bite-size pieces

Steps:

  • Mince 3 cloves of garlic, and combine in a small bowl with mayonnaise, anchovies, 2 tablespoons of the Parmesan cheese, Worcestershire sauce, mustard, and lemon juice. Season to taste with salt and black pepper. Refrigerate until ready to use.
  • Heat oil in a large skillet over medium heat. Cut the remaining 3 cloves of garlic into quarters, and add to hot oil. Cook and stir until brown, and then remove garlic from pan. Add bread cubes to the hot oil. Cook, turning frequently, until lightly browned. Remove bread cubes from oil, and season with salt and pepper.
  • Place lettuce in a large bowl. Toss with dressing, remaining Parmesan cheese, and seasoned bread cubes.
