KEY LIME PIE (SUGAR FREE - SPLENDA)
A creamy cool pie without sugar - derived from a variety of similar receipes, but I intended to have a creamy filling while minimizing the taste artificial sweeteners can have. Cook time indicates time to chill.

Steps:
- Use a food processor to turn cookies into crumbs. Combine crumbs with melted butter and press mixture into the botom of a pie plate.
- Combine gelatin and milk in a pot on the stove. Whisk while cooking over low heat until gelatin is dissolved.
- Pour whipping cream into a blender and blend until thick and fluffy. Pour into small bowl and stir in 1 tsp Spenda. Cover and refrigerate.
- In the blender, combine yogurt, cream cheese, lime juice, and zest in blender until smooth. Add gelatin and remaining Splenda. Blend an additional 15 seconds.
- Pour into crust and refrigerate the pie for 3 hours or overnight for best results. Top with whipped cream to serve.
ASIAN NOODLE SALAD WITH EGGPLANT, SUGAR SNAP PEAS, AND LIME DRESSING

- Prepare barbecue (medium-high heat). Combine first 3 ingredients; add Asian sesame oil and toss to coat. Sprinkle with salt and pepper. Grill vegetables until tender, turning often, about 7 minutes for eggplant and mushrooms and 5 minutes for green onions. Transfer mushrooms and onions to cutting board; cool slightly. Slice mushrooms and onions.
- Meanwhile, cook noodles in large pot of boiling salted water until almost tender but still firm to bite, about 3 minutes. Add sugar snap peas to noodles; cook 1 minute longer. Drain well. Transfer noodle mixture to large serving bowl. Add grilled vegetables.
- Whisk last 4 ingredients in small bowl to blend. Toss noodle salad with dressing; season with salt and pepper.
- Test Kitchen Tip: The cooking time of Japanese-style chuka soba noodles varies by a minute or two depending on the brand of noodle. Test them after three minutes to avoid overcooking.

- Preheat oven to 350°F Line 2 baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, coconut, baking soda, baking powder, and salt. Set aside.
- Combine 1 1/2 cups of sugar, the lime zest, and cream cheese in a large bowl. Put the remaining 1/3 cup sugar in a pie plate and set aside. Pour the warm butter over the cream cheese mixture and whisk to combine - the mixture won't be completely smooth yet. Whisk in the oil then the egg, milk and lime juice. Mix until smooth. Use a rubber spatula to fold the dry ingredients into the wet, until a soft dough comes together.
- Portion the dough onto the prepared baking sheets with a cookie scoop, using about 2 tablespoons for each cookie. Working quickly (if you handle the dough too much you're more likely to wind up with flat cookies), roll the dough into a ball with your hands then roll in the sugar set aside in the pie plate previously. Repeat until you've used all of the dough, placing 12 cookies on each baking sheet. Use the bottom of a glass to flatten the dough balls into discs that are about 2 inches in diameter. Sprinkle the tops of the cookies with the remaining sugar in the pie plate, using about 2 teaspoons per sheet of cookies.
- Bake the cookies, 1 tray at a time, for about 11-13 minutes, or until the edges are set and beginning to brown. The tops will be puffy and slightly cracked. Transfer the baking sheet to a wire rack and let the cookies cool on the sheet for 5 minutes then transfer them to the rack to cool completely.

- Spray the grill rack with nonstick spray; prepare the grill.
- PREPARE GLAZE:.
- In a small saucepan, bring the marmalade, lime juice, and shallot to a boil. Boil 2 minutes. Allow to cool, then transfer half of the glaze to a small bowl.
- PREPARE RUB:.
- In a small bowl, blend the chili powder, sugar, 1/2 teaspoon salt, and the Chinese five-spice powder.
- PREPARE PORK:.
- Rub the rub all over the pork.
- Grill 5 inches from the heat, turning and brushing with half of the glaze, until an instant-read thermometer inserted in the center of the pork reaches 160°F, 20-25 minutes.
- PREPARE SUGAR-SNAP PEAS:.
- In a saucepan of boiling water, cook the sugar-snaps until crisp-tender.
- Rinse under cold water and drain.
- Toss the sugar-snap peas with the oil, vinegar, ginger, the remaining 1/4 teaspoon salt, and the pepper. (Be sure to add the vinegar to the sugar-snap peas just before serving, or the veggie's color will dull.).
- ASSEMBLE FOR SERVING:.
- Gently warm the remaining glaze over low heat.
- Slice the tenderloin, drizzle with the glaze, and serve with the sugar-snap peas.
NECTARINE LIME CURD TART WITH A BROWN-SUGAR CRUST

- Make curd:
- Halve and pit nectarine. Cut halves into pieces and in a blender purée until smooth. In a heavy saucepan whisk together purée, yolks, granulated sugar, lime juice, butter, and vanilla. Cook mixture over moderately low heat, whisking constantly, until it just reaches a boil, about 7 minutes, and immediately remove pan from heat. Strain curd through a sieve into a bowl and cool, its surface covered with a buttered round of wax paper. Chill curd at least 2 hours and up to 2 days.
- Make crust:
- Preheat oven to 375°F.
- Cut butter into pieces. In a food processor pulse flour, brown sugar, and salt until combined well. Add butter and blend until a dough begins to form (mixture should hold together when squeezed between fingers). Press dough evenly into bottom and up sides of a 13 1/2- by 4- by 1-inch rectangular tart pan with a removable fluted rim. Bake crust in middle of oven 20 minutes and cool in pan on a rack. Crust may be made 2 days ahead and kept in pan, covered, at room temperature.
- Halve and pit nectarines. Cut halves into 1/4-inch-thick slices. Spoon curd into shell, smoothing top, and arrange nectarine slices decoratively on top. In a small saucepan heat jam over low heat until hot. Pour jam through a sieve into a bowl, pressing hard on solids. Lightly brush fruit with glaze. Chill tart, loosely covered with plastic wrap, until ready to serve. Tart may be made 1 day ahead and chilled, covered.

SUGAR FREE KEY LIME PIE
This is a recipe I found on Pinterest, but I tweaked it to make it sugar free, and replaced the yogurt for cream cheese. Not a yogurt fan! This turned out pretty good to me, so I thought I'd share my version. Going to try strawberry next. Hope you enjoy!

- In a large bowl, cream together the butter and sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Combine the flour, baking powder and salt; stir into the creamed mixture until well blended. Cover or wrap dough, and refrigerate for at least 2 hours. If you are in a big hurry, freeze for a half hour.

- 1. Place coconut in a food processor. Process until about one minute. You want the pieces to be a little bit smaller. Toast the coconut in 350° oven for about five minutes. Keep an eye on it. It will brown up quickly. Remove from oven when it just turns lightly golden.
- 2. Add coconut to a bowl with the coconut flour and Splenda. Mix well.
- 3. Add the melted butter to The coconut mixture. Mix well.
- 4. Press into the bottom of a parchment lined spring form pan. with the inside greased. Bake until sides are getting light golden brown. While pie is baking make the Jell-O. Remove from oven.
- 5. Heat water in microwave to boiling. Add the Jell-O. Mix well. Set aside to cool.
- 6. In a bowl beat the cream cheese and splenda together. Beat in the Jell-O mixture.
- 7. Add in the eggs . Beat well. Add the lemon juice lemon and zest. Beat until smooth.
- 8. Pour mixture over the crust. Place in the oven and bake at 325° for approximately one hour to one hour and 10 minutes. The cake will still be jiggly. Don't worry about it .As the Jell-O in the cake cools. It will help set the cake.
- 9. Remove from oven. Increase temperature to 350°. Mix the sour cream with the Splenda. Gently Spread the sourcream evenly over the top of the cake. Grate the lemon over the top of the sour cream mixture.
- 10. Place back in the oven and bake for 1o-15 minutes. Remove from oven to cool. Cool 15 minutes. Run a dull knife around the iedge of cheesecake to loosen while still hot. This will prevent cracking.
- 11. When cooled. Remove outside springform. You may want to run a knife around it again. Place in fridge for eight hours or overnight. Slice and serve with Cool Whip free topping, or whipped cream sweetened with Splenda. You may also garnish the whip cream with toasted coconut if desired.

- Beat together butter, shortening, granulated sugar, and 2 tablespoons lime sugar with an electric mixer until light and fluffy. Beat in egg and vanilla. Sift flour, baking powder, and salt together over egg mixture, then beat on low speed until just combined.
- Form dough into a 10-inch log (2 inches in diameter) on wax paper, then wrap in wax paper. Chill dough until firm, at least 4 hours.

CHEWY COCONUT-LIME SUGAR COOKIES

- Adjust oven rack to middle position and heat oven to 350 degrees. Line 2 large rimmed baking sheets with parchment paper. Whisk flour, coconut, baking soda, baking powder, and salt together in medium bowl. Set aside. Place 1½ cups sugar, lime zest, and cream cheese in large bowl. Place remaining 1/3 cup sugar in shallow baking dish or pie plate and set aside. Pour warm butter over sugar and cream cheese and whisk to combine (some small lumps of cream cheese will remain but will smooth out later). Whisk in oil until incorporated. Add egg, milk, and lime juice; continue to whisk until smooth. Add flour mixture and mix with rubber spatula until soft homogeneous dough forms. Divide dough into 24 equal pieces, about 2 tablespoons each (or use #40 portion scoop). Using hands, roll dough into balls. Working in batches, roll balls in reserved sugar to coat and evenly space on prepared baking sheet, 12 dough balls per sheet. Using bottom of drinking glass, flatten dough balls until 2 inches in diameter. Sprinkle tops evenly with 4 teaspoons of sugar remaining in shallow dish (2 teaspoons per tray), discarding any remaining sugar. Bake, 1 tray at a time, until edges are set and just beginning to brown, 11 to 13 minutes, rotating tray after 7 minutes. Cool cookies on baking sheets 5 minutes. Using wide metal spatula, transfer cookies to wire rack and cool to room temperature.
ROASTED PINEAPPLE WITH LIME AND BROWN SUGAR

- Position the oven racks so that they are evenly spaced, with one rack in the center. Preheat the oven to convection roast at 425°F. Cover a rimless baking sheet with foil and coat with non-stick spray.
- Slice the top and bottom off the pineapple, cut off the prickly brown skin, and cut out the core. Cut the flesh crosswise into six 1-inch slices.
- Place the pineapple on the baking sheet, brush with the melted butter, and sprinkle with the salt and brown sugar. Roast for 10 minutes; turn over and roast for 3 to 5 more minutes, until the pineapple is lightly browned on both sides. Place on individual serving dishes and squeeze lime juice over each slice. Top with a scoop of vanilla ice cream and serve immediately.
