STRAWBERRY MOCKTAIL RECIPE

Summer is all about refreshing summer drinks and this strawberry mocktail recipe is just that! Loaded with plenty of fresh, juicy strawberries and herbaceous mint, this delicious thirst-quencher is sure to be on rotation all summer long!

4 to 5 strawberries (stems removed and strawberries chopped (plus more to taste for optional garnish))
1 tablespoon lime juice (from about 1/2 of a lime)
8 to 10 fresh mint leaves (plus more to taste for optional garnish)
1/2 to 1 tablespoon honey or maple syrup (or to taste (depending on how sweet you like things))
ice cubes or crushed ice (enough to fill the glass about halfway)
strawberry sparkling water (or regular) (enough to top up glass)
Lime slices (garnish to taste (optional))

Steps:

  • Place strawberries, lime juice, mint leaves and honey in a short drink glass and muddle (basically mash everything to break down get the strawberries and mint to release their juices and flavours) with a wooden spoon. Note: The more you muddle, the more you'll extract the juices and flavours from the berries and mint. It's okay if there are some visible pieces of strawberry left. Muddle until you've reached the consistency you like best.
  • Add ice cubes to the glass, filling about halfway, then top up with sparkling water. Stir to combine everything. Garnish with a strawberry, a lime slice and/or more fresh mint, if desired. Serve and enjoy!Note: If you like things sweeter, you can add more honey or maple syrup to taste.

1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon fine salt
2 large eggs, room temperature
2/3 cup sugar
3/4 cup unsalted butter, melted
2 teaspoons pure vanilla extract
1/2 cup milk
1 1/3 cups confectioners' sugar, sifted
1 1/2 tablespoons finely grated lime zest
2 tablespoons freshly squeezed lime juice
1 drop green food coloring
6 large ripe strawberries, hulled
Green sanding sugar
Fresh mint leaves or candied leaves

Steps:

  • Preheat the oven to 350 degrees F. Line the muffin tin with cupcake liners.
  • Whisk the flour, baking powder, and salt together in a medium bowl.
  • In another medium bowl, beat the eggs and sugar with an electric mixer until light and foamy, about 2 minutes. While beating, gradually pour in the butter and then the vanilla.
  • While mixing slowly, add half the dry ingredients, then add all the milk, and follow with the rest of the dry ingredients. Take care not to over mix the batter. Divide the batter evenly in the prepared tin.
  • Bake until a tester inserted in the center of the cakes comes out clean, about 30 minutes. Cool cupcakes on a rack in the tin for 10 minutes, then remove. Cool on the rack completely.
  • For icing: Mix the confectioners' sugar and lime zest in a medium bowl. Add the lime juice and mix with an electric mixer to make a firm but pourable icing. (If needed, add up to 1 teaspoon more juice, but take care if the icing is too loose it doesn't set properly.) Add food color to make a pale pastel green icing.
  • To assemble: Remove cupcake from its liner. Cut and remove a strawberry (coned) shaped portion of cupcake from the top of each cupcake, leaving about 1/2 to 1-inch of cake in the bottom. Stuff each cake with a strawberry and cover with a little bit of cake. Spoon and spread icing over the top of the cupcakes. Sprinkle with green sanding sugar. Top with small mint leaves or candied leaves.

5 cubes ice

Steps:

  • Place lime juice, cold water, sugar, and strawberries in blender and blend on high until smooth. While blender is running, add ice cubes one at a time.

2 cups crushed pretzels (about 8 ounces)
3/4 cup butter, melted
3 tablespoons sugar
FILLING:
2 cups whipped topping
1 package (8 ounces) cream cheese, softened
1 cup sugar
TOPPING:
2 packages (3 ounces each) strawberry gelatin
2 cups boiling water
2 packages (16 ounces each) frozen sweetened sliced strawberries, thawed
Optional: Additional whipped topping and pretzels

Steps:

  • In a bowl, combine the pretzels, butter and sugar. Press into an ungreased 13x9-in. baking dish. Bake at 350° for 10 minutes. Cool on a wire rack. , For filling, in a small bowl, beat whipped topping, cream cheese and sugar until smooth. Spread over pretzel crust. Refrigerate until chilled. , For topping, dissolve gelatin in boiling water in a large bowl. Stir in sweetened strawberries; chill until partially set. Carefully spoon over filling. Chill until firm, 4-6 hours. Cut into squares; if desired, serve with additional whipped topping and pretzels.
