4 pounds pork spareribs
1 cup chopped onion
1 clove garlic, minced
1 cup fresh sliced mushrooms
¼ cup olive oil
2 tablespoons red wine vinegar
2 tablespoons honey
¼ cup fresh lime juice
1 tablespoon prepared mustard
2 teaspoons salt
ground black pepper to taste
¼ cup soy sauce
⅔ cup water
⅓ cup chili sauce

Steps:

  • Cut ribs into serving size pieces and place in a 9x13 inch baking dish. Preheat oven to 325 degrees F (165 degrees C).
  • In a medium saucepan saute onion, garlic and mushrooms in oil until tender. Add vinegar, honey, lime juice, mustard, salt, pepper, soy sauce, water and chili sauce and mix together well. Warm mixture throughout.
  • Pour this sauce over the ribs and bake in the preheated oven for 1 hour or until ribs are tender and internal temperature has reached 160 degrees F (70 degrees C). Baste often with sauce.

1 (3 lb) rack pork spareribs
1/4 teaspoon salt
1/8 teaspoon fresh ground black pepper
1 cup olive oil
4 limes, juice of
1/2 cup tequila
1/4 cup finely chopped onion
2 tablespoons minced garlic
2 medium jalapenos, stemmed, seeded and finely chopped
2 tablespoons finely chopped fresh cilantro leaves

Steps:

  • Season the ribs with salt and pepper.
  • In a small mixing bowl, whisk the oil, lime juice, tequila, onions, garlic, jalapenos and cilantro. Whisk well.
  • Season with salt and pepper.
  • Place the ribs, meat side down, in a glass baking dish. Pour the marinade over the ribs, coating each side completely.
  • Cover with plastic wrap and refrigerate overnight (at least 12 hours), turning every couple of hours.
  • Remove from the refrigerator and bring the ribs to room temperature.
  • Preheat the grill on low.
  • Place the ribs, meat side down, and slow grill the ribs, turning and basting every 15 minutes.
  • Cook for about 1 1/2 to 2 hours, or until the ribs are tender.
  • Remove from the grill and slice into individual ribs.

4 to 5 lbs. pork spareribs, trimmed of fat & cut in sections
6 oz. freshly squeezed lime juice
1 or 2 fresh green chilies seeded and coarsely chopped
4 cloves of garlic (or more)
1/2 tsp dried marjoram
4 tablespoons of vegetable oil

Steps:

  • Put ribs in a non metalic container large enough to hold them. Puree, all other ingredients in a blender Pour over and cover and marinate over night, turning ribs once or twice Heat oven to 180C. Bake for 1.5 hours and bast ever 20 minutes. When crispy and brown serve. * try with chicken wings
