The lime in this brings the intense flavor that wakes up greens. You may spray or splash this on a salad. Adapted from Great Good Food by Julee Rosso.

1/4 cup plain yogurt
6 tablespoons fresh lime juice
2 teaspoons lime zest, minced
2 teaspoons horseradish
2 teaspoons dijon-style mustard
2 tablespoons white wine vinegar
fresh ground black pepper

Steps:

  • Place all ingredients in a bottle, put lid on and shake well to blend. You may put this in a spray bottle or just splash it on a salad.
  • Enjoy!

1 1/2 pounds diced seedless watermelon (enough to yield about 3 cups of juice)
16 ounces limeade
12 ounces ginger beer
1/2 cup basil leaves
1 lime, sliced into wheels

Steps:

  • Put the watermelon in a blender and purée on high speed until liquified, about 15 seconds. Combine the watermelon juice, limeade and ginger beer in a large pitcher.
  • Drop basil leaves into 4 large glasses and use the back of a wooden spoon to crush and muddle the basil. Pour the watermelon drink into the glasses and garnish each with a lime slice.

2 cups seedless watermelon, cut into cubes
1/2 cup ice cubes
2 cups lemon-lime flavored soda, divided
1 lime, cut into wedges

Steps:

  • Place the watermelon and ice cubes in a blender and blend until liquefied. (Once you add the lemon-lime soda, it will thin out even more, add more ice cubes if you want it slushier.) Slowly add 1/2 of the lemon-lime soda and blend until smooth. Pour into glasses, garnish with limes and serve.

This is a great recipe my mom got from my aunt. She has made it every year for Thanksgiving. It is a family tradition for us. It can be made a day or two ahead of time, if you like. It looks just beautiful in a cut crystal bowl. Thanksgiving is not the same without it for us! We just 'gobble' it up! Chopped walnuts can be substituted for chopped pecans.

1 cup boiling water
1 (6 ounce) package lime flavored Jell-O® mix
1 (20 ounce) can crushed pineapple, drained with juice reserved
1 (8 ounce) package cream cheese, softened
2 cups heavy cream
1 cup chopped pecans

Steps:

  • In a large bowl, pour 1 cup boiling water over the gelatin mix. Stir until dissolved, then stir in 1/2 cup pineapple juice. Refrigerate until thickened but not set, about 1 hour.
  • Meanwhile, place crushed pineapple and remaining juice in a small saucepan. Bring to a boil, reduce heat, and simmer for about 5 minutes. Remove from heat, and cool to room temperature.
  • In a large bowl, blend softened cream cheese and lime gelatin until smooth. Mix in the cooled pineapple. In a medium bowl, whip cream until soft peaks form. Fold into gelatin mixture. Fold in chopped nuts. Pour into a pretty crystal bowl, and refrigerate for at least 4 hours, or until set.

1 can (8 ounces) crushed pineapple
1 package (3 ounces) lime gelatin
3 tablespoons water
2 packages (3 ounces each) cream cheese, softened
1 cup chopped walnuts
1 cup miniature marshmallows
1 cup heavy whipping cream, whipped

Steps:

  • Drain pineapple, reserving juice; set the pineapple aside. In a saucepan, combine gelatin, water and reserved juice. Cook and stir over low heat until gelatin is dissolved. Refrigerate until syrupy, about 30 minutes., In a small bowl, beat cream cheese until fluffy. Stir in gelatin mixture, walnuts, marshmallows and reserved pineapple. Fold in the whipped cream. , Transfer to a 1-qt. serving bowl. Cover and refrigerate for 2 hours or until set.

1 cup sugar
1 cup water
2 limes, zested and juiced, plus lime wedges for rimming the glasses and garnish
1 (1/2-inch) slice fresh ginger
Kosher salt or sugar, for rimming glasses (optional)
24 ounces sparkling water

Steps:

  • For the simple syrup: Heat the sugar, water, lime zest, and ginger in a medium saucepan over medium-high heat to boiling. Simmer for 3 to 4 minutes, and then remove from the heat. Add the lime juice and let the flavors infuse the syrup for at least 15 minutes while it cools. Strain the syrup, if you wish, and keep in the refrigerator until ready to use.
  • For the drink: Rub a lime wedge around the lip of the glasses to moisten and then dip in salt or sugar to decorate the glasses, if desired. Pour 1 or 2 tablespoons of the lime syrup into each glass and top with sparkling water. Garnish with a wedge of lime.
  • Cook's Note: Sparkling wine can be used instead of water, if desired.
