Easy Lime Fluff is a sweet side or light dessert. A fluffy, creamy lime jello salad with cream cheese, Cool Whip, marshmallows, pineapple and nuts. Great for any occasion.

- In a large bowl, beat cream cheese, lime jello and pineapple juice until smooth.
- Stir in Cool Whip, crushed pineapple, mini marshmallows, and chopped nuts.

GREEN STUFF (LIME JELLO, CREAM CHEESE, PINEAPPLE, COOL WHIP)
This recipe has been in our family forever. It can be made in many different variations. Cottage cheese instead of or in addition to cream cheese. Crushed pears or mandarin oranges in place of pineapple. The amount of ingredients seem to not matter much because I often forget how much jello or cream cheese, etc to use but it always tastes great. The only word of caution is NEVER use fresh pineapple in jello because it will not gel.

Steps:
- Dissolve jello in hot water. If in a hurry add ice cubes to set a litte faster.
- Mix cream cheese and pineapple in large bowl.
- Add jello.
- Beat until blended.
- Add Cool Whip or any whipped topping and beat for 2 minutes or well blended.
- Pour into large glass pan or bowl and chill at least four hours. I've been known to use the freezer when in a hurry and it works out fine.
- Enjoy!

LIME PINEAPPLE DESSERT (FLUFFY GREEN STUFF)
Posted in response to a request. This is an old family favourite. It is light and fluffy - ideal after a fairly heavy meal. Always a favourite around Easter time at our house. Prep time includes setting time.

Steps:
- Mix jello, boiling water, sugar and the juice from 1 lemon together.
- Stir until sugar is disolved.
- Let partially set (1 hour) Whip evaporated milk in large mixing bowl.
- When it begins to form small peaks, add jello and whip again until well mixed.
- (You can add a couple drops of green food colouring if you like) Fold in drained pineapple.
- Pour into each of two graham cracker pie shells.
- Let sit in refrigerator for at least 2 hours prior to serving.
- Decorate top with sliced limes and more graham cracker crumbs if desired.

HOLIDAY FRUIT SALAD (AKA GREEN STUFF)
We always make this for Thanksgiving and Christmas...it is a must have holiday menu item. You can substitute a container of Cool Whip for the freshly whipped cream. You could try other Jell-o flavors, but we are traditionalists and stick with lime. Some family members enjoy the addition of chopped pecans but I prefer without.

- In medium bowl, combine lime gelatin and boiling water. Stir in cold water or pineapple juice. Chill slightly in refrigerator but don't allow to completely set.
- Remove from refrigerator. Whip jello until fluffy like egg whites.
- In separate bowl, whip cream to soft peak stage; add cream cheese and whip. Add to jello, mix well.
- Stir in crushed pineapple, grapes, and marshmallows. Chill until set.
LIME GELATIN SALAD I
This is a great recipe my mom got from my aunt. She has made it every year for Thanksgiving. It is a family tradition for us. It can be made a day or two ahead of time, if you like. It looks just beautiful in a cut crystal bowl. Thanksgiving is not the same without it for us! We just 'gobble' it up! Chopped walnuts can be substituted for chopped pecans.

- In a large bowl, pour 1 cup boiling water over the gelatin mix. Stir until dissolved, then stir in 1/2 cup pineapple juice. Refrigerate until thickened but not set, about 1 hour.
- Meanwhile, place crushed pineapple and remaining juice in a small saucepan. Bring to a boil, reduce heat, and simmer for about 5 minutes. Remove from heat, and cool to room temperature.
- In a large bowl, blend softened cream cheese and lime gelatin until smooth. Mix in the cooled pineapple. In a medium bowl, whip cream until soft peaks form. Fold into gelatin mixture. Fold in chopped nuts. Pour into a pretty crystal bowl, and refrigerate for at least 4 hours, or until set.

PINEAPPLE LIME GELATIN
This recipe was passed down by my mother. We serve it often, but especially at Christmas and Thanksgiving. Of course, the green color makes it nice for St. Patrick's Day, too. - mix lime Jello and hot water together until dissolved; set aside.
- Mix with a mixer cream cheese and pears.
- Add Jello.
- Beat until blended.
- Add Cool Whip and mix for 2 minutes.
- Put in to festive container or bowl chill for four hours or overnight.
- May decorate with Cool Whip before serving if desired.
