1 cup thawed orange juice concentrate
2/3 cup chopped onion
1/2 cup lime juice
1/2 cup honey
1 jalapeno pepper, seeded and chopped
2 teaspoons ground cumin
2 teaspoons grated lime zest
1/2 teaspoon garlic salt
2 garlic cloves, minced
10 boneless skinless chicken breast halves (4 ounces each)

Steps:

  • In a 4-cup measuring cup, combine the first nine ingredients. Pour 2 cups into a large bowl; add chicken. Turn to coat; cover and refrigerate for 2-4 hours. Cover and refrigerate remaining marinade for basting., Drain and discard marinade. On a lightly oiled grill rack, grill chicken, covered, over medium heat or broil 4 in. from the heat for 4-6 minutes on each side or until a thermometer reads 170°, basting frequently with the reserved marinade.

I was reading the intro of this recipe and realized that yes, now I have tried it and even posted a picture so I decided to update. This is an easy recipe that is heart healthy. The recipe was in an issue of Diabetic Cooking.

1 tablespoon olive oil
1 teaspoon lime zest
1 tablespoon lime juice
1 jalapeno pepper, seeded and diced
1 teaspoon ground cumin
2 -3 cloves garlic, peeled and minced
1/4 teaspoon fresh ground black pepper
1/4 teaspoon salt
1 lb boneless skinless chicken breast half
1 sliced jalapeno pepper, for garnish
sliced black olives, for garnish

Steps:

  • Combine the oil, lime zest, lime juice, jalapeno, cumin, minced garlic, pepper and salt in a resealable plastic bag.
  • Place chicken in bag and press to remove excess air; seal tightly.
  • Turn bag over several times in order to coat chicken with mixture.
  • Chill 30 minutes or up to 8 hours.
  • Preheat grill, oven broiler or indoor grill to medium high heat.
  • Place the chicken on grill or in broiler pan.
  • Cook 12 to 15 minutes or until chicken is no longer pink and juices run clear when pierced with a fork, turning twice to get grill marks.
  • Garnish with jalapeno slices and black olives if desired.
  • Please note: When handling jalapeno peppers take caution.
  • They can sting and irritate the skin; wear rubber gloves when handling and do not touch face or eyes.
  • Wash hands throughly with soap and water after handling.
  • The time to make does not include the marinade time.

1/4 cup lime juice
12 chicken drumsticks (about 3 pounds)
1 teaspoon salt

Steps:

  • In a small saucepan, heat jelly and lime juice over medium heat until melted. Set aside 1/2 cup for serving., Sprinkle chicken with salt and pepper. On a greased grill rack, grill chicken, covered, over medium heat 15-20 minutes or until a thermometer reads 170°-175°, turning occasionally and basting with remaining jelly mixture during the last 5 minutes of cooking. Serve with reserved jelly mixture.

½ cup orange juice
¼ cup lime juice
½ teaspoon ground cumin
½ teaspoon minced garlic
2 jalapeno peppers, seeded and minced
4 skinless, boneless chicken breast halves

Steps:

  • Whisk together the orange juice, lime juice, cumin, garlic, and jalapeno pepper in a bowl; pour into a resealable plastic bag. Add the chicken breasts, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator 2 to 4 hours.
  • Preheat the oven's broiler and set the oven rack about 6 inches from the heat source. Remove the chicken from the marinade and shake off excess. Discard the remaining marinade. Place the chicken on a broiling pan.

3 (6 -7 ounce) chicken breasts, cooked (see note)
1 jalapeno, diced seeds and membranes removed
4 tablespoons fresh cilantro, coarsely chopped
1 lime, juiced (to taste)
1/4 red onion, diced fine (to taste)
1/3 cup mayonnaise (to taste)
1 tablespoon Dijon mustard
1 teaspoon cumin
salt and pepper
2 ripe avocados, cut in half seed removed

Steps:

  • Shred or dice cooked chicken. Add the mayonaise, Dijon, cumin, lime juice, salt and pepper; stir to incorporate. Mix in red onion, jalapeno and cilantro. Refrigerate for several hours to let flavors meld. Serve mounded in avocado halves.
  • Note: Chicken breasts may be cooked by first drying with a paper towel. Season well with salt and pepper (or Mexican spice mix) then placing in a flat microwavable dish. Cover loosely (I just place the splatter lid over.) Microwave high for about 5-10 minutes, testing at intervals for doneness. Do not over cook.

3 large chicken breasts
poaching liquid (chicken stock, water, carrots, celery, onion, thyme, bay leaf, peppercorns)
1 jalapeño diced (with seeds scraped out)
4 Tbs cilantro coarsely chopped
1 lime, juiced
1/4 red onion diced fine
1/3 cup mayo (plus a little more if needed)
1 Tbs Dijon mustard
1 tsp cumin
salt and pepper
2 ripe avocados (or for a sandwich good French or Italian bread)

Steps:

  • Season chicken with salt and pepper and *poach. Remove chicken from liquid and shred with a fork. Once chicken has cooled add mayo, Dijon, cumin, lime juice, salt and pepper and incorporate. Add more mayo and lime if necessary. Mix in red onion, jalapeño and cilantro. Cool in fridge for several hours to let flavors merge and serve with avocado or for a sandwich on French bread with a slice of provolone. *To Poach - In a medium pot add chicken breasts to the poaching liquid. The chicken should be completely immersed. Bring to a boil and then immediately reduce heat and partially cover. Reduce heat to a simmer for 10 minutes (be sure to just simmer and not boil....and no longer than 10 minutes since you don't want the chicken to turn "rubbery"). Remove from heat and let chicken remain in the liquid for about 15 minutes. Reserve the liquid for future use.

1 lb boneless skinless chicken breast
3 tablespoons all-purpose flour
salt & freshly ground black pepper (to taste)
1 tablespoon vegetable oil
4 tablespoons butter
1 -3 fresh jalapeno, stemmed and seeded,and sliced (amount to taste)
1 lime, juice and zest of
1/3 cup jalapeno jelly (red jelly preferred)
lime slice (optional)

Steps:

  • Slice the chicken breasts across into large meallions, then toss with the flour that is well-seasoned with salt and pepper.
  • Heat the oil and half the butter in your wok, and stir-fry the chicken with the jalapeno slices until the chicken is golden and cooked through.
  • Add the lime zest and juice and continue to cook for about 30-45 seconds, stirring to coat the chicken.
  • Then add the jelly with 2-3 tablespoons of warm water and stir until the jelly is dissolved and forms a glaze.
  • Add the remaining 2 tablespoons of butter and stir-fry until it is incorporated, and serve.
  • Garnish with lime slices and chopped fresh cilantro, if desired.

4 cups water
2 pounds chicken breasts
5 jalapeños, ribs and seeds removed
1/2 large red onion
4 14 ounce cans white beans (canellini or great northern)
2 16 ounce jars salsa verde (I like Guy Fieri's)
4 limes
1/2 teaspoon salt
fresh cilantro for serving
sour cream for serving
shredded cheese for serving

Steps:

  • 1.Bring the chicken broth and water to a boil in a large pot. Add the raw chicken breasts to the hot liquid; cover and cook for 5-10 minutes. Remove from heat but leave the lid on so that the chicken continues cooking. After 20 minutes, remove the lid and check to make sure there is no pink in the center of the chicken breasts. Remove the cooked chicken from the hot liquid and set aside to cool. 2.To remove any unwanted chicken fat in the broth, pour the liquid through a fine sieve, reserving the liquid. Return the liquid to the pot over medium heat. Shred the chicken breasts with two forks and add them to the pot. 3.Mince the jalapeño and onion in a food processor. Add the jalapeño, red onion, white beans, and salsa to the pot. Simmer for 30 minutes over medium heat. Just before serving, squeeze the juice of one lime into the pot. Cut the remaining limes into wedges for serving. Add the salt; taste and adjust as needed. Serve with fresh cilantro, sour cream, shredded cheese, and lime wedges.
