GRANDMA'S LIME GREEN JELLO SALAD RECIPE (WITH COTTAGE CHEESE & PINEAPPLE)
Grandma's Lime Green Jello Salad Recipe (with Cottage Cheese & Pineapple) is a retro lime jello salad that my husband's grandma made for many holiday meals. To continue with the tradition, I make this every Thanksgiving.

Steps:
- In a large multi-cup measuring cup (I use my 4 cup Pyrex), add all of the reserved pineapple juice and then add enough water to the juice to make a total of 2 cups. Pour into pot and bring just to a boil.
- Add the lime Jell-o mixes to the boiling pineapple juice/water and stir until dissolved. Remove from heat, allow to cool just slightly.
- In a mixing bowl, stir together the mayo and evaporated milk. Combine until very smooth. Slowly stir in the Jell-o mixture until all is incorporated with the mayo/milk mixture. Stir in the crushed pineapple, cottage cheese, and walnuts.
- Pour mixture into an 8×8″ glass casserole pan. Cover and refrigerate for at least 4 hours or overnight (preferred).
LIME COTTAGE CHEESE SALAD
This is one of my grandma's old standby's. It was always on the table at Christmas, Easter, Thanksgiving. My family has now designated me to make it for all the family dinners now. Not that I mind, it's an easy one to make.

- Dissolve the 2 packs of lime jello in the boiled water.
- Once the jello crystals have disolved, add the rest of the ingredients and stir until combined.

Mom would make this every holiday in a jello mold I always loved it, so today I made it as something different to eat because I can have cottage cheese and jello. Had to leave out the pineapple can't have fruit yet, but still sounded good.

- 1. Mix small box of lime Jello with boiling water. Stir well refrigerate till cool.
- 2. Mix in cottage cheese, mirical whip, pineapple, and horseradish mix well.
- 3. Pour into a mold or a dish. Serve with a little mirical whip on the side.

- Drain pineapple, saving juice.
- Add water if needed to make 1 1/2 cups juice.
- Put juice in saucepan and boil for 1 minute.
- Add marshmallows and melt while stirring.
- Add lime Jello and dissolve completely.
- Let cool until thickens.
- Add crushed pineapple, cottage cheese, nuts and whipped cream and stir.
- Refrigerator 1-2 hours until set.

LIME COTTAGE SALAD
This is a refreshing summer salad that goes with just about anything. This does not have as many ingredients as some do, but it is sooo good, and very easy to make as I usually have all three of the ingredients on hand most of the time. It is a pretty green and I just love it. We all do. I make it all year long. If you make it with the sugar-free jello and low-fat cottage cheese, it is a great Weight Watcher dish. I have used both kinds, and they both taste the same. It has only 1-2 points per serving.

Steps:
- Drain the pineapple well and save the juice.
- Mix the jello according to directions on the box, using all of the pineapple juice as the liquid, adding enough water, if needed, to make the right amount on package.
- Put the jello in the refrigerator until it is partially set.
- Mix in the cottage cheese and pineapple.
- Put into a mold or pretty dish and refrigerate till firm.
- Enjoy!

Our family always has this as a side dish for our meals. It is perfect with hamburgers or any main dish, like "Greggie's Hotdish"! Whenever we bring it to parties, it is gone in a second- Everyone loves Green Stuff!

- Blend cottage cheese, and lime jello together, then fold in Cool Whip until well mixed.
- Fold in the 1 cup of mini marshmallows. (I use about 3/4 cup).
- Drain fruit and fold into mixture last.
- Refrigerate overnight for best flavor.

- Make Jello following the recipe on the box but using juice from pineapple instead of all water. Then add the pineapple, cream cheese (helps if you let is soften a little), mayo, cottage cheese, and horseradish. Use mixer to beat together.
- If you want to make it decorative you can put the mixture into a Jello mold.
- Place in fridge and let set.
