  • Toss 1 1/2 pounds peeled carrots with 1 tablespoon olive oil and a big pinch of salt and pepper on a baking sheet. Roast at 450˚ F until tender and browned, about 25 minutes. Whisk 2 tablespoons sour cream, 1 tablespoon each olive oil and lime juice and 1/4 teaspoon chili powder; season with salt. Drizzle over the carrots; sprinkle with crumbled queso fresco, roasted pepitas and cilantro.

The produce manager at my grocery store suggested this memorable mixture of lightly sweet carrots, zippy ginger and tart lime. It;s easy to fall in love with this recipe, which now has permanent place among my favorites. My husband and I especially enjoy it with poultry or fish.

1 pound carrots, cut into 1/2-inch slices
1 tablespoon water
1 tablespoon lime juice
1 tablespoon butter

  • In a 1-1/2-qt. microwave-safe bowl, combine carrots and water. Cover and cook on high for 5-6 minutes or until crisp-tender, stirring once. , Meanwhile, in a small bowl, combine lime juice, butter, honey, zest and ginger. Cover and microwave on high for 45 seconds. Drain carrots; stir in the lime mixture. Cover and cook on high for 45 seconds. Garnish with lime.

1 1/4 pounds carrots, peeled and trimmed, sliced on the bias 1/3-inch thick
2 tablespoons unsalted butter
1 small shallot, finely chopped
1/2 teaspoon freshly grated lime zest
1/4 cup grade A medium amber or dark amber maple syrup
1 tablespoon lime juice
Coarse sea salt
Freshly ground black pepper

Steps:

  • Pour cold tap water into a large pot fitted with a steamer basket to a depth of 1 inch. Bring to a boil over medium-high heat, add the carrots, cover and cook just until the carrots have lightened in color and are barely tender, about 4 minutes.
  • Preheat the broiler with a rack set about 4 inches from the heat. In a large ovenproof skillet, melt the butter until frothy and add the shallot and lime zest. Sauté, stirring occasionally, over medium heat until the shallot is translucent, but not browned, about 4 minutes. Add the carrots, maple syrup, lime juice and a pinch of salt and stir to coat. When the mixture begins to bubble, continue to simmer 6 to 8 minutes, or until the liquid is reduced by half and is syrupy.
  • Transfer the skillet to the broiler and cook until the edges of the carrots have just begun to brown, about 5 minutes. Finish the dish with a sprinkling of salt and a few coarse grinds of black pepper.

In this tasty chicken recipe, lime zest adds fragrance to rice, while lime juice gives carrots a citrus kick.

4 whole chicken legs (drumsticks and thighs), about 3 pounds total
1 tablespoon curry powder
2 pounds carrots, cut into 2-inch lengths, halved lengthwise if thick
1 cup brown or white basmati rice
2 limes, zest slivered and juice squeezed

Steps:

  • Preheat oven to 475 degrees. Place chicken in the center of a large rimmed baking sheet; season with curry powder, salt, and pepper. Scatter carrots around chicken. Roast, occasionally brushing chicken and tossing carrots with pan drippings, until chicken is cooked through, and an instant-read thermometer inserted in the thickest part of thigh (avoiding bone) registers 165 degrees, 35 to 45 minutes.
  • Meanwhile, in a small saucepan with a lid, bring 2 cups water to a boil; season with salt and pepper. Add rice; return to a boil. Stir, and reduce heat to low. Cover, and simmer 18 to 20 minutes. Remove from heat, and scatter lime zest over rice. Cover pan, and let steam 5 to 10 minutes.
  • Transfer chicken to a plate. Sprinkle lime juice over carrots (still on hot baking sheet); toss, scraping up and incorporating any browned bits. Fluff rice gently with a fork; serve with chicken and carrots.

1-16 oz bag of carrots
2 Tbsp goat butter
2 Tbsp honey
1 Tbsp lime juice
fresh ground black pepper
1/4 c chopped flat leaf parsley (optional)

Steps:

  • 1. In a medium sauce pan, bring some water to a boil. Add some salt then the carrots and cook until tender..5-6 minutes.
  • 2. Drain the carrots and put them back into the pan,add the butter, honey and lime juice.
  • 3. Cook for an additional 5 minutes to glaze the carrots. Season if desired and garnish with the parsley.
  • 4. Enjoy!

BEETS WITH CARROTS IN A LIME VINAIGRETTE

6 medium carrots, scrubbed
4 medium beets, scrubbed
1 medium cucumber, peeled, seeded and sliced into 1/4inch thick crescents
Dressing
6 tablespoons olive oil
Juice of 2 limes
1/2 bunch cilantro, leaves only, chopped
1 garlic clove, minced
1/2 teaspoon coarse salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon ground cumin

Steps:

  • Using a steamer basket over medium boiling salted water, lightly steam the carrots and beets until tender and cooked through, about 12 minutes for the carrots and 1520 minutes for the beets. Remove carrots and beets and let sit at room temperature until cooled. Peel beets and cut into bitesize slices. Cut carrots on the diagonal.
  • Mix vegetables in a large bowl along with the cucumber.
  • Combine the dressing ingredients in a small bowl. Pour the dressing over the vegetables and toss to coat. Chill the salad until ready to serve.

1 tablespoon cumin seed
1 tablespoon caraway seed
1 tablespoon mustard seeds
3/4-1 cup carrot juice
1 tablespoon butter (optional)
2 lbs yellow carrots, peeled and julienned or 2 lbs baby carrots
1 tablespoon olive oil
1 lime, juice of
salt and pepper, to taste
1 tablespoon cilantro (optional) or 1 tablespoon parsley (optional)

Steps:

  • If using baby carrots, half or quarter lengthwise.
  • Heat a large non-stick skillet over medium heat. Add cumin, caraway and mustard seeds to dry skillet. Cook and stir until seeds are toasted and begin to pop, about 3 to 4 minutes. If you don't have cumin or mustard seeds, try about 1/4-1/2 teaspoon powdered and add with carrot juice in next step.
  • Carefully add carrot juice and bring to a boil. Reduce heat and simmer until mixture is reduced by three-quarters, about 4 minutes. Add butter and stir until just melted. Strain, discard seeds and set aside, keeping warm.
  • In the same skillet, cook the carrots in olive oil over medium heat about 15 to 18 minutes (depending on whether your carrots are large or small julienne) or until tender, turning occasionally.
  • Add carrot juice reduction, stir in lime juice, and salt and pepper to taste. Sprinkle with herbs to serve.

KEY LIME LAMB CHOPS WITH GLAZED CARROTS

We wanted to use key lime juice for something besides pie, so we made it into a zesty sauce for lamb chops and carrots in this Chopped Dinner Challenge recipe. Chopped Basket Ingredient: Key lime juice

1/2 cup sugar
1/3 cup fresh key lime juice
1 cup chicken broth
Kosher salt
1 pound thin carrots
Freshly ground black pepper
2 tablespoons unsalted butter
1/4 cup chopped fresh flat-leaf parsley
1 tablespoon ground coriander
2 racks lamb, frenched (see Cook's Note)

Steps:

  • Melt the sugar with 1 tablespoon water in a medium saucepan and cook over medium heat, swirling the pan occasionally, until a golden caramel is formed, about 10 minutes. Add the lime juice, bring to a boil and allow the sugar to melt into the sauce until reduced by half, about 5 minutes. Add the broth and boil until reduced to 2/3 cup, about 3 minutes. Season with 1/2 teaspoon salt.
  • Preheat the oven to 425 degrees F. Steam the carrots in a covered rack set over boiling water until tender, about 15 minutes. Stir together 3 tablespoons of the key lime gastrique and 1/4 teaspoon each salt and pepper. Toss the carrots with 1 tablespoon of the butter, the seasoned gastrique and the parsley.
  • Stir together the coriander with 1 teaspoon salt and 1/2 teaspoon pepper. Rub the spice mixture evenly over the lamb.
  • Melt the remaining 1 tablespoon butter in a large, heavy, ovenproof skillet over medium heat until hot. Sear the lamb on two sides until browned, about 2 minutes each side. Transfer the skillet to the oven and roast until the lamb is medium, 20 to 25 minutes.
  • Let the lamb stand 10 minutes before serving with the carrots and remaining gastrique.

GINGER-LIME BABY CARROTS

24 baby carrots, tops trimmed to 2 inches
1 tablespoon extra-virgin olive oil
1/2 tablespoon minced fresh ginger
Pinch of cinnamon
1/2 cup chicken stock
1 tablespoon unsalted butter
2 teaspoons fresh lime juice
1/4 teaspoon Sriracha Salt
1 tablespoon furikake (see Note)

Steps:

  • 1.In a large saucepan of boiling salted water, cook the carrots until crisp-tender, about 2 minutes. Drain the carrots. 2.In a large skillet, heat the olive oil. Add the carrots, ginger and cinnamon and cook over moderate heat, tossing occasionally, until the ginger is fragrant, about 3 minutes. Add the chicken stock and boil over moderately high heat until reduced by half, about 3 minutes. Remove the skillet from the heat and let cool for 30 seconds. Swirl in the butter, lime juice and Sriracha and season with salt. Arrange the carrots on a platter and spoon the ginger-lime sauce on top. Sprinkle with the furikake and serve. Notes Furikake is available at Asian markets and many specialty food stores.

LIME JELL-O AND CARROTS

Another -- Teen, Tot, Toddler and Terrible Two -- Teaser. It's even been known to get the Octogenarians up from their Rocking Chair.

2 to 3 package(s) lime jell-o
1 to 2 cup(s) carrots shredded
1 cup(s) grapes seedless quartered
- water per directions
1/2 cup(s) walnuts or pecans coarse chopped or not (optional)
- cool whip or tablespoon of ice cream per serving (optional)

Steps:

  • In medium to large bowl mix Lime Jell-O per package directions. Go a little scant on the water due to moisture in Carrots and Grapes. Place in 9" by 13" cake pan or Glass casserole dish.
  • Rinse,pare and shred Carrots. Rinse Seedless Grape (Red or White), then quarter. Add Carrots and Grapes to Jell-O and stir.
  • Refrigerate until Jell-O sets. When it starts to get a little wobbly stir to bring ingredient from bottom. Allow to cool and set.
  • To serve slice into squares. Add Cool Whip or a dab of Ice Cream if you wish.
  • If you encounter any reluctance with the youngsters, press a single M & M to the center of the square and suggest with "Authority" that they eat their way to the center to retrieve. THIS PLOY WORKS -- SOMETIMES. If you use Orange Jell-O they may not even notice the Carrots.
  • Note: If for toddlers omit the nuts and maybe chop the grapes finer. Peace!
  • Hint: I've had times when the Jell-O just doesn't set up and firm. In this case I salvage by adding an additional box of Jell-O using 1/2 to 1/3 the recommended water. Using very hat water I disolve well and stir and completely incorporate into the failed batch. It works.
