1/3 cup chopped fresh cilantro
1-1/2 teaspoons grated lime zest
1/3 cup lime juice
1 jalapeno pepper, seeded and minced
2 tablespoons olive oil
3 garlic cloves, minced
1/4 teaspoon salt
1/4 teaspoon ground cumin
1/4 teaspoon pepper
1 pound uncooked shrimp (16-20 per pound), peeled and deveined

Steps:

  • Mix first 9 ingredients; toss with shrimp. Let stand 15 minutes., Thread shrimp and lime slices onto 4 metal or soaked wooden skewers. Grill, covered, over medium heat until shrimp turn pink, 2-4 minutes per side.

QUICK AND EASY CILANTRO LIME MARINADE



Quick and Easy Cilantro Lime Marinade image

1 cup cilantro (lightly chopped)
1 tablespoon fresh squeezed lime juice (or juice of half a lime)
1/4 cup olive oil
3 cloves of garlic
1 jalapeno lightly chopped (for un-spicy remove the seed)
1 teaspoon kosher salt
½ teaspoon fine pepper

Steps:

  • Combine all the ingredients in a food processor for less than one minute or until the texture is nice and chunky. Be sure the garlic is fully processed. If you don't have a food processor you can make the marinade by dicing the cilantro, jalapenos and garlic very lightly and then mix the ingredients in a bowl with a fork.
  • For a less spicy version, remove the inside of the jalapeno and wash it under cold water and be sure not to get any of it in your eyes. Store the marinade in the fridge for up to one week.

2 tablespoons distilled white vinegar
2 tablespoons fresh lime juice
2 teaspoons grated lime zest
1 ½ teaspoons honey
2 cloves garlic, minced
1 teaspoon seafood seasoning (such as Old Bay®)
½ teaspoon ground cumin
½ teaspoon chili powder
½ teaspoon ground black pepper
1 pound mahi mahi fillets, diced
½ cup plain fat-free yogurt
2 tablespoons lime juice
1 ½ tablespoons chopped fresh cilantro
1 (8 ounce) package flour tortillas, warmed

Steps:

  • Combine oil, vinegar, lime juice, lime zest, honey, garlic, seafood seasoning, cumin, chili powder, and black pepper in a nonreactive bowl or large resealable zip-top bag. Add mahi mahi and marinate for 8 hours, or overnight.
  • At the same time, combine yogurt, lime juice, and cilantro for dressing in a bowl. Chill overnight while fish marinates.
  • Preheat an outdoor grill for medium heat and lightly oil the grate. Remove mahi mahi from marinade and place on a grill pan; discard excess marinade. Cook until fish flakes easily with a fork, turning as needed, about 5 minutes.
  • Serve fish on warmed tortillas with dressing.

CILANTRO LIME MARINADE

This marinade is great for grilled chicken but you could try it with pork or fish also.

1/3 c cilantro, chopped
1/4 c onion, chopped
3 garlic cloves, chopped
zest of one lime
1/4 c lime juice
1/4 c orange juice
1/4 c olive oil, extra virgin
1 Tbsp honey
1/2 tsp salt
1/2 tsp pepper
6 boneless skinless chicken breasts

Steps:

  • 1. Place marinade ingredients in a blender and puree until smooth. Add marinade and chicken to a large Ziploc bag. Refrigerate for 6-8 hours, turning occasionally. Remove chicken and discard marinade. Grill over medium heat for 5-7 minutes on each side.
  • 2. These are the wraps I made with the grilled chicken. I sliced the breasts, topped them with a black bean and corn salsa, and spooned a cumin sour cream sauce on top. Wrapped it all up in a flour tortilla. Yum!

4 salmon fillets (skin on)
1 lime (quartered, for garnish)
1 cup fresh cilantro
zest and juice of 1 lime
1 clove garlic (minced)
½ cup olive oil (more as needed)
2 teaspoons kosher salt
1 teaspoon fresh cracked black pepper
½ teaspoon crushed red pepper flakes

Steps:

  • Make the cilantro lime marinade. In a small food processor, pulse together the cilantro, lime zest and juice, garlic, olive oil, salt, black pepper, and red pepper flakes. Add additional olive oil as needed until you reach a smooth consistency.
  • Marinate. Place the salmon portions in a gallon-sized zip-top bag. Add the marinade to the bag, press out any excess air, and seal. Marinate in the refrigerator for 1-2 hours (not any longer.)
  • Preheat. When ready to cook the salmon, prepare your grill for indirect cooking at medium heat. Your target temperature in your grill should be around 375 to 400 degrees F.
  • Grill. Remove the salmon from the marinade and place it on your grill, skin side down. Use a spoon to spread any additional marinade on top of the salmon. Grill for 8-10 minutes (without flipping) or until the salmon is done. Your salmon is finished when the internal temperature reaches 145 degrees F. The flesh will appear opaque and flake easily with a fork.
  • Enjoy. Serve immediately with freshly sliced lime wedges and additional cilantro, if desired.

1/3 cup olive oil or 1/3 cup vegetable oil
1 clove garlic
1 tablespoon fresh cilantro
