LIL' SMOKY CHEESE BALL
I ripped this recipe straight from Amy Sedaris' hilarious entertaining book "I Like You: Hospitality Under the Influence." It's terribly fattening and wonderfully delicious! I use 8 ounces regular cream cheese and 8 ounces light cream cheese. I use walnuts or pecans.

Steps:
- Bring all ingredients to room temperature.
- Beat the Gouda, cream cheese, butter, milk and steak sauce together in a bowl until combined.
- Chill overnight.
- Roll the mixture into a ball.
- Roll the ball in the chopped nuts.
- Serve at room temperature with ritz or club crackers.

Steps:
- Combine first 5 ingredients in a medium bowl; beat at medium speed with mixer until smooth.
- Cover and chill at least 3 hours.
- Shape mixture into a ball.
- Combine pecans and parsley; roll cheese ball in pecan mixture.
- Let stand at room temp at least 30 minutes before serving.

Steps:
- In a large bowl, with an electric mixer, beat cream cheese with cheddar, mustard, Worcestershire sauce, and a generous pinch of pepper until well combined. Mix in 1/4 cup pecans. Cover cheese mixture with plastic wrap, and chill at least 2 1/2 hours or up to overnight.
- Divide the cheese mixture in half, and shape each half into a ball. Spread remaining 3/4 cup pecans on a plate, and roll balls in pecans to coat completely, pressing nuts to adhere. Serve chilled.
