Super easy caramel or fudge brownie sundaes! They come together in 10 minutes or less, and you can get all the ingredients at your local store. Perfect for an elegant and easy brownie dessert.

2 big squares your favorite brownies
Hot fudge (I used Sanders brand hot fudge sauce)
Warm caramel Sauce (I used Sanders brand caramel sauce)
Your favorite vanilla ice cream (or any other flavor)
Sliced strawberries

Steps:

  • Break the brownies apart into small pieces. You can use good quality store-bought brownies or make my Perfect Brownies recipe.
  • Divide up some of the brownie pieces into 2 wide serving glasses, on the bottom layer. Add a few drizzles of hot fudge or warm caramel sauce, or both.
  • Add a 2-3 slices of strawberry. Then, add a 2 small scoops of ice cream.
  • Top with more brownie pieces, more sauce, strawberry slices, and more ice cream. Then finish it off with a few more drizzles of fudge and/or caramel sauce and strawberry slices.

1/4 cup vegetable oil, plus more for ramekins
1/2 cup all-purpose flour, (spooned and leveled)
1/4 cup whole-wheat flour (spooned and leveled)
1/4 cup unsweetened cocoa powder
3/4 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/3 cup sugar
3/4 cup unsweetened applesauce
1 large egg white
1 teaspoon pure vanilla extract
4 ounces bittersweet or semisweet chocolate, chopped
1 pint vanilla frozen yogurt
Toasted sliced almonds and shredded coconut, for topping

Steps:

  • Preheat oven to 350 degrees. Brush eight 8-ounce ramekins with oil; set aside. In a bowl, whisk together flours, cocoa, baking powder, baking soda, and salt.
  • In a large bowl, whisk together sugar, applesauce, and oil until smooth. Whisk in egg white and vanilla. Add flour mixture; mix just until moistened. Divide batter among ramekins; smooth tops. Bake on a rimmed baking sheet until a toothpick inserted in center of a brownie comes out clean, 20 to 25 minutes. Transfer sheet to a rack to cool completely. (To store, cover ramekins with plastic wrap, and keep at room temperature, up to 2 days.)
  • Assemble sundaes: Place chocolate in a microwave-safe bowl; microwave in 1-minute increments, stirring, until almost completely melted, 2 to 3 minutes. Top brownies with frozen yogurt and chocolate; serve with additional toppings.

This sundae takes its inspiration from an affogato, an Italian dessert consisting of a scoop of ice cream or gelato topped with a shot of hot espresso. Here, I add a decadent espresso brownie at the bottom for a twist on the classic restaurant-style brownie sundae with the added bold shot and creamy texture of an affogato. For an extra special treat, serve with any flavor of ice cream on hand: coconut, caramel and pistachio would all be scrumptious!

Nonstick baking spray
3/4 cup all-purpose flour
1/3 cup unsweetened cocoa powder (not Dutch process)
1/2 teaspoon instant espresso powder
1/2 teaspoon kosher salt
1 stick plus 2 tablespoons (10 tablespoons) unsalted butter, cut into 1/2-inch cubes
4 ounces semisweet chocolate, roughly chopped
3 large eggs
1 cup granulated sugar
1/4 cup packed light brown sugar
2 teaspoons pure vanilla extract
Vanilla ice cream, for serving
Hot, freshly brewed espresso, for serving

Steps:

  • Preheat the oven to 350 degrees F. Spray an 8-inch square cake pan with nonstick spray and line with parchment paper, leaving a 2-inch overhang on at least 2 sides.
  • Whisk the flour, cocoa powder, espresso powder and salt in a medium bowl until combined and set aside.
  • Microwave the butter and chocolate in a medium microwave-safe bowl on high power in 10-second bursts, stirring between each burst until melted, 40 seconds to 1 minute. Set aside.
  • Place the eggs, granulated sugar, light brown sugar and vanilla in a stand mixer fitted with the whisk attachment. Alternatively, use a large bowl and handheld electric mixer. Whisk until pale yellow ribbons form and the mixture is almost tripled in volume, 3 to 4 minutes. Turn off the mixer and add the melted chocolate. Mix on low speed until no streaks of chocolate remain, about 1 minute. Turn off the mixer and add the flour mixture. Mix on low speed until just combined and no pockets of dry flour remain, about 1 minute.
  • Pour the batter into the prepared cake pan and smooth with the back of a spoon. Bake until the edges are set but the center is still slightly soft and a toothpick inserted in the center comes out slightly fudgy, 26 to 30 minutes. Immediately bang the pan against the counter several times to deflate the brownies and let cool in the pan for at least 1 hour. Lift the brownies from the pan by the parchment paper edges and cut into 16 pieces.
  • To serve, place one brownie in a small serving bowl, top with a scoop of vanilla ice cream and pour a shot of hot espresso over top. Serve immediately.

HOT FUDGE SAUCE:
1 cup heavy whipping cream
1 cup sugar
1/2 cup butter, cubed
1 cup baking cocoa
Vanilla ice cream
Whipped cream and maraschino cherries, optional

Steps:

  • In a large heavy saucepan, melt butter and chocolate over low heat; stir until smooth. Cool., In a large bowl, beat eggs and sugar on low speed until combined. Beat on medium-high until thickened and lemon-colored, about 12 minutes. Beat in vanilla and chocolate mixture. Fold in flour and salt just until blended (batter will be thick). Fold in walnuts if desired. , Transfer to two greased 13x9-in. baking pans. Bake at 350° for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool on wire racks for 15 minutes. , In a large saucepan, combine the cream, sugar and butter. Cook and stir until sugar is dissolved. Bring to a boil, without stirring. Reduce heat; simmer, uncovered, for 3 minutes. Cool for 3 minutes. , Place cocoa in a heat-proof bowl. Carefully whisk hot liquid into cocoa until smooth (do not scrape pan). Cut brownies into squares; serve with ice cream and hot fudge sauce. Garnish with whipped cream and cherries if desired.

1 tablespoon low calorie chocolate syrup, plus additional for drizzling
1 3/4 teaspoons vanilla extract
1 egg
1 egg white
1 cup sugar
1 quart vanilla frozen yogurt
1/4 cup glazed walnuts, chopped (optional)
9 maraschino cherries (optional)

Steps:

  • Heat oven to 350. Line an 8-inch square baking dish with foil so it hangs over sides; coat spray and set aside.
  • In a small bowl, blend flour, cocoa, baking powder and salt.
  • In a medium-size microwave-safe bowl, microwave chocolate and butter for 40 seconds until melted, stirring halfway through. 4 ounces unsweetened baking chocolate
1 3/4 cups sugar
4 large eggs
1 teaspoon vanilla extract
2/3 cup all-purpose flour
1/4 cup unsweetened cocoa powder
1/2 teaspoon salt
1 cup pecans, toasted, cooled and coarsely chopped
2 (21 ounce) cans cherry pie filling
1 cup cranberry juice cocktail
4 teaspoons cornstarch
2 tablespoons sugar
1/2 teaspoon almond extract
1/3 cup cherry brandy
1 pint vanilla ice cream

Steps:

  • Heat oven to 325°F You'll need 16 heart-shaped foil baking cups (raynoleds' fun shapes) on a rimmed baking sheet, or a 3in heart shaped cookie cutter and a 13 x 9 in baking pan lined with nonstick foil(let foil extend about 2 in above pan at both ends).
  • Brownies: Microwave butter and chocolate in large bowl on high, stirring every 20 seconds, until melted and smooth. Whisk in sugar, then eggs, 1 at a time, then vanilla. With a rubber spatula, stir in flour, cocoa powder and salt just until blended. Stir in pecans. Divide batter evenly amoun baking cups, or spread into baking pan.
  • Bake 20 to 22 minutes for foil cups, 24 to 26 minutes for baking pan, or until a wooden pick inserted in center comes out with moist crumbs clinging. Transfer to a wire rack; cool completely. Remove brownies from cups or, holding foil by ends, lift from pan, cut out 12 hearts with cookie cutter and carefully remove foil.
  • Sauce: Drain pie filling in a colander; discard liquid. Mix 1 tbsp cranberry juice and the cornstarch in a small bowl. Stir remaining juice and the sugar in a 10 in skillet over medium-high heat until it boils and sugar dissolves. Using a whisk, stir in cornstarch mixture. Cook, stirring, until thickened. Add almond extract and cherries; stir 3 minutes or until hot.
  • Slowly pour brandy over cherries and carefully ignite with a long match. Shake pan back and forth until flames die out.
  • Top each with a small scoop of ice cream, then warm or room temperature sauce.
