Number Of Ingredients 12

10 cups torn romaine
2 medium red apples, cubed
2 medium pears, cubed
1 cup shredded Swiss cheese
1/2 cup dried cranberries
6 tablespoons lemon juice
3 tablespoons canola oil
3 tablespoons light corn syrup
1-1/2 teaspoons grated onion
1-1/2 teaspoons Dijon mustard
1/2 teaspoon salt
1/2 cup chopped lightly salted cashews

Steps:

  • In a salad bowl, combine the first five ingredients. , For dressing, in a small bowl, whisk lemon juice, oil, corn syrup, onion, mustard and salt. Pour over romaine mixture; toss to coat. Sprinkle with cashews.

MY Mother often fixed this salad when I was a child. I grew up on a farm and most of our food came right from the garden. We especially liked this in the spring, when early leaf lettuce appeared. After a long winter of cooked vegetables, this was a real treat.

2 cups torn leaf lettuce
1 hard-boiled large egg, chopped
1 green onion, sliced
2 tablespoons mayonnaise
1 teaspoon cider vinegar
1/8 teaspoon pepper

Steps:

  • In a salad bowl, combine the lettuce, egg and onion. In a small bowl, whisk the mayonnaise, vinegar and pepper. Pour over salad and toss to coat.

2 cups frozen corn, thawed and drained
1/2 cup sliced scallion
1/2 (10 1/2-ounce) package Morningstar Farms® Buffalo veggie wings (parepared per package directions)
1 cup low-fat sour cream
1 tablespoon taco seasoning mix
1/2 cup salsa

Steps:

  • 1. Prepare MORNINGSTAR FARMS Buffalo Wings per package instructions.2. On large plates or salad bowls evenly layer lettuce, black beans, corn, scallions and sliced wings.3. In small bowl, stir together sour cream and taco mix seasoning. Top each salad with sour cream mixture and salsa.
