LENTIL TOFU SOUP
This is a delicious warming winter soup. It is perfect for all vegetarians who crave for a full taste. You can swap tofu for seitan. My boyfriend made this up on a chilly winter evening and with his blessing I'm sharing it with you. I hope you will enjoy it!

Steps:
- Heat the oil and cook chopped onion until it is brown and aromatic.
- Add tofu and flour and cook for another minute.
- Stir in vegetable broth, drained lentil and tomato puree.
- Add herbs and spices. Salt if necessary. Cook for 20 minutes.
- Serve hot.

Steps:
- In 2-quart saucepan, heat oil over medium heat. Add onion, curry powder, cumin and garlic; cook, stirring occasionally, 4 to 6 minutes or until onion is tender. Stir in lentils and broth. Heat to boiling. Reduce heat; cover and simmer 10 minutes.
- Meanwhile, cut tofu into 1/2-inch pieces.
- Stir tofu, broccoli and parsley into simmering lentil mixture. Cook over medium heat about 5 to 8 minutes, stirring occasionally, until broccoli is crisp-tender.
