Crisp Chicken Schnitzel With Lemony Herb Salad image

This schnitzel is light and crunchy with a crust that rises like a soufflé. The secret is to trap air in the crust when you cook the meat by moving and shaking the pan (Ms. Clark demonstrates with pork in this video.) You can use this technique with a variety of meat cutlets.

6 anchovy fillets
1 small garlic clove
Kosher salt
freshly ground black pepper
Finely grated zest of 1 lemon
2 1/2 tablespoons fresh lemon juice
7 to 8 tablespoons extra virgin olive oil, to taste
2 eggs, beaten
1 1/2 cups panko or other unseasoned bread crumbs
1/2 cup flour
1/8 teaspoon cayenne
1/8 teaspoon freshly grated nutmeg
1 1/4 pounds chicken cutlets, pounded to 1/8-inch thick
Safflower, peanut or vegetable oil, for frying
2 quarts mixed baby greens
2 cups soft herb leaves, like a combination of mint, tarragon, basil, parsley, cilantro, chervil, chives (try to use at least 3 kinds)
1 scallion, thinly sliced, including greens

Steps:

  • Mince anchovies and garlic and mix with a large pinch of salt until you get a rough paste. Put it in bowl and whisk in the lemon zest, juice and another pinch of salt and some pepper. Slowly drizzle in the olive oil.
  • Place eggs in one shallow dish, bread crumbs in another, and flour mixed with cayenne and nutmeg in a third. Season chicken cutlets generously with salt and pepper.
  • Heat 1/8 inch oil in a large skillet. While oil heats, dip cutlets one by one into flour (shake off any excess), then into eggs (ditto) and finally into the bread crumbs, taking care not to handle chicken more than necessary (hold meat by ends).
  • When oil sizzles when a pinch of bread crumbs is thrown in, add a chicken cutlet (or two if your skillet is large, leave plenty of room around them). Swirl pan so oil cascades over top of cutlet in waves. When bottom is golden brown, about 3 minutes, flip and brown the other side, swirling pan (swirling helps create air pockets, giving you lighter schnitzel). Transfer to a paper-towel-lined baking platter or baking tray and sprinkle with more salt. Repeat with remaining chicken.
  • Toss salad greens and herbs with just enough anchovy-lemon dressing to lightly coat them. Divide salad on serving plates and top with schnitzel. Drizzle with more dressing and garnish with scallions.

An air fryer practically guarantees crispy, juicy chicken thighs. Seasoned simply with lemon zest, salt and pepper, they make a satisfying meal with an Italian-inspired salsa verde and bright kale salad (that's easy to make ahead). Air fried panko is the final crunchy touch.

2 teaspoons Dijon mustard
1 teaspoon finely grated zest
Pinch crushed red pepper flakes

1 bunch curly kale (about 10 ounces), woody stems removed and leaves very thinly sliced
1/2 cup panko
1 tablespoon finely grated Pecorino Romano, plus more for serving
Four bone-in skin-on chicken thighs (about 2 pounds total)
2 teaspoons finely grated lemon zest
Kosher salt and freshly ground black pepper
1 tablespoon olive oil
2 teaspoons capers
2 oil-packed anchovy filets (optional)
1 clove garlic
Kosher salt
1/4 cup plus 2 tablespoons olive oil
1 teaspoon red wine vinegar
1 teaspoon finely grated lemon zest
1 cup fresh parsley leaves, finely chopped
1 cup fresh basil leaves, finely chopped
1/2 small bunch chives, finely chopped (about 1/4 cup chopped)

Steps:

  • For the lemony kale salad: Whisk the lemon juice, Dijon, lemon zest, pepper flakes, 1 teaspoon salt and several grinds of pepper in a large bowl until combined. Slowly whisk in 3 tablespoons of the olive oil until smooth and emulsified. Add the kale and toss until well coated. Taste and adjust the seasoning with salt and pepper, if needed. Set aside at room temperature to marinate and soften, at least 15 minutes at and up to 8 hours in the refrigerator.
  • Meanwhile, preheat the air fryer to 350 degrees F. Toss together the panko, remaining 2 tablespoons olive oil, a pinch of salt and a few grinds of pepper in a 6- to 7-inch baking dish until evenly combined. Place the baking dish in the air fryer basket and air fry until the panko are golden brown, stirring halfway through, 4 to 6 minutes. Remove the dish from the air fryer, stir in the Pecorino and set aside.
  • For the chicken thighs: Preheat the air fryer to 400 degrees F. Pat the chicken dry between a few paper towels (this will help the skin get crispy). Rub the lemon zest onto the skinless side of each thigh and season with a good pinch of salt and several grinds of pepper. Flip the thighs over, rub the olive oil onto the skin and season each thigh with a good pinch of salt and several grinds of pepper. Place the thighs in the air fryer basket skin-side up, leaving a little space between each piece. Air fry until the skin is crispy and the chicken is browned all over and cooked through, 22 to 25 minutes.
  • For the salsa verde: Meanwhile, finely chop the capers, anchovy filets (if using), garlic and a small pinch of salt with a sharp chef's knife, mashing and scraping the mixture until it becomes a paste. Transfer to a small bowl and stir in the olive oil, vinegar and lemon zest. Fold in the parsley, basil and chives until thoroughly combined. Taste and adjust the seasoning with salt and pepper, if needed.
  • To serve, give the kale salad a good toss, then top with the toasted panko and some more grated Pecorino. Transfer the chicken thighs to a dinner plate or serving platter and spoon the salsa verde over the top. Serve with the kale salad.

1 1/4 cups panko (Japanese breadcrumbs)

Steps:

  • Using meat mallet or rolling pin, flatten chicken between sheets of plastic wrap to thickness of 1/2 inch. Whisk eggs in medium bowl to blend. Mix panko, 2 tablespoons parsley, oregano, salt, and pepper on plate. Dip chicken in beaten eggs; turn to coat. Dredge in breadcrumb mixture, coating completely.

Crisp Chicken Schnitzel With Lemony Spring Herb Salad image

New York Times, June 3, 2009 The hallmark of a perfect Wiener schnitzel, opined the epicure Joseph Wechsberg, is a slice of veal with breading "so dry you could sit on it without having a fat stain on your pants." I've clung to this image since I read it in Mr. Wechsberg's classic 1953 book, "Blue Trout and Black Truffles." Why anyone would ever sit on a schnitzel to test it in the first place wasn't clear, but I liked the notion of such a greaseless fried morsel of meat. Years later, an Austrian chef, Mario Lohninger, gave me a schnitzel lesson. (He and I worked on a cookbook together.) I thought I knew what was what. "They say you should be able to sit on a schnitzel without getting grease on your pants, right?" I said with authority. Mr. Lohninger raised an eyebrow. "Maybe they sit on schnitzel in Vienna," he said. "Where I come from we prefer a crisp, light schnitzel with a crust that rises like a soufflé." The secret, he said, is to trap air in the crust when you cook the meat by moving and shaking the pan. After dipping the veal in flour, egg and bread crumbs, he put a cutlet in the skillet, swirling it so the hot oil undulated over the cutlet in waves. This motion creates steam that lifts the crust away from the meat, allowing the bread crumbs to crisp without sticking to the veal in a gummy mass. Indeed, his schnitzel was a golden, gorgeous thing, with a puffy crust that shattered at the touch of a fork, and tender meat within. He served it with cucumber salad and lingonberry jam. Years went by, but when my next schnitzel craving hit, it hit hard. I wanted crumby, crisp, fried meat for dinner, and would not be denied. What I didn't want, however, was factory farm veal. I know there is humanely raised veal available in New York, but not at my local market. I chose cutlets of free-range chicken instead. Because the cutlets were not quite one-eighth-inch thick - the proper thickness for schnitzel, according to Mr. Lohninger - I pounded them a little with a rolling pin. Then, without handling them too much, I gently dipped them in flour, egg and bread crumbs. When they were all nicely coated, I dropped a cutlet in hot oil, swirling the pan as instructed. The meat puffed slightly and browned beautifully. The chicken was soft and savory (thanks to a pinch of cayenne and nutmeg) beneath the ultra-crisp crust. I served it with a bright herb-laden salad. The schnitzel passed Mr. Lohninger's soufflé test easily, and you don't have to sit on any cutlets - unless you're into that.

2 cans (8 ounces each) pineapple chunks
1 medium apple, diced
3 cups cubed cooked chicken
1 cup seedless grapes, halved
3 tablespoons butter
3 tablespoons all-purpose flour
1/4 cup sugar

1/2 cup lemon juice
2 egg yolks, lightly beaten
1/2 cup heavy whipping cream
Lettuce leaves
1/2 cup slivered almonds, toasted

Steps:

  • Drain pineapple, reserving the juice. Set aside pineapple and 1/2 cup juice. Toss remaining juice with apple; drain. In a large bowl, combine chicken, grapes, pineapple and apple. Cover and refrigerate., In a saucepan, melt butter. Stir in flour, sugar and salt until smooth; gradually add lemon juice and the reserved pineapple juice. Bring to a boil; boil and stir for 2 minutes. Reduce heat. Add a small amount to egg yolks; return all to pan. Bring to a gentle boil; cook and stir for 2 minutes. Remove from the heat; chill for 10-15 minutes. , Beat cream until stiff peaks form; fold into cooled dressing. Pour over chicken mixture; gently stir to coat. Chill for 1 hour. , Serve in a lettuce-lined bowl. Sprinkle with almonds.

For the chicken:
4 4-5 oz. boneless, skinless chicken breast halves (or, two, 8 oz. pieces)
¾ cup all-purpose flour
2 large eggs
1 cup fresh bread crumbs (or, dried, unseasoned breadcrumbs)
½ cup panko breadcrumbs
½ cup Parmesan cheese, finely grated
--- fine sea salt & freshly ground pepper
½ tsp. garlic powder (optional)
4 TBSP. olive oil
2 TBSP. butter (or, more olive oil)
1 TBSP. fresh parsley, finely minced
1 lemon cut into wedges, for serving
For the salad:
1½ TBSP. lemon juice
3 TBSP. olive oil
--- --- sea salt and ground black pepper
3 cups baby arugula
½ sm. red onion, sliced into paper thin ribbons (or, 1 small shallot)

Steps:

  • Preheat the oven to 200° F (this is to keep the first batch of cutlets warm while you cook the rest).
  • Prepare the chicken: Pat dry the chicken breasts and place them on a cutting board. Butterfly each chicken breast in half lengthwise by cutting to, but not through, the opposite side using a sharp knife and holding it parallel to the cutting board. This will leave you with four, butterflied portions. Open up the piece of chicken like a book (each half should be about ¼-inch thick. If thicker than that, place the chicken between two pieces of wax paper or plastic wrap and pound it to about ¼-inch thickness, using the flat side of a meat tenderizer. See note *, below.). If the chicken breasts are larger (about 8 oz. each), use only 2 of them and butterfly each into two separate cutlets, leaving you with four, individual portions of about 4 oz. each.
  • Prepare your workstation: Put the flour in one shallow and wide bowl (or, a soup plate). Beat the eggs and place them in a second shallow bowl. Combine the breadcrumbs, panko and Parmesan cheese and place that in a third shallow bowl. Season both sides of your chicken with the salt, pepper and garlic powder. One by one, dredge the seasoned chicken in the flour, shaking off any excess, then dip it in the egg wash, then dredge it in the breadcrumb mixture; pat it lightly. Transfer the chicken pieces to a wire rack and chill them uncovered for at least 30 minutes, or, refrigerate for up to 8 hours.
  • For the salad: Pour the olive oil and the lemon juice in a small jar and season with salt and pepper. Shake well to combine and set aside. In a bowl toss together the arugula and thinly sliced onion or shallot ribbons.
  • Set a large, non-stick, 12-inch skillet over medium heat. Add half of the olive oil and half of the butter and swirl it around. When it is hot, slip in two cutlets (or, as many as can fit comfortably without overlapping), making sure to let them fall away from you so you do not get burned. Cook for 3 minutes, or, until golden brown on the first side. Flip and cook 2-3 minutes more or until cooked through (cooking time will depend on the thickness of the chicken). Using tongs, transfer the chicken to an ovenproof plate, sprinkle lightly with a little salt and pop them into the oven to keep warm. At this point, if the butter in the skillet looks burnt, wipe the pan clean. Add the remaining olive oil and the remaining butter and cook the two other cutlets.
  • Arrange the chicken on a warmed serving platter, or, place on individual plates and sprinkle with the parsley. Drizzle the dressing over the salad and mix to combine. Top each chicken with some of the salad. Serve immediately, with a lemon wedge on the side.

I was looking for a lighter chicken salad for spring time and came up with the following recipe that does the job. Poaching the chicken first in aromatics is key to its terrific flavor.

2 stalks celery, leaves on, sliced
1/2 medium onion, diced
2 sprigs fresh rosemary or 2 tablespoons dried rosemary

1 lemon, juice of

1 teaspoon salt
1/2 teaspoon fresh ground black pepper
2 stalks celery, sliced
3 slices red onions, chopped
1 teaspoon dried tarragon
3 tablespoons capers, drained
3 tablespoons mayonnaise
3 tablespoons sour cream
1/2 cup slivered almonds
1 (1 g) packet Splenda sugar substitute
1 lemon, juice of
salt and pepper

Steps:

  • Put the chicken thighs in a medium size sauce pan and add the next 9 ingredients. Bring to a boil, cover, reduce heat to lowest setting, and gently poach until juices in chicken when pierced are clear and no longer pink, about 20 to 25 minutes.
  • Remove chicken pieces to a plate to cool. Discard poaching liquid. When the chicken's cool enough to handle, remove the skin and bones and coarsely chop the meat.
  • Add the chicken to a large bowl and stir in the remaining ingredients.
  • Terrific on a sandwich or as a main dish salad on a bed of mixed spring greens.

This is from Cooking Light July 2010. I brought it to a picnic and it went over well. It's mayo free so it holds up well on a hot day. I liked it so much, Thought I'd post it here for safekeeping. I did make a bit more of the dressing than the recipes called for, seemed a little dry otherwise.

3/4 cup orzo pasta
1/4 teaspoon lemon zest, grated
3 tablespoons fresh lemon juice
1 tablespoon extra virgin olive oil

1/8 teaspoon fresh ground black pepper
1 cup cooked chicken, shredded
1/2 cup English cucumber, diced

Steps:

  • Cook orzo according to package directions, omitting salt and fat. Drain and rinse with cold water; drain and place in a large bowl.
  • While orzo cooks, combine lemon rind and next 6 ingredients (through black pepper), stirring well with a whisk. Drizzle juice mixture over orzo; toss to coat. Add chicken and next 4 ingredients (through dill); toss gently to combine. Sprinkle with cheese.

Lemony Crispy Chicken Cutlets and Roasted Tomato Salad with Pine Nuts and Blue Cheese image

6 plum tomatoes, cut in half lengthwise
Extra-virgin olive oil (EVOO), for drizzling
1/2 tablespoon fresh thyme leaves, chopped
2 garlic cloves, minced
Salt and freshly ground black pepper
1/4 cup pine nuts
1/2 cup all-purpose flour
2 cups Italian bread crumbs
Zest and juice of 1 lemon, plus 1 lemon cut into wedges
2 eggs
Vegetable oil, for shallow frying
2 pounds thin chicken cutlets
1 sack (12 ounces) baby spinach or 3/4 pound from bulk bins, washed and patted dry
3/4 cup crumbled blue cheese

Steps:

  • Preheat the oven to 375°F.
  • Toss the tomatoes with a little drizzle of EVOO and season with the thyme, garlic, salt, and pepper. Arrange the seasoned tomatoes on a rimmed cookie sheet and roast for 20 minutes.
  • Preheat a small skillet over medium heat. Add the pine nuts and toast, stirring and tossing frequently, until lightly golden. Or you can toast the pine nuts in the oven on a rimmed cookie sheet until golden all over, about 10 minutes. Reserve the nuts.
  • Place the flour in a shallow dish. In another shallow dish combine the bread crumbs and lemon zest. Beat the eggs in a separate shallow dish with a splash of water.
  • Heat a thin layer of vegetable oil in a large skillet over medium to medium-high heat. Season the cutlets with salt and pepper on both sides and turn lightly in the flour. Coat the cutlets in the egg mixture, then in the breading, and add to the hot oil. Cook the cutlets in a single layer, in 2 batches if necessary, for 3 or 4 minutes on each side, until the juices run clear and the breading is evenly browned.
  • Remove the roasted tomatoes from the oven and coarsely chop, then transfer to a salad bowl. Add the baby spinach, the lemon juice, a drizzle of EVOO, the reserved toasted pine nuts, salt, and pepper. Toss together and let the heat of the tomatoes slightly wilt the spinach.
  • Serve the chicken cutlets with a generous portion of the roasted tomato salad; sprinkle the salad with the crumbled blue cheese. Arrange lemon wedges alongside.

3/4 cup orzo, uncooked
1/2 teaspoon lemon rind, grated
6 tablespoons lemon juice
2 tablespoons olive oil
1 teaspoon kosher salt
1 teaspoon garlic, minced
1/2 teaspoon honey
1/4 teaspoon black pepper, freshly ground
8 ounces chicken breast, cooked and shredded
1/2 cup English cucumber, diced
1/2 cup red bell pepper, chopped
1/3 cup green onion, thinly sliced
1 tablespoon fresh dill, chopped

Steps:

  • Cook orzo according to package directions, omitting salt and fat. Drain and rinse with cold water; drain and place in a large bowl.
  • While orzo cooks, combine lemon rind and next 6 ingredients, stirring well with a whisk.
  • Drizzle juice mixture over orzo; toss to coat.
  • Add chicken and next 4 ingredients; toss gently to combine.

2 1/2 T fresh lemon juice
7-8 T olive oil
2 eggs, beaten
1 1/2 c panko or unseasoned bread crumbs
1/2 c flour
1/4 t cayenne
1/8 t freshly grated nutmeg
1 1/4 lbs chicken cutlets, pounded to 1/8" thick
Safflower, peanut,or veg oil
2 quarts mixed baby greens
2 c soft herbs-mint,tarragon,basil,parsley,cilantro, chervil, chives-at least 3
1 scallion, thinly sliced

Steps:

  • MInce anchovies and garlic; mix w/ large pinch of salt until it makes a paste. Put in bowl; whisk in lemon zest, lemon juice, another pinch of salt and some pepper. Slowly drizzle in olive oil. place eggs in one shallow dish, bread crumbs in another, flour mixed with cayenne and nutmeg in a third. Season chicken cutlets w/ salt and pepper. Heat 1/8" oil in large skillet. Dip cutlets into flour, eggs,and bread crumbs. When oil sizzles, add chicken and swirl oil over top. When bottom is golden brown-3 min, flip and brown other side, swirling pan to create a lighter schnitzel. SErve over greens and sprinkle with herbs and scallions

13.75 oz chicken broth, low salt
2 pkg lemon gelatin
1 c cold water
1 can(s) pineapple, crushed with juice
2 Tbsp lemon juice
1/2 tsp tarragon, crushed
pinch white pepper
1.5 c chicken breasts, cooked and cubed
1/2 c parsley, chopped
1/4 c red bell pepper, chopped

Steps:

  • 1. Bring chicken broth to a boil in small saucepan.
  • 2. Completely dissolve gelatin in boiling broth; add water, pineapple, lemon juice, tarragon and white pepper.
  • 3. Refrigerate until slightly thickened.
  • 4. Stir in chicken, celery and red pepper.
  • 5. Spoon into 4 individual plastic containers or serving dishes; refrigerate until firm, about 2 hours.

6 anchovy fillets
1 small garlic clove
Kosher salt
freshly ground black pepper
Finely grated zest of 1 lemon
2 1/2 tablespoons fresh lemon juice
7 to 8 tablespoons extra virgin olive oil, to taste
2 eggs, beaten
1 1/2 cups panko or other unseasoned bread crumbs
1/2 cup flour
⅛ teaspoon cayenne
⅛ teaspoon freshly grated nutmeg
1 1/4 pounds chicken cutlets, pounded to 1/8-inch thick
Safflower, peanut or vegetable oil, for frying
2 quarts mixed baby greens
2 cups soft herb leaves, like a combination of mint, tarragon, basil, parsley, cilantro, chervil, chives (try to use at least 3 kinds)
1 scallion, thinly sliced, including greens

Steps:

  • Mince anchovies and garlic and mix with a large pinch of salt until you get a rough paste. Put it in bowl and whisk in the lemon zest, juice and another pinch of salt and some pepper. Slowly drizzle in the olive oil.
  • Place eggs in one shallow dish, bread crumbs in another, and flour mixed with cayenne and nutmeg in a third. Season chicken cutlets generously with salt and pepper.
  • Heat 1/8 inch oil in a large skillet. While oil heats, dip cutlets one by one into flour (shake off any excess), then into eggs (ditto) and finally into the bread crumbs, taking care not to handle chicken more than necessary (hold meat by ends).
  • When oil sizzles when a pinch of bread crumbs is thrown in, add a chicken cutlet (or two if your skillet is large, leave plenty of room around them). Swirl pan so oil cascades over top of cutlet in waves. When bottom is golden brown, about 3 minutes, flip and brown the other side, swirling pan (swirling helps create air pockets, giving you lighter schnitzel). Transfer to a paper-towel-lined baking platter or baking tray and sprinkle with more salt. Repeat with remaining chicken.
  • Toss salad greens and herbs with just enough anchovy-lemon dressing to lightly coat them. Divide salad on serving plates and top with schnitzel. Drizzle with more dressing and garnish with scallions.
