3 lemongrass stalks, plus more for garnish (optional)
6 mint tea bags
1/4 cup honey

Steps:

  • Split 3 lemongrass stalks lengthwise, cut into 3-inch pieces, and smash lightly. Add to 6 cups water in a pot; bring to a boil. Pour into a large heatproof bowl; add tea bags and honey. Let cool, then steep in refrigerator overnight. Strain and serve over ice, garnished with a split lemongrass stalk, if desired.

10 cup boiling water
8 green tea bags
1 small bunch mint plus more for garnish
12 sticks lemongrass

Steps:

  • In a large bowl or pitcher, combine water and tea. Let sit at room temperature until cool. Tear mint into pieces and add to pitcher. Using only the bottom 2-inches of lemongrass stalk, cut into chunks and bruise with the back of your knife. Add to pitcher along with 2 cups cold water. Refrigerate at least 4 hours or overnight. To serve, strain through cheesecloth or a fine sieve and pour over ice in tall iced tea glasses. Garnish with additional sprigs of mint and lemongrass if desired. This tea is unsweetened

12 fresh lemongrass stalks, 1 or 2 outer leaves discarded
1/2 cup sugar
8 cups water

Steps:

  • Trim off bottom 6 inches of lemongrass stalks. Cut enough lemongrass tops crosswise into 1/2-inch pieces (discard any discolored parts) to measure 1 cup. Bring lemongrass pieces, sugar, and 2 cups water to a boil in a 2-quart heavy saucepan, stirring until sugar is dissolved, then remove from heat and let steep, partially covered, 20 minutes.
  • Put remaining 6 cups water in a pitcher. Blend lemongrass mixture in a blender until lemongrass is finely chopped (use caution when blending hot liquids), then pour through a fine-mesh sieve into water in pitcher, discarding solids. Serve over ice.

  • Coarsely chop the bottom 4 inches of the lemongrass stalks.
  • Trim the tops, remove the outside leaves, and save for garnish.
