CHICKEN IN LEMONGRASS COCONUT BROTH

I made this soup after trying it at a Thai noodle house in my area. I just kept playing around with ingredients until I got something similar. I have the seasonings adjusted to my liking, however there is an adjustment guide in the footnotes if you would like a slightly different flavor. This soup is also good with rice or pasta, but ramen seems to be the favorite. You can use any flavor of ramen noodles.

1 fresh lemongrass stalk, outer leaves removed
2 quarts chicken stock
½ cup minced fresh ginger, divided
4 fresh kaffir lime leaves
1 tablespoon minced garlic
1 tablespoon Sriracha chile sauce
1 ½ pounds skinless, boneless chicken breast halves, cut into 1-inch strips
½ cup fresh cilantro, bundled
2 (14 ounce) cans coconut milk
3 tablespoons brown sugar
2 tablespoons lime juice
1 tablespoon fish sauce
6 (3 ounce) packages ramen noodles (exclude seasoning packets)
2 large carrots, shredded
1 cup chopped tomatoes
3 green onions, chopped
¼ cup chopped fresh cilantro, or to taste

Steps:

  • Mince the lower 2/3 of lemongrass stalk. Bruise the remaining upper portion of lemongrass stalk by hitting it with the back of a knife.
  • Pour chicken stock into a large pot; add minced lemongrass, bruised lemongrass stalk, 1/2 the ginger, lime leaves, garlic, and Sriracha sauce. Bring to a boil, reduce heat, and simmer. Add chicken to simmering broth; cook until chicken is no longer pink in the center, about 10 minutes. Remove lemongrass stalk and lime leaves using a slotted spoon; discard.
  • Place cilantro bundle in the broth and simmer for 2 minutes. Add coconut milk, remaining ginger, brown sugar, lime juice, and fish sauce. Remove cilantro bundle using a slotted spoon; discard. Simmer broth, 5 to 10 minutes.
  • Fill a large pot with water and bring to a rolling boil. Add ramen and cook until softened, about 3 minutes. Drain and portion noodles into serving bowls.
  • Mix carrots, tomatoes, and green onions into broth. Ladle broth over noodles; garnish with cilantro.

Cozy up with this warming, Southeast-Asian-inspired soup that features a lemongrass-scented broth, silken tofu, and tender noodles. To ward away any sign of a cold, a serving of vitamin C-packed broccolini is stirred in at the end.

6 cups low-sodium chicken broth
1 large onion, peeled and halved
6 cloves garlic, smashed and peeled
2 stalks lemongrass, smashed with the back of a knife and cut into 3-inch lengths
1 (3-inch) piece fresh ginger, cut into 1/8-inch-thick slices
1 cup cilantro sprigs, plus more for serving
1 Thai chile pepper, a slit cut in side (seeds removed for less heat, if desired), plus more, sliced, for serving (optional)
1/2 teaspoon sugar
1 tablespoon fish sauce
Kosher salt
8 ounces Broccolini or Chinese broccoli, cut into 1-inch pieces (3 cups)
1 pound fresh plain wheat noodles, or 8 ounces wide rice noodles
8 ounces silken tofu (1 cup), cut into 6 pieces
Fresh Thai or Italian basil leaves and lime wedges, for serving

Steps:

  • In a saucepan, combine broth, 3 cups water, onion, garlic, lemongrass, ginger, cilantro, whole chile, and sugar. Bring to a boil, then reduce heat to low and simmer, partially covered, 30 minutes. Strain, discarding solids; return broth to pot. Stir in fish sauce; season with salt.
  • Meanwhile, bring a pot of salted water to a boil. Add Broccolini and return to a boil; cook until crisp-tender, about 1 minute. Using tongs, transfer to a plate. Add noodles to pot and cook until just al dente, about 4 to 5 minutes for wheat noodles, 3 minutes for rice noodles. Drain.
  • Divide noodles among bowls. Add Broccolini to hot broth, then gently add tofu and heat through over medium. Spoon broth, Broccolini, and tofu over noodles. Garnish with herbs and sliced chile, and serve with lime wedges.

3/4 pound uncooked large shrimp
6 14 1/2-ounce cans low-salt chicken broth
1 cup finely chopped carrot
1/3 cup thinly sliced fresh lemongrass
3 tablespoons finely chopped fresh ginger
2 tablespoons minced garlic
1 1/2 tablespoons finely chopped fresh basil
1 1/2 tablespoons finely chopped fresh mint
1 1/2 tablespoons finely chopped cilantro
1 small serrano chili, stemmed, thinly sliced into rounds
1 1/2 teaspoons fresh lime juice
6 thin lime slices

Steps:

  • Peel and devein shrimp; reserve shells. Halve shrimp lengthwise. Transfer shrimp to small bowl. Cover and chill.
  • Combine reserved shrimp shells, broth and next 4 ingredients in large pot. Bring to boil. Reduce heat; simmer uncovered 20 minutes to blend flavors, stirring and skimming surface occasionally. (Can be made 1 day ahead. Cover; chill.)
  • Strain broth into large bowl, pressing on solids with back of spoon to release as much liquid as possible; discard solids. Return broth to pot. Bring to simmer. Remove from heat. Add shrimp, herbs, chili and lime juice. Cover and let stand until shrimp are opaque, stirring once, about 2 minutes.
  • Ladle into bowls. Garnish with lime.

4 each 1 1/2 pound whole lobsters
3 cups Lemongrass Lobster Broth, recipe follows
Juice of 1/2 a lemon
Salt and white pepper to taste
Canola oil to cook
Bok Choy Fondue, recipe follows
Shiitake Truffle Flan, recipe follows
4 each uncooked lobster heads* (See Cook's Note)
1 sliced fennel
1 sliced red onion
1 sliced carrot
1 stalk celery
6 stalks lemongrass, white part only, pounded
2 slices ginger
1 cup chardonnay
1 tablespoon tomato paste
1 bay leaf
1/2 teaspoon whole green peppercorn
6 cups water
Canola oil to cook
1 teaspoon minced ginger
1 teaspoon minced garlic
1 tablespoon butter
4 cups chopped bok choy
1/2 cup lobster stock
Lobster knuckle meat from 4 lobsters
Salt and black pepper to taste
4 eggs
1 cup heavy cream
1 1/2 cups sauteed shiitake mushrooms (sauteed with 1 teaspoon minced shallots)
2 tablespoons sliced green scallions
1 tablespoon white truffle oil
Salt and white pepper to taste

Steps:

  • Place live lobsters in the freezer to numb, then quickly slice head in half. Separate claws, tail and knuckles. Save heads for stock. Cut tail in half, leaving the end attached. Place claws in a bowl and pour boiling salted water over them and let stand for five minutes. Place knuckles in for the last 3 minutes. Strain lobster and immediately plunge into an ice bath. Deshell lobster which is not fully cooked. In a hot saute pan, coat with oil and saute seasoned tail, feeler side down. Cook both sides, about 5 minutes, then add claws. Deglaze with stock, add lemon juice and check for seasoning. In a large pasta bowl, place small mound of bok choy. Top with flan and top that with lobster. Ladle in broth and garnish with sliced scallions and coral.
  • In a hot stock pot, coat with a little canola oil and color the lobster heads. Add fennel, onions, carrots, celery, lemongrass and ginger. Saute until soft. Deglaze with wine and reduce. Add tomato paste, bay leaf, peppercorn and water to cover the heads. Simmer slowly for 2 to 3 hours then strain. * If there is any green coral, pull out and dry in 200 degree oven for 4 hours then grind to a red powder for garnishing.
  • In a hot saute pan, saute garlic and ginger in butter. Add bok choy, stock and lobster meat. Season and cook until soft. Check for seasoning.
  • Mix everything in large bowl. Spray 4 ramekins with pan release and fill 4/5 full. Place in hot bain marie (water up half way) and bake in oven at 300 degrees for 25 minutes or until flans are set.

4 stalks lemongrass, chopped
6 large ripe tomatoes, chopped, plus 4 tablespoons diced tomato
2 shallots, chopped
10 to 15 large sprigs cilantro, more for garnish
3 slices ginger, peeled
2 cloves garlic, peeled and crushed
10 kaffir lime leaves
1 1/2 tablespoons fish sauce, more to taste
4 tablespoons diced cucumber, for garnish
Bean sprouts, for garnish
1 lime, cut into wedges, for garnish

Steps:

  • In a medium pot, bring stock to a boil. Add lemongrass, chopped tomatoes, shallots, cilantro, ginger, garlic and kaffir lime leaves. Simmer for 45 minutes.
  • Strain through a fine sieve. Discard solids. Stir in the fish sauce, adding more if desired. Divide among four serving bowls, and garnish with cucumber, tomato, bean sprouts and cilantro. Serve with a lime wedge.

3 stalks lemongrass
1 red pepper
1 onion
1/2 bunch cilantro
1 c. garlic
1/4 lb scallions
3/4 lb ginger
1/2 gal. white wine
1 qt. o.j.
1 qt pineapple juice
1 qt clam juice
1/4 c. black peppercorn
7 bay leaves
For Mussel starter:
1/2 bunch cilantro
1/2 c. garlic
1/2 c. ginger
1/2 c. oil
1/4 c. crushed red chile flakes
salt and pepper to taste
For Fresno Chile rouille:
8 fresnos, roasted
9 egg yolks
1 shallot, small diced
1/2 c. roasted garlic
1/2 c. lemon juice
2 c. salad oil
1 c. olive oil
salt to taste
Other ingredients needed:
1/2 bunch cilantro sliced
1/2 lbs unsalted butter diced
2 pineapples sliced, grilled and small diced
2 packages of Asian rice noodles, soaked in warm water to soften
1 baguette sliced and grilled with salt, pepper and oil (2 crostinis per order)
32-40 oz of P.E.I Mussels, washed and de-bearded (4oz
per order)

Steps:

  • To Prepare Ginger lemongrass broth: Medium dice all vegetables, thinly slice ginger and garlic and add to liquid along with bay leaves in medium saucepan, simmer for 1/2 hour. Add scallions and cilantro and simmer for 15 minutes more. Strain through chinios, cool and set aside. While Broth simmers prepare Mussel starter & Chile rouille: Mussel Starter: Slice cilantro and brunoise garlic and ginger. In a bowl mix with oil and red Chile flakes, season with salt and pepper. Fresno Chile rouille: De-stem fresnos but leave the seed. Mix all ingredients in a robo coupe except oil. Slowly drizzle in oil. Will have a loose mayonnaise like consistency. Add salt to taste. Finishing the dish: Pre-heat a large pan or skillet to medium heat with no oil. Add mussel, 8-10 tablespoons of mussel starter and all of the grilled and diced pineapple. Lightly cook until mussels just start to open. Add a generous amount of ginger-lemongrass broth and cover. Cook until mussels completely open, (about 8-10 minutes). Add rice noodles, butter and cilantro and cook until butter is incorporated, season with salt and pepper to taste. Plate Up: Divide up noodles, broth and mussels evenly. Put two crostinis on top of each bowl, add about a tablespoon of rouille on top of crostinis.

3 cups fish stock
2 tablespoons shredded ginger
2 stalks lemongrass, finely chopped
2 teaspoons shredded fresh lemon rind
1 kg mussels, cleaned

Steps:

  • Place stock, ginger, lemongrass and lemon rind in a saucepan over high heat.
  • Bring the broth to the boil then add the mussels and cook for 2-3 minutes or until the mussels open.
  • Discard any mussels that don't open.
  • Serve mussels in deep bowls with the broth and some bread or with some cooked pasta.

I took a cooking class at a local Gourmet Market. This was absolutely scrumptious! I don't even care for Salmon and loved this soup. You will need to go to an Asian market for some of the ingredients. A bit of work but, fun and well worth it.

1 -4 cup thick coconut cream (the top of the can of pure coconut milk)
1 tablespoon roasted thai chili paste (nam prik pao, Pantainorasingh Brand the best)
1/2 teaspoon salt
1/2 teaspoon sugar
1 pinch white pepper
1 stalk lemongrass, tender heart only, finely minced
2 green onions, white section only, finely minced
3/4 lb salmon fillet
2 fresh kaffir lime leaves, finely slivered
1 lb round wonton wrapper
2 (13 1/2 ounce) cans coconut milk
1 1/2 cups chicken stock
8 slices fresh galangal, quarter-sized slices (siamese ginger)
4 stalks fresh lemongrass, cut into 6-inch lenghts and bruised
3 green serrano chilies, bruised
3 -4 tablespoons fish sauce
8 fresh kaffir lime leaves
1 cup canned whole straw mushroom, drained
2 limes, juice of, fresh
2 red fresno chiles, julienned
1 sprig fresh cilantro (to garnish)
shallot, crispy shallot flakes for garnish (optional)

Steps:

  • To Make the Dumplings: In a small bowl mix together the coconut cream, roasted chile paste, salt, sugar and pepper. In food processor workbowl, add the minced lemongrass, green onion and salmon; process into a rough paste. Add the coconut cream mixture;process until it is a smooth paste. Fold in the lime leaves.
  • To Fold the Dumplings:Place 1 heaping teaspoon of the filling in the center of the wrapper. Moisten the edges of the wrapper with water. Fold in half to enclose the filling to form a half circle. Pinch the edges together to seal. Set the dumplings on a baking sheet lined with wax paper; cover with a towel. Repeat with the remaining filling and wrapppers. (may freeze them at this point).
  • To Make the Broth: Colmbine the coconut milk, chicken stock, galangal, lemongrass and green chilies in a stock pot. jBring to a boil, reduce to a simmer for 15- 20 minutes. Do not continue simmering or the lemongrass will loose its taste. Strain the broth into the soup pot. Add fish sauce, lime leaves, and mushrooms; simmer together for 3-5 minutes. When ready to serve, stir in the lime juice.
  • To Cook the Dumplings and Serve: In a large pot, bring 2 quarts of water to a rolling boil. Drop the fresh or frozen dumplings into the boiling water. When the water returns to a boil, with a slotted spoon scoop out the dumplings that flast to the top. Transfer 6 dumplings to each to a soup bowl (flat bowl is best). Ladle about 1 cup of hot brothe into each bowl. Garnish with red chilies, cilantro, and crispy shallot flakes.

3 shallots, sliced
3 tbsp groundnut or sunflower oil
2 garlic cloves, roughly chopped
2-3 bird's eye chillies, sliced
2 sticks of lemongrass, thinly sliced
3 lime leaves (if possible)
1 large chicken breast, skinned
1 punnet of cherry tomatoes, halved
Juice of 2-4 limes (to taste)
Splash of fish sauce
A large handful of coriander
1 bunch of spring onions, thinly sliced at an angle
A handful of bean sprouts

Steps:

  • 1 In a medium-size saucepan, sweat the shallots gently in half of the oil. Keep the lid on to soften - but not colour - them. 2 Meanwhile, blitz the garlic, chilli, lemongrass (ditch the woody end) and lime leaves (if you have them) in a blender with the rest of the oil until you have a smooth paste. 3 Stir the paste into the shallots and fry for a couple of minutes before pouring in 1.2 litres of boiling water. 4 Add the chicken breast. Once the liquid has come to a simmer, turn the heat down, put a lid on the saucepan and gently poach the chicken for 8-10 minutes (depending on size). 5 Lift the breast out, toss in the halved tomatoes, turn the heat off and keep covered. 6 Season the broth with lime juice and fish sauce until sharp and slightly salty. 7 In a bowl, lightly toss the spring onions, coriander sprigs and bean sprouts together. 8 Once cool enough to handle, tear the chicken breast into strips and stir back into the soup to warm through. 9 Serve in bowls topped with a handful of the crunchy, fresh vegetables.

3-inch piece of ginger, peeled and sliced
3 stalks lemongrass, outer leaves removed and thinly sliced
4 Kaffir lime leaves or 2 tablespoons fresh lime juice
1 -2 jalepeňo chilies or to taste
6 cups water
2 tablespoons nuoc mam or Thai fish sauce
2 large carrots, about 6 ounces, peeled and thinly sliced
16 shitakes, about 3 ounces, washed, stemmed, and quartered
4 green onions, trimmed and sliced thinly on the diagonal
4 ounces tat soi or watercress, stems trimmed
½ cup cilantro leaves for garnish
4 salmon fillets, skinned, about 6 ounces each
1 teaspoon canola oil

Steps:

  • Preheat the grill or broiler. Soak the rice sticks in hot tap water for 3 minutes or until softened. Drain. Mince the ginger, lemongrass, lime leaves, and chilies finely by hand or in a small chopper. Bring the water to a boil in a medium saucepan and add the ginger, lemongrass, lime leaves, and chilies. Season to taste with nuoc man. Add the carrots. Shitakes, green onions, and the drained noodles. Simmer about 1 minute. The broth can be made ahead to this point. Just before serving, stir in the tat soi or watercress. This will keep them green and crisp Brush the salmon with the oil and grill or broil 3 minutes per side or until the fish turns opaque and medium rare. 4 c coarsley chopped cabbage
1 lg white onion
6 oz fresh shiitake mushrooms
2 c chopped fresh fennel bulb
3 large whole lemongrass stalks cut into 1/4 inch rounds
1 large head of garlic cut crosswise in half
1 oz dried shiitake mushrooms
1 T vegetable oil
1/2 c raw popcorn kernels
1/3 c packed chopped fresh basil
1/3 c packed chopped fresh mint
1/3 c packed chopped fresh tarragon

Steps:

  • Combine first 8 ingredients in large pot. Bringto boil over high heat. Reduce heat to medium-low and simmer 30 mins. Meanwhile, heat 1 T oil in large saucepan over med-hi heat. Add popcorn kernals. Cover. cook until corn kernels stop popping, shaking pot often. Turn off heat under broth. Add popcorn, basil min and tarragon. Steep 15 mins. STrain into another large pot, pressing on solids. Boil until reduced to 9 cups, about 8 minutes. Season with salt and pepper. Cool 1 hour.
