GRILLED LEMONADE CHICKEN

8 small bone-in, skin-on chicken leg quarters, preferably organic (each about 12 ounces)
4 cups store-bought lemonade, such as Minute Maid
2 cloves garlic, finely grated
1/4 cup Dijon mustard
1 tablespoon dried oregano
1 tablespoon dried minced onion
2 teaspoons cumin seed
Kosher salt and freshly ground black pepper
Canola or vegetable oil, for the grill
3 large lemons

Steps:

  • Place the chicken in a 9-by-13-inch glass baking dish. Whisk together the lemonade, garlic, mustard, oregano, dried onion, cumin, 1 tablespoon salt and a few good grinds of pepper in a large liquid measuring cup until combined. Pour over the chicken, making sure all the pieces are fully submerged. Wrap tightly with plastic wrap, then refrigerate at least 4 hours or preferably 24 hours.
  • Prepare a grill for medium heat, and lightly oil the grill grates.
  • Remove the chicken from the marinade; reserve 2 cups of marinade and discard the rest. Place the chicken on a paper towel-lined baking sheet and pat dry. Sprinkle the chicken on both sides liberally with salt and pepper and arrange the pieces skin-side down on the grill, leaving some space between each. Cook until the skin is lightly charred and releases easily from the grill, about 2 minutes. Rotate the chicken pieces about 90 degrees so the skin won't burn and cook another 2 minutes. Flip the chicken skin-side up. Cover the grill and cook until an instant-read thermometer inserted into the thickest part of each thigh reads 165 degrees F, 20 to 25 minutes more. If the chicken pieces are getting too dark in spots, move them around the grill to cook evenly. Transfer to a platter and let rest for about 5 minutes before serving.
  • Meanwhile, transfer the reserved marinade to a small saucepan and place on the still-hot grill. Bring to a boil, then continue to cook until it has thickened slightly and reduced by half, about 20 minutes.
  • Finely grate the zest from 1 of the lemons, then sprinkle over the chicken. Squeeze the juice from half of the zested lemon (about 1 tablespoon) into the sauce and stir to combine. Transfer to a small bowl for serving. Cut the remaining 2 lemons in half crosswise.
  • Place the lemon halves on the grill, flesh-side down, and grill until lightly charred, 1 to 2 minutes. Serve alongside the chicken and sauce.

My family and I love chicken wings, especially during football season. I just got tired of spending so much money on wings for our party that I decided to whip up my own version of Wing Stop's® lemon pepper chicken wings. The ending result was an empty platter and pleased bellies.

2 tablespoons extra-virgin olive oil

  • Stir olive oil and lemon pepper together in a bowl.

LEMONY ROASTED CHICKEN WINGS

These meaty out-of-the-ordinary roasted wings are infused with lots of lemon, garlic and rosemary, then roasted on a bed of fingerling potatoes. Use a large roasting pan that's at least 3 inches deep, or a big earthenware gratin dish, or a couple of Pyrex lasagna pans side by side. The lemony chicken and potatoes are delicious hot and crisp, but just as good at cool room temperature.

2 pounds very small potatoes, such as fingerlings, whole, or use medium-size yellow-fleshed potatoes, cut in halves or wedges)
3 pounds chicken wings, preferably drumettes
Salt and pepper
Red pepper flakes, to taste
3 tablespoons extra-virgin olive oil
6 small lemons, cut into 1/4-inch thick half-moon slices
6 large rosemary sprigs, leaves stripped
8 garlic cloves, minced, or 1/2 cup chopped green garlic shoots
1 cup dry white or rosé wine
Pinch of dried oregano (optional)

Steps:

  • Heat oven to 400 degrees. Rinse potatoes with lukewarm water and pat dry.
  • Spread chicken wings out on a baking sheet or cutting board in a single layer. Season both sides of wings generously with salt and plenty of freshly ground black pepper. Sprinkle with red-pepper flakes as desired.
  • Transfer seasoned wings to a large bowl. Add olive oil, lemon slices, rosemary and garlic and toss well with (plastic-gloved) hands so everything is evenly coated.
  • Place potatoes on the bottom of a roasting pan. Arrange seasoned wings over potatoes in a single layer. Add wine and cover pan tightly with foil.
  • Bake, covered, for about 45 minutes, until potatoes are done. Remove foil and return the pan to the oven and bake about 20 minutes more, until wings are nicely browned. Using tongs, turn wings over and bake for another 20 minutes to brown the wings' other side. Sprinkle with dried oregano, and serve hot or at room temperature.

1 can (12 ounces) frozen lemonade concentrate, thawed
2 tablespoons brown sugar
2 tablespoons soy sauce

Steps:

  • In a large resealable bag, combine the first five ingredients. Remove half of the marinade to a small bowl; cover and refrigerate. Add chicken to the bag; seal and turn to coat. 1 ½ lb chicken wings
2 teaspoons baking powder
¼ teaspoon salt
1 tablespoon butter
3 tablespoons lemon juice
1 teaspoon pepper
salt, to taste

Steps:

  • Preheat oven to 250˚F (130˚C).
  • Place wings in a large bowl and pat dry.
  • Add the baking powder and salt to the wings. Stir to coat.
  • Spray a baking rack with nonstick cooking spray and place on top of a foiled sheet pan. Distribute wings evenly on top, making sure none of them touch and they are all face-up.
  • Bake for 35 minutes, then increase the temperature to 425˚F (220˚C) and bake for an additional 45 minutes, or until wings are crisp and golden. (Do not remove the wings from the oven when increasing temperature.)
  • For sauce, in a hot pan, melt butter. Add lemon juice, pepper, and salt. Stir until combined.
  • Add wings and stir to coat.
