12 ounces strawberries, chopped, or more to taste
1 ½ tablespoons white sugar, or to taste
2 ¾ cups sifted cake flour
2 ½ teaspoons baking powder
¼ teaspoon salt
2 sticks butter
1 ¼ cups white sugar
4 eggs, at room temperature
1 teaspoon pure vanilla extract
¼ teaspoon strawberry extract
½ cup 2% milk
3 cups powdered sugar
1 stick butter
1 tablespoon 2% milk, or as needed
1 tablespoon lemon zest
1 tablespoon lemon juice
1 teaspoon pure vanilla extract
4 strawberries, sliced, or more to taste

Steps:

  • Place strawberries in a medium bowl. Cover with 1 1/2 tablespoons sugar and refrigerate, 2 hours to overnight.
  • Preheat the oven to 350 degrees F (175 degrees C). Line 18 muffin cups with paper liners.
  • Mash strawberry and sugar mixture with a potato masher, or pulse gently in the bowl of a food processor until strawberries are chunky. Strain strawberries over a bowl, reserving juice.
  • Whisk flour, baking powder, and salt together in a medium bowl.
  • Beat butter and 1 1/4 cups sugar in the bowl of a stand mixer until pale yellow and fluffy. Add eggs, one at a time, mixing for about 1 minute after each egg and scraping down the sides of the bowl. Mix in vanilla extract and strawberry extract.
  • Add flour mixture in 2 batches, alternating with the milk, blending well and scraping the sides of the bowl after each addition.
  • Fold in strawberries and 5 tablespoons strawberry juice with a wooden spoon until well incorporated and you can see bits of strawberry showing throughout the batter. Fill cupcake liners 3/4 full.
  • Bake in the preheated oven until the tops of the cupcakes are a lovely golden color and they spring back when pressed, about 18 minutes.
  • Cool in muffin cups for 5 minutes. Remove from tins and finish cooling on a wire rack, about 30 minutes.
  • While the cupcakes are cooling, combine powdered sugar, butter, milk, lemon zest, lemon juice, and vanilla in the bowl of a stand mixer; whip until creamy.
  • Pipe frosting onto cupcakes and garnish each with a strawberry slice.

1/2 cup vegetable oil

6 tablespoons frozen (thawed) pink lemonade concentrate
Pink food color, if desired
Pink candy sprinkles, if desired

Steps:

  • Heat oven to 350°F. Place paper baking cup in each of 24 regular-size muffin cups. Make cake batter as directed on box, using cake mix, 3/4 cup lemonade concentrate, 1/2 cup oil, the water, eggs and food color. Divide batter evenly among muffin cups.
  • Bake 20 to 22 minutes or until toothpick inserted in center comes out clean. Cool in pans 10 minutes; remove from pans to cooling rack. Cool completely, about 30 minutes.
  • In large bowl, beat frosting, 6 tablespoons lemonade concentrate and the food color with electric mixer on low speed until blended. Frost cooled cupcakes. Garnish tops with candy sprinkles.

1 ¼ cups water
1 (3 ounce) package lemon-flavored gelatin mix (such as Jell-O®)
3 egg whites
⅓ cup canola oil
2 cups milk
1 (3.4 ounce) package cheesecake-flavored pudding mix (such as Jell-O®)
7 cups confectioners' sugar
1 cup butter, softened
½ cup frozen raspberry lemonade concentrate, thawed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line 24 muffin cups with paper liners.
  • Mix white cake mix, water, lemon-flavored gelatin mix, egg whites, and canola oil together in a bowl using an electric mixer on low for 30 seconds. Turn speed to medium and beat batter for 2 minutes. Fill muffin cups about 1/2-full with batter.
  • Bake in the preheated oven until a toothpick inserted in the center of a cupcake comes out clean, about 15 minutes. Cool cupcakes completely, at least 30 minutes.
  • Beat milk and cheesecake-flavored pudding mix together in a bowl using an electric mixer until smooth and thickened, about 2 minutes. Transfer pudding to a pastry bag fitted with an icing tip. Break an opening into each cupcake using the icing tip and gently squeeze pudding into cupcake until it begins to swell.
  • Beat confectioners' sugar, butter, and lemonade concentrate together in a bowl using an electric mixer until frosting is smooth and thickened; spread onto cupcakes.

¾ cup frozen lemonade pink concentrate, thawed
4 egg whites
½ cup water
⅓ cup vegetable oil
3 cups confectioners' sugar
½ cup unsalted butter, at room temperature
2 tablespoons frozen lemonade pink concentrate, thawed
1 pinch salt
1 dash red food coloring, or desired amount

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line 24 cupcake cups with paper cupcake liners.
  • Beat cake mix, 3/4 cup lemonade concentrate, egg whites, water, and vegetable oil together in a bowl with an electric mixer at low speed for about 30 seconds. I was shooting for a strawberry lemonade cupcake and it ended up tasting very strawberry and just a hint of lemon - I'll probably add more lemon flavor if I make again. These were still fantastic though and BEAUTIFUL presentation. The frosting recipe is a royal frosting with bits of strawberries (or you can make just lemon) - beautiful! Both the cupcake and the frosting are pink! I used a large star tip to frost. I modified a Pink Lemonade Cupcake recipe I found on a blog called Confections of a Foodie Bride for the cupcake part and the Strawberry Lemonade frosting recipe from Love & Olive Oil blog.

1 (10 ounce) frozen strawberry daiquiri concentrate, thawed
1 (18 1/4 ounce) box white cake mix
3 egg whites
2 tablespoons vegetable oil
5 ounces strawberries
1/2 cup granulated sugar
2 large egg whites
6 ounces unsalted butter, at room temperature
2 tablespoons lemon juice (approximately 1 large lemon)
1/2 teaspoon pure vanilla extract

Steps:

  • In a stand mixer, add the cake mix, egg whites, vegetable oil, and the strawberry daquiri concentrate. Mix on low for about 30 seconds and then increase to medium speed for 90 seconds (the batter will still be a bit lumpy; take care not to overmix so you don't end up with dry cupcakes).
  • Prepare muffin pan with cupcake liners (fill the cups between 2/3 and 3/4 full). Bake at 350 for about 20 minutes or until a toothpick registers "done" in the center cupcake.
  • Remove the pan from the oven and let rest 5 minutes. Remove the cupcakes and cool completely on a baking rack.
  • Once the cupcakes have cooled, frost the cupcakes. (Chill the cupcakes if planning to frost them later).
  • FROSTING: First wash and hull strawberries and toss them into a food processor (I used a hand blender). Puree strawberries, put over a strainer to drain some of the liquid. Stir occasionally until most of the liquid has drained.
  • Add sugar and egg whites into a mixer bowl or another large heatproof bowl, fit the bowl over a plan of simmering water and whisk constantly, keeping the mixture over the heat, until it feels hot to the touch, about 3 minutes. The sugar should be dissolved, and the mixture will look like shiny marshmallow cream. Remove the bowl from the heat.
  • Using the whisk attachment on a stand mixer or with a hand mixer, beat the meringue on medium speed until it is cool, about 5 minutes.
  • Switch to the paddle attachment if you have one (totally optional), and add the butter a tablespoon at a time, beating until smooth.
  • Once all the butter is in, beat the frosting on medium-high speed until it is thick and very smooth, 6-10 minutes. Don't freak out if your frosting curdles or separates, keep beating and it will come together again.
  • Once the frosting is thick and smooth, gradually beat in the lemon juice on medium speed, waiting until each addition is absorbed before adding more, and then the vanilla. By this point you should have a shiny smooth, velvety, pristine white frosting. You can stop at this point if you want to stick with lemon frosting.
  • For strawberry buttercream, gradually add in strawberry puree, beating on medium speed until well incorporated.

1 (3 oz) package strawberry gelatin
1 c. mashed fresh strawberries (1 1/2 c. whole = 1 c. mashed)
1 c. vegetable oil
1/2 c. buttermilk
4 eggs
For Lemon Cream Cheese Frosting:
1/2 c. shortening
1/2 c. butter, softened
1 (8 oz) cream cheese, softened
1 Tbs. vanilla
2 lbs. powdered sugar, sifted
1/2 tsp. salt
1-2 Tbs. fresh lemon juice

Steps:

  • 1. For cupcakes: In a large bowl, stir together cake mix and gelatin mix. Make a well in the center and pour in mashed strawberries, oil, milk and eggs. Beat on low speed until blended. Scrape bowl and beat 2 minutes on medium speed. Pour batter into prepared cupcake pans. 2. Bake at 350 for 15-20 minutes 3. For the lemon cream cheese frosting: Cream together shortening, butter, and cream cheese until nice and smooth. Add vanilla into mixture and combine. Sift together sugar and salt and slowly add to shortening, butter and cheese mixture. Add lemon juice and mix well. 4. Top each cupcake with a slice of strawberry and lemon zest.

I have many twists on the boxed cake mix that makes people wonder how I come up with this stuff. I had a glass of raspberry lemonade one day with lunch and that night went home and made these cupcakes.

1 box lemon cake mix and all required ingredients minus the water
1 pkg frozen raspberries
1/2 c raspberry preserves, seedless
1 pkg haribo raspberry candies
1 to 2 c powdered sugar
1 can(s) white frosting
2 tsp lemon extract

Steps:

  • 1. Prepare cake mix as directed, substituting the same amount of thawed raspberries with the juice for the water amount. Scoop into papers in cupcake pan, 2/3 full. Bake as directed, checking with toothpick for doneness.
  • 2. Scoop frosting into mixing bowl, add lemon extract and add about 1 1/2 cups powdered sugar and beat til smooth, scraping sides. You can add less or more powdered sugar to your desired thickness. It is easier to pipe than plain canned frosting that is a little thin.
  • 3. Fill your piping bag fitted with chosen tip and frost your cupcakes. Place candy raspberry on top. Heat raspberry preserves in microwave about 30 sec or until thin. Drizzle over top.
  • 4. Alerations are always fun. Sliced lemons sauteed with sugar til well browned set atop these along with the candy raspberry. The pic at top is with a real fresh raspberry although recipe says candies.
