1 1/4 cups all purpose flour
4 teaspoons ground cinnamon
1 1/4 teaspoons baking soda
1/4 teaspoon salt
1 1/4 cups sugar
3/4 cup olive oil
3 large eggs
1 1/2 cups grated carrots (about 3 large)
3/4 cup chopped toasted walnuts
Lemon Cream Cheese Icing

Steps:

  • Place rack in center of oven and preheat to 350°F. Butter 12-cup nonstick Bundt pan. Whisk flour, cinnamon, baking soda and salt in medium bowl until well blended. Using electric mixer, beat sugar, oil and eggs in large bowl on medium speed until pale and fluffy, about 5 minutes. Add flour mixture, beating just until blended. Fold in carrots and walnuts.
  • Pour batter into prepared pan. Bake cake until toothpick inserted near center comes out clean, about 50 minutes. Cool cake in pan on rack 1 hour.
  • Invert cake onto plate. Cool completely. Drizzle icing over top of cake, allowing icing to flow down sides. (Can be made 1 day ahead. Cover and chill.)

4 cups apples, cored and chopped
2 cups white sugar
3 eggs
½ cup vegetable oil
2 teaspoons vanilla extract
2 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons ground cinnamon

1 cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10 inch Bundt pan. Combine apples and sugar. Make sure apples are measured exactly or cake will be too heavy and mushy. Let stand a few minutes.
  • In a large bowl, beat eggs slightly, then beat in oil and vanilla. Mix in flour, soda, cinnamon and salt. Stir in apple mixture and chopped walnuts. Pour batter into prepared pan.
  • Bake in the preheated oven for 60 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.

2 large egg yolks
1 cup half and half
2 tablespoons grated lemon peel
1/2 teaspoon fresh lemon juice
1/4 teaspoon vanilla extract
For topping
3/4 cup sugar
3 tablespoons water
2 large Anjou pears, peeled, cored, cut into thin wedges
For cake
1 1/2 cups all purpose flour
1 tablespoon baking powder
1/4 teaspoon salt
1 cup plus 2 tablespoons sugar
1/2 cup (1 stick) plus 1 tablespoon unsalted butter, room temperature
2 large eggs
1 tablespoon grated lemon peel
6 tablespoons milk (do not use low-fat or nonfat)
3 tablespoons brandy
6 tablespoons finely chopped walnuts, toasted

Steps:

  • Make sauce:
  • Whisk sugar and egg yolks in medium bowl to blend. Bring half and half and lemon peel to simmer in heavy medium saucepan. Gradually whisk hot half and half mixture into yolk mixture. Return to saucepan. Stir over medium heat until custard thickens and leaves path on back of spoon when finger is drawn across, about 5 minutes (do not boil). Strain custard into bowl; discard solids. Whisk lemon juice and vanilla into custard. Chill until cold, about 3 hours. (Can be prepared 2 days ahead. Cover and keep refrigerated.)
  • Make topping:
  • Preheat oven to 350°F. Butter 9-inch-diameter cake pan with 2-inch-high sides. Stir sugar and water in heavy small saucepan over low heat until sugar dissolves. Increase heat; boil without stirring until syrup turns deep amber, occasionally swirling pan and brushing down sides of pan with wet pastry brush, about 10 minutes. Pour caramel over bottom of prepared pan. Overlap pears atop caramel.
  • Make cake:
  • Mix flour, baking powder and salt in medium bowl. Using electric mixer, beat sugar and butter in large bowl until creamy. Add eggs and lemon peel; beat until light and fluffy. Combine milk and brandy in small bowl. Mix dry ingredients into batter alternately with milk mixture in 3 additions each. Stir in nuts.
  • Pour batter atop pears in pan. Bake cake until golden on top and tester inserted into center comes out clean, about 1 hour. Cool in pan 5 minutes. Run small knife around edges of pan to loosen cake. Place platter over cake and invert onto platter. Let stand 1 minute. Remove pan. Serve cake warm with cold sauce.

Steps:

  • Make cake:
  • Put oven rack in middle position and preheat oven to 350°F. Butter bundt pan.
  • Sift together flour, cinnamon, allspice, nutmeg, baking soda, baking powder, and salt into a bowl. Beat together butter and sugar in another bowl with an electric mixer at medium-high speed until pale and fluffy, about minutes in a standing mixer or 4 with a handheld. Add yolks 1 at a time, beating well after each addition, then beat in vanilla. Reduce speed to low, then add flour mixture and sour cream alternately in batches, mixing well after each addition.
  • Beat egg whites in another bowl with cleaned beaters until they just hold stiff peaks, then fold whites and walnuts into batter gently but thoroughly.
  • Spoon batter into pan, smoothing top, and bake until a wooden pick or skewer comes out clean, 40 to 50 minutes. Cool cake in pan on a rack 10 minutes, then invert onto rack and cool completely.
  • Make glaze:

1/2 cup butter, at room temperature
3/4 cup sugar
2 eggs, lightly beaten
1/3 cup plain yogurt
1/3 cup buttermilk (or additional 1/3 cup yogurt)
2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon cinnamon
1 tablespoon freshly grated lemon rind
1 cup walnuts, toasted and finely chopped
3/4 cup water
1 cup sugar
1 cinnamon stick (or 1/2 tsp ground cinnamon)
1/4 cup fresh lemon juice
1/4 teaspoon ground allspice
1 dash ground cloves

Steps:

  • Preheat oven to 350°F.
  • Cream together the butter and sugar until light and fluffy, and then mix in the eggs.
  • Blend the yogurt with the buttermilk.
  • Sift together the cake dry ingredients and add them alternating with the yogurt mixture into the egg mixture.
  • Stir in the lemon rind and walnuts.
  • Pour the batter into a buttered 9X13 baking pan and bake for 30-40 minutes until a toothpick inserted into the center comes out clean. The cake will still be moist.
  • Make the glaze by simmering together all the ingredients, covered, for about 15 minutes.
  • Remove the cinnamon stick.
  • When the cake is done, remove it from the oven, turn off the oven, pour the glaze over the hot cake and return it to the oven for about 10 minutes.
  • Cut the cake into squares and serve it warm or cool.

1 (18 ounce) package strawberry cake mix or 1 (18 ounce) package yellow cake mix
4 eggs, separated
1 cup water
1/2 cup confectioners' sugar
1/2 cup butter, softened
2 teaspoons vanilla

Steps:

  • Preheat oven to 350°F.
  • Generously grease a 12-cup bundt cake pan.
  • Dot rounded side of walnut or pecan halves with butter; arrange in flutes on side and bottom of pan.
  • Blend cake mix (dry), egg yolks, water, confectioner's sugar, 1/2 cup butter, and vanilla in a large mixer bowl on low speed, scraping bowl constantly, until moistened, about 1/2 minute.

  • Method:.

1 cup butter, softened (no subs please!)
3 1/2 cups white sugar, divided
8 eggs
2 cups flour
1 tablespoon baking powder
2 large lemons
1 -2 teaspoon lemon extract (optional)
1 1/4 cups chopped walnuts
vanilla ice cream

Steps:

  • Set oven to 350 degrees.
  • Grease a 13 x 9-inch baking pan.
  • Finely grate the peel from ONE lemon, and squeeze out the juice from ONE lemon; set aside.
  • With an electric mixer beat the butter, 1-1/2 cups sugar, and the lemon extract (if using) until light and fluffy for about 4-5 minutes (no less than 4 minutes, no sugar granules should remain in the creamed mixture!).
  • Crack eggs open in a dish, making certain that there are no shells.
  • Add in a couple at a time to the creamed mixture, beating well after each addition(beat until fluffy, about 3 minutes).
  • In a small bowl, mix the flour with baking powder.
  • Add in 1 cup at a time to the creamed mixture; beat until well combined.
  • Stir in chopped walnuts.
  • Transfer the batter to prepared cake pan.
  • Bake for 40 minutes, or until cake tests done.
  • While the cake is baking, prepare the syrup.
  • Combine remaining 2 cups sugar with 2 cups water.
  • Slice remaining lemon into wedges.
  • Squeeze out the juice into sugar/water, the drop in a couple wedges.
  • Bring to a boil; boil 5 minutes.
  • Remove lemon wedges.
  • When cake has finished baking, pour the hot lemon syrup over warm cake.
  • Cool cake and serve with vanilla ice cream.

Lemon Cake/Lemon Sponge Cake
Simple Syrup
Candied Walnuts
Egg Yolks 10.5oz
Sugar 16oz
Lemon Juice 10.5oz

Lemon Zest 2.5oz
Salt 1 tbsp
Lemon Curd:
Shortening 4oz
Butter (Room Temp) 8oz
Fondant 12oz

Steps:

  • Lemon Butter Cream: Place all ingredients in a sauce pan and heat to 170 and keep stirring to prevent burning. Remove from heat and place on sheet trays to cool down. Lemon Curd: Cream butter using the paddle attachment; make sure to scrape sides of bowls. Add the rest of the ingredients and cream for approximately 20 minutes. Method: Cut the sponge cake into three layers, drizzle some of the simple syrup on top of each layer. Place a layer of cake and then spread on some of the lemon curd. Place the second piece of cake on top and spread more curd on top of that layer. Top with the last piece of cake and the frost the cake with the butter cream. Then cover with the walnuts.

½ c vegetable oil
2 tsp vanilla

2 tsp baking soda (dissolve in bit of water)

3 c powdered sugar
2 Tbsp lemon juice
1-2 Tbsp cold water

  • 1. Combine apples and sugar and set aside.

  • 3. Mix flour, soda, cinnamon and salt. Stir in alternately with sugar-apple mixture.
  • 4. Stir in nuts. Pour into greased 9 x 13 pan. Bake at 350° for 1 hour and cool.
  • 5. Frosting: Cream 4 TBSP butter. Add the 3 cups of powdered sugar. Beat in lemon juice (2 TBSP) and enough cold water (1-2 TBSP) to make icing spread easily. Beat and apread on cake.

320 -350 g parsnips
2 eggs
125 ml sunflower oil, plus extra
sunflower oil, for greasing
250 g caster sugar
1 large lemon, zest of (finely grated)
1 teaspoon vanilla extract
375 g self-raising flour
1/2 teaspoon cinnamon
1/2 teaspoon salt
60 g walnut pieces, chopped
icing sugar, for dusting

Steps:

  • Grease a square cake tin by brushing it lightly with neutrally-flavoured oil. Line it with baking parchment, then oil lightly again. Preheat the oven to 180°C/Gas 4.
  • Peel and trim the parsnips, then coarsely grate enough to give 250g of grated vegetable. Set aside.
  • In a large mixing bowl, whisk the eggs together, then add the oil, sugar, lemon zest, vanilla extract and grated parsnips. Stir to combine and set aside.
  • Sift the self-raising flour, cinnamon and salt into a second large mixing bowl. Make a well in the centre, then pour in the parsnip mixture. Add the chopped walnut pieces and stir just enough to combine the ingredients and make a stiff batter.
  • Pour the mixture into the prepared cake tin, spreading it out fairly evenly into the corners. Bake for 1 hour - 1 hour 20 minutes or until the cake is well risen, the top is firm and brown, and a metal skewer inserted in the centre of the cake comes out clean.
  • Remove the cake from the oven and allow it to cool for 5-10 minutes in the tin before lifting it out to a wire rack to cool completely. Dredge with icing sugar before serving.
