My mom used to cook these juicy burgers in butter or a little bacon fat. I do all of my sauteing in olive oil or nonstick cooking spray, yet my turkey burgers taste just as delicious as Mom's.

1 large egg, lightly beaten
1/3 cup finely chopped onion
3 tablespoons minced fresh parsley
2 tablespoons lemon juice
1 tablespoon grated lemon zest
3 garlic cloves, minced
1 teaspoon caraway seeds, crushed
1 teaspoon salt
1/2 teaspoon pepper
1 pound lean ground turkey
1 tablespoon olive oil
6 whole wheat sandwich rolls, split
6 lettuce leaves
6 thin tomato slices

Steps:

  • In a large bowl, combine the first nine ingredients. Crumble turkey over mixture and mix well. Shape into six patties. , In a large nonstick skillet, cook patties in oil in two batches over medium heat until a thermometer reaches 165° and juices run clear. Serve on rolls with lettuce and tomato.

500 g turkey (minced lean)
3 spring onions (finely sliced)
1 tablespoon tarragon (chopped)
2 tablespoons parsley (chopped)
2 tablespoons chives (chopped)
low-fat cooking spray
200 g 0% fat Greek yogurt
1 garlic clove (minced)
1/4 cucumber (deseeded and finely chopped)
1/2 lemon, juice of
4 whole grain buns
sea salt

Steps:

  • In a large bowl mix the turkey mince with spring onions and all the chopped herbs until combined, season with salt and pepper, form into 4 burgers and chill in the fridge.
  • Mix the yogurt with the garlic lemon juice an cucumber season with salt and set aside.
  • Heat a large frying pan with low fat cooking spray and cook the burgers for 5 minutes per side until cooked through. Serve in toasted buns with the yogurt dressing.

These low-fat turkey burgers are flavoured with onion and herbs, wrapped in a single rasher of streaky bacon for added flavour - a surefire family hit

1 tbsp sunflower oil
1 onion , finely chopped
500g pack minced turkey
zest 1 lemon
2 tsp fresh thyme leaves or 1 tsp dried
2 tbsp chopped parsley
4 thin rashers streaky bacon
buns, lettuce leaves, sliced tomato and tomato sauce , to serve

Steps:

  • Heat oven to 200C/180C fan/gas 6. Heat the oil in a small pan, add the onion, fry for a few mins until lightly browned and soft, then cool. Mix the turkey with the lemon zest, thyme, parsley, onion and seasoning until well combined.
  • Shape the mixture into 4 burgers and wrap a rasher of bacon around each. Put in a roasting tin, bake for 20-25 mins, then pan-fry for a few mins on each side to crisp up the bacon. Serve in a bun with lettuce, sliced tomato, tomato sauce and vegetable chips (recipe below).

I got this recipe from Mrs. Dash seasonings and changed a few ingredients to what I had on hand at the time. They were so good that I wanted to make sure I have the recipe saved for future times. I did mine in a skillet but can be done on the grill or even in the oven.

1 lb ground white turkey meat
1 cup garlic and herb-seasoned breadcrumbs (can use fresh bread crumbs)
1 large egg, slightly beaten
2 tablespoons minced onions
1 tablespoon garlic and herb seasoning, blend
2 tablespoons lemon pepper seasoning, blend
cooking spray

Steps:

  • Combine all ingredients expect cooking spray in a medium size bowl.
  • Cover bowl and place in ref. and chill 5-10 minutes.
  • Heat skillet, grill, or oven (400' ).
  • Patty out meat mixture into 4 to 6 patties, depending on how big you like your burger.
  • Spray burgers with cooking spray and place on grill, in skillet, or on a broiler pan that is slightly sprayed with cooking spray.
  • Cook burgers to your desired doneness or no longer pinkish inside.
  • Serve with your favorite burger items such as tomato, lettuce, onion and pickles.

Turkey Burgers with Grilled Tomatoes and Lemon Mayonnaise image

Pat: You know I like my burgers, but who ever thought that a burger could taste this good and be so healthy? My turkey-burger recipe (a favorite with the ladies) is a mixture of ground turkey, fresh marjoram, crushed red-pepper flakes, and garlic. The key to making these burgers taste as good as the old reliable is to use ground turkey that is 85 percent lean. This will yield an incredibly satisfying (and still virtuous) patty. Grilled tomatoes, silky avocado, and a sunny lemon condiment help keep the burger moist.

Number Of Ingredients 19

1 1/2 pounds ground turkey (85 percent lean)
2 tablespoons chopped fresh marjoram or oregano
1 tablespoon chopped fresh flat-leaf parsley leaves
2 scallions, finely chopped
1 garlic clove, minced
1 teaspoon kosher salt
1/2 teaspoon crushed red-pepper flakes
1/2 teaspoon freshly ground black pepper
Vegetable oil, for brushing patties
1 large tomato, cut into 1/4-inch slices
1/2 cup Lemon Mayonnaise (recipe follows)
4 English muffins, split in half and toasted
Leaf lettuce, for garnish
1 ripe avocado, thinly sliced, for garnish
1/2 cup mayonnaise
2 teaspoons Creole mustard (see page 93)
1 teaspoon grated lemon zest
1 teaspoon fresh lemon juice
(makes 1/2 cup)

Steps:

  • Use your hands to mix the ground turkey, marjoram, parsley, scallions, garlic, salt, red-pepper flakes, and black pepper in a medium bowl; do not over mix or the burgers will be tough. Shape the meat into four patties, each about 3/4-inch thick, and set them on a plate. Cover with plastic, and refrigerate for at least 30 minutes or for up to 8 hours.
  • Thirty minutes before you're ready to grill the turkey patties, remove them from the refrigerator. Heat the grill to medium-high. Lightly brush the patties with oil, and grill over direct heat for 4 to 5 minutes on each side, until just cooked through. (Do not overcook burgers or they will dry out.) Brush the grill with additional oil, then grill the tomato slices until they are lightly charred, 1 to 2 minutes per side, and use a metal spatula to remove them from grill.
  • Serve the burgers on the toasted muffins with the grilled tomatoes, Lemon Mayonnaise, lettuce, and sliced avocado.
  • Combine the ingredients in a small bowl, cover with plastic, and refrigerate until needed.
