2 cups self-rising flour
1 1/2 cups white sugar
1/4 cup shortening
1 cup half-and-half
2 eggs
1/2 teaspoon vanilla extract
1 teaspoon lemon extract
1 1/2 cups crushed pineapple (un-drained)
1 1/2 cups sugar
3 eggs (Beaten)
4 tablespoons cornstarch (mixed well in cup with small amount of water)
1 (8 ounce) cream cheese (softened)
1/2 cup butter (softened)
1 cup confectioners' sugar
1 teaspoon vanilla extract
1 teaspoon lemon extract

Steps:

  • For Homemade Lemon Cake:. Preheat oven to 350
  • two 9 inch round pans have them greased and floured.
  • Cream together the shortening and 1 1/2 cups white sugar. Beat in the 2 eggs. Add the flour, milk, and Lemon extract and vanilla, and beat to a soft smooth batter. _.
  • Bake 20 to 30 minutes in the preheated oven, or until tester inserted in the center of the cake comes out clean.
  • For PIneapple Filling:.
  • Beat 3 eggs in saucepan add 1 1/2c sugar and pineapple.
  • In separate cup mix cornstarch with water. bring pineapple to boiling point, add cornstarch mixture very slowly while stirring, turn to low heat stir till thickens take off heat. You want it thick.......
  • For Lemon Cream Cheese Icing:.
  • cream together your cream cheese and butter till very smooth add about 1 cup or more of confectionary sugar... add in a dash of vanilla and about a teaspoon of lemon extract.
  • start adding in your confectionary sugar slowly as blending... blend well as to get no lumps.... Taste it make sure it is sweet.......
  • Let cake cool put cooled pineapple filling on top of bottom layer... then put on top layer cake.... Put cream cheese lemon icing on top layer....enjoy.... very good cake.

I have tried many recipes for different variations of lemon surprise puddings, and delicious as they are, none of them transferred well to being gluten free. The egg whites are what helps in this recipe, however, it is the ban Marie that is key to its success.

2 ounces butter
2 lemons, juice and zest of
6 ounces sugar
2 eggs, separated
4 ounces gluten, free flour mix
1 teaspoon gluten free baking powder
1/2 pint milk

Steps:

  • Preheat the oven to 180c,
  • In a bowl, beat the butter lemon zest and sugar together until light and fluffy.
  • Add the egg yolks, flour and baking powder, beat well together.
  • Gradually add the milk and lemon juice. (Don't panic if it curdles).
  • In a separate bowl, whisk the eggs whites until they form stiff peaks.
  • Using a metal spoon, gently fold the egg whites into the lemon mixture.
  • Pour into a greased 2 pint ovenproof dish.
  • Place the dish in a ban Marie and bake for 45-50 minutes.

1 box Betty Crocker™ Super Moist™ lemon cake mix
Water, vegetable oil and whole eggs called for on cake mix box
1 jar (10 to 12 oz) lemon curd
1 cup sugar
1/4 cup water
1/8 teaspoon salt
3 egg whites
1/4 teaspoon cream of tartar
1/2 teaspoon vanilla

Steps:

  • Heat oven to 350°F. Place paper baking cup in each of 24 regular-size muffin cups. Make and bake cake mix as directed on box for cupcakes, using water, oil and whole eggs. Cool 10 minutes; remove from pans to cooling racks. Cool completely. With end of wooden spoon handle, make deep, 3/4-inchwide indentation in center of top of each cupcake, not quite to bottom. Spoon lemon curd into resealable food-storage plastic bag; seal bag. Cut 3/8-inch tip off one bottom corner of bag. Insert tip of bag into opening in each cupcake; squeeze bag to fill opening.
  • Increase oven temperature to 450°F. In 1-quart saucepan, mix sugar, 1/4 cup water and the salt. Cook over medium heat, stirring just until sugar dissolves. Heat to boiling. Boil about 8 minutes, without stirring, to 238°F on candy thermometer; remove from heat. In medium bowl, beat egg whites and cream of tartar with electric mixer on high speed until soft peaks form. Pour hot sugar syrup in thin stream over egg whites, beating until stiff peaks form. Beat in vanilla. Spoon meringue into decorating bag fitted with open #6 tip. Pipe meringue onto cupcakes. Place cupcakes on cookie sheet. Bake 2 to 4 minutes or until lightly browned.

Lemon mousseline cake
6 large eggs, separated
1/2 cup granulated sugar
2 teaspoons grated lemon rind
1 teaspoon vanilla extract
1/2 cup potato starch (3 to 3 1/2 ounces)
1/4 cup all-purpose flour
1 tablespoon unsalted butter (for buttering pan and platter)
Volcano filling
1 quart vanilla ice cream
3 tablespoons cognac
Soufflé mixture
8 egg whites from large eggs
4 egg yolks, beaten with a fork
1/2 teaspoon vanilla extract
1 cup granulated sugar
Hollowed-out shell of 1/2 lemon
1 tablespoon confectioners' sugar, for dusting the cake
For flambé
1/3 cup warm cognac

Steps:

  • To make the lemon mousseline cake:
  • Put the egg yolks, sugar, grated lemon rind, and vanilla in a bowl, and mix well with a whisk until smooth and thick. Add the potato starch and flour, and mix with a whisk.
  • Preheat the oven to 350 degrees. In another bowl, beat the egg whites until firm. Add about one-third of the egg whites to the egg-yolk mixture, and mix with a whisk to lighten the batter. Fold the remainder of the egg whites into the batter. Pour the batter into a buttered 9-inch springform pan.
  • Bake on a cookie sheet in the 350-degree oven for approximately 35 minutes. The cake should be nice and puffy as it comes out of the oven. Let cool in the pan in a warm place. The cake will shrink slightly but remain moist and spongy inside.
  • Prepare the base of the volcano surprise:
  • Butter the center of a round ovenproof platter and slice the cake horizontally into four layers. Place one of the cake slices on the buttered platter. Spoon the ice cream onto the cake slice, mounding it in the center, and smooth with a spatula.
  • Cover the top of the ice-cream mound completely with cake, breaking the remaining slices of cake into large pieces, as needed, to make them fit snugly and over the filling entirely. (Any leftover cake can be frozen for future use.) Sprinkle the cognac over the cake. At this point, the dessert can be placed in the freezer while you prepare the rest of it.
  • For the soufflé mixture:
  • In the bowl of a mixer fitted with a whisk attachment, beat the egg whites until firm. Meanwhile, mix the egg yolks and the vanilla in a separate bowl with a fork just until blended. When the egg whites are firm, add the sugar fairly quickly, and continue beating with the whisk for another 15 to 20 seconds to incorporate it. Gently fold the egg yolks into th egg whites with a spatula. Spoon some of the souffé mixture on top of the ice-cream cake, and smooth and round it into a conical shape.
  • Preheat the oven to 400 degrees. You should have approximately a 1-inch thickness of the soufflé mixture on the cake, with the soufflé higher in the center. Spoon the rest of the soufflé mixture into a pastry bag fitted with a fluted tip, and make a spiral decoration all around the bottom of the volcano. Continue decorating the cake as you like with the remainder of the soufflé mixture.
  • Embed the hollowed-out half-lemon shell in the center of the top of the volcano. Work quickly, so the ice cream and the soufflé coating remain firm. Bake in the 400-degree oven for 12 to 15 minutes. The outside of the cake should be nicely browned, and it should be just set inside.

2 tablespoons sugar
1/4 cup butter, melted
LEMON FILLING:
2/3 cup plus 2 tablespoons sugar
5 tablespoons cornstarch
1 cup water
2 large egg yolks, lightly beaten
1/3 cup lemon juice
2 tablespoons butter
1 teaspoon grated lemon zest
CHEESECAKE LAYER:
1 envelope unflavored gelatin
1/2 cup lemon juice
3 packages (8 ounces each) cream cheese, softened
3/4 cup sugar
1 cup heavy whipping cream, whipped
2 teaspoons grated lemon zest

Steps:

  • Combine the cookie crumbs and sugar; stir in butter. Press onto the bottom of a lightly greased 9-in. springform pan. Place on a baking sheet. Bake at 350° for 8-10 minutes or until crust just begins to brown. Cool pan on a wire rack., In a large saucepan, combine sugar and cornstarch. Stir in water until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes longer. Remove from the heat. Stir a small amount of hot filling into egg yolks; return all to pan, stirring constantly. Bring to a gentle boil; cook and stir 2 minutes longer. Remove from the heat. Iced lemon cream with meringues

Steps:

  • Finely grate the rind and squeeze the juice from the lemons
  • Whisk the egg whites until very stiff then add the caster sugar a spoonfuly at a time, whisking well after each addition until the mixture is very thick
  • Whisk both the double and single creams together until softly stiff. Place aside 1/3 of this cream. Then combine the remaining 2/3 with the egg yolks and mix well together. Then fold it evenly and smoothly into the whisked whites with the lemon rind and juice
  • Turn the mixture into ot 1.1 litre pudding basin, cover and freeze until firm.
  • To make the meringues, preheat the oven 250F Gas 1/2 . Line a 2 baking trays with non stick paper
  • Whisk the egg whites until very stiff then gradually add the caster sugar, whisking very well after each addition of sugar. Pipe or spoon blobs of mixture about the size of an egg cup on to the lined baking sheet. Bake for about 2 hours or until they are dry and crisp. Carefully remove from baking tray and let them cool on a wire tray.
  • Take the iced lemon cream from the freezer and dip the pudding basing in and out of hot water to help it from the bowl. Run a knife round the edge and turn the lemon cream out on to a serving plate. If the surface seems at all sticky return the cream to the freezer for another 30 mins or until firm again.
  • Spread the reserved cream over the surface of the lemon cream and cover with the meringues. Leave the bomb for about 30 mins before servining as this will mean that the centre will be soft enough to slice.
