2 c. flour
1/2 c. sugar
1/4 tsp. salt
2 sticks (1 cup) salted butter, cut into small cubes
1 1/2 c. sugar
1/4 c. flour
4 whole large eggs
Zest and juice of 4 medium-sized lemons
Powdered sugar, for sifting

Steps:

  • For the crust: Preheat the oven to 350˚. Grease a 9-by-13-inch pan with butter. (Use an 8 x 10 pan if you'd like the layers to be a little thicker.)
  • Stir together the flour, sugar, and salt. Add the butter to the bowl and use a pastry cutter to cut it all together until the mixture resembles fine crumbs. Press into the prepared pan and bake until golden around the edges, about 20 minutes.
  • For the filling: Stir together the sugar and flour. Crack in the eggs and whisk to combine. Add the lemon zest and juice and mix until combined. Pour over the crust and bake about 20 minutes.
  • Allow to cool in the fridge for a minimum of 2 hours, then sift powdered sugar over the top before cutting into squares.

1/2 cup butter, softened
1/4 cup powdered sugar
2 eggs
1 cup granulated sugar
2 teaspoons grated lemon zest
2 tablespoons lemon juice
1/2 teaspoon baking powder
1/4 teaspoon salt
Powdered sugar

Steps:

  • Heat oven to 350°F. In medium bowl, mix flour, butter and 1/4 cup powdered sugar with spoon until well mixed. Press in ungreased 8- or 9-inch square pan, building up 1/2-inch edges.
  • Bake crust 20 minutes; remove from oven. In medium bowl, beat remaining ingredients except additional powdered sugar with electric mixer on high speed about 3 minutes or until light and fluffy. Pour over hot crust.
  • Bake 25 to 30 minutes or until no indentation remains when touched lightly in center. Cool completely in pan on cooling rack, about 1 hour. Sprinkle with powdered sugar. Cut into 5 rows by 5 rows.

1 package Betty Crocker™ Sunkist® lemon bar mix
1/3 cup water
3 eggs
1/2 package (8-ounce size) cream cheese, softened
1/4 cup raspberry preserves
Powdered sugar

Steps:

  • Heat oven to 350°F whether using metal or glass pan. Stir Filling Mix, water and eggs, using fork (a few lumps will remain); set aside.
  • Press Ready-Mixed Crust (dry) in bottom of 8- or 9-inch square pan. Bake 12 minutes.
  • Drop cream cheese by spoonfuls onto hot crust and return pan to oven about 2 minutes to further soften cream cheese. Carefully spread cream cheese over crust. Stir filling mixture; pour over cream cheese.
  • Bake 35 to 40 minutes or until top begins to brown and center is set. Cool 10 minutes. Spread preserves over top. Cool completely, about 1 hour. Sprinkle with powdered sugar. For 16 bars, cut into 4 rows by 4 rows. For ease in cutting, use sharp or wet knife. Store covered in refrigerator.

Crust:
1 1/2 sticks (6 ounces) unsalted butter, at room temperature, plus more for greasing
3 tablespoons cornstarch
1/3 cup granulated sugar
1/4 teaspoon fine salt
Filling:
1/2 cup sweetened condensed milk
1/2 cup granulated sugar
1/3 cup all-purpose flour
Pinch fine salt
2 large eggs
2 large egg yolks
3/4 cup plus 2 tablespoons freshly squeezed lemon juice (about 7 lemons)
1 tablespoon fresh orange juice
Confectioners' sugar, for dusting

Steps:

  • For the crust: Lightly brush a 9- by 13-inch baking pan with butter. Beat the butter and granulated sugar with an electric mixer in a large bowl until light and fluffy, about 4 minutes. Whisk the flour, cornstarch and salt together in a medium bowl. Slowly add the dry ingredients to the butter and mix just until combined. Evenly press the dough into the prepared pan. Cover and refrigerate at least 1 hour.
  • Preheat the oven to 325 degrees F. Pierce the dough all over with a fork. Bake until golden, about 30 minutes. Cool.
  • For the filling: Whisk the sweetened condensed milk, granulated sugar, flour, salt, eggs and yolks in a large bowl until thick and light. Lightly whisk in the citrus juices. Pour the filling into the crust. Bake until set but still loose in the center, about 25 minutes. Cool to room temperature, and then refrigerate at least 1 hour.

1 cup confectioners' sugar
1 cup butter, melted
4 large eggs eggs
2 cups white sugar
1 teaspoon baking powder
¼ cup all-purpose flour
⅝ cup lemon juice

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch pan.
  • In a medium bowl, stir together 2 cups flour and confectioners' sugar. Blend in the melted butter. Press into the bottom of the prepared pan.

1 tablespoon all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt

Steps:

  • For the crust: Preheat the oven to 350 degrees F. In a medium saucepan, melt the butter. Mix the flour and confectioners' sugar in a bowl and add the melted butter, mixing until a dough forms. Press the mixture firmly into a 9- by 13- by 2-inch pan. Bake the crust for 25 minutes.
