A no-bake lemon pie made with marshmallows. This easy, and amazingly delicious pie is made even better with a Nilla Wafer pie crust.

45 Nilla Wafers Cookies (crushed - 1 1/2 cups)
5 tbsp Butter (or margarine, melted)
2 tbsp Granulated Sugar
24 Large Marshmallows
1/3 cup Lemon Juice (fresh squeezed)
1/3 cup Water
Lemon Zest (from 2 lemons)
8 ounces Cool Whip

Steps:

  • Preheat the oven to 375 degrees.
  • Mix the Nilla Wafer crumbs with the melted butter and sugar. Press the mixture into a 9" pie plate.
  • Bake the crust for 5 - 6 minutes. Set aside until ready to use.
  • Heat marshmallows, lemon juice, water, and half of the lemon zest over medium heat until the marshmallows melt. Stir frequently.
  • Remove from heat and place the lemon and marshmallow mixture in a bowl. Refrigerate until cooled and slightly thickened.
  • Once the mixture is cool, fold in the Cool Whip.
  • Pour the lemon pie filling into the prepared crust. Top with a little extra whipped topping and the remaining lemon zest if desired.
  • Refrigerate until the pie has completely set. Serve.

Deliciously cool and creamy lemon pie is the perfect summer dessert made with only 7 simple ingredients.

11 (about 160g) full-sheet graham crackers
1/2 cup (62g) salted almonds (I used roasted)
2 Tablespoons (25g) granulated sugar
5 Tablespoons (71g) unsalted butter, melted
2 (14-ounce) cans full-fat sweetened condensed milk
3/4 cup (180ml) fresh lemon juice (about 4 lemons)
4 large egg yolks*
garnish: lemon zest, lemon slices, almonds, whipped cream, or meringue topping

Steps:

  • Preheat oven to 350°F (177°C).
  • Using a food processor, pulse the graham crackers and almonds together into crumbs. A few larger pieces of nuts is OK. Pour into a medium bowl and stir in the sugar. Add the melted butter and stir until combined. The mixture will be thick, coarse, and sandy. Try to smash/break up any large chunks. Pour the mixture into an ungreased 9-inch pie dish. With medium pressure using your hand, pat the crumbs down into the bottom and up the sides to make a compact crust. Do not pack down with heavy force because that makes the crust too hard. Simply pat down until the mixture is no longer crumby/crumbly. Tips: You can use a small flat-bottomed measuring cup to help press down the bottom crust and smooth out the surface, but do not pack down too hard. And run a spoon around the bottom "corner" where the edge and bottom meet to help make a rounded crust⁠-this helps prevent the crust from falling apart.   • Pre-bake crust for 8 minutes. Remove from the oven and leave the oven on.
  • Whisk the sweetened condensed milk, lemon juice, and egg yolks together. Pour into warm crust.
  • Bake the pie for 19-21 minutes or until only *slightly* jiggly in the center. You want it mostly set. Remove from the oven and allow to cool completely on a wire rack. Once cool, cover and chill for at least 1 hour (and up to 3 days) before serving.
  • Garnish as desired. Store leftovers in the refrigerator for up to 1 week.

4 egg yolks
1/2 cup fresh lemon juice + optional tsp lemon zest
1/4 teaspoon salt
1/3 cup cornstarch
1 1/2 cups water
1 1/3 cups sugar
3 tablespoons butter
7 oz jar marshmallow cream
8 ounces thawed Cool Whip

Steps:

  • In a medium bowl, mix together the egg yolks, lemon juice, lemon zest, and salt.
  • Over medium heat, whisk together the cornstarch, water, sugar, and butter until mixture begins to thicken and boil. Boil for one minute, stirring constantly, and remove from heat.
  • Pour half of the hot mixture into the egg yolk mixture slowly and while whisking vigorously.
  • Pour the egg yolk mixture back into the hot mixture, continuing to whisk vigorously.
  • Return to a boil, and allow to boil for one minute. Stir constantly.
  • Pour pie filling into the pre-baked pie crust.
  • Use an electric beater to whisk together the marshmallow cream and the Cool Whip.
  • Spread the meringue on top of the pie. Chill for at least 4 hours before serving.

1 pkg. (3.4 oz.) JELL-O Lemon Flavor Instant Pudding
1-1/2 cups cold milk

Steps:

  • Microwave butter in large microwaveable bowl on HIGH 30 sec. or until melted. Add dry gelatin mix and marshmallows; toss to coat. Microwave 1 min. or until marshmallows are completely melted and mixture is blended, stirring after 45 sec. Add cereal; mix well.
  • Press cereal mixture onto bottom and up side of 9-inch pie plate sprayed with cooking spray.

1 (3 ounce) package lemon pie filling mix (not instant)
1/2 cup sugar
1/4 cup water
2 egg yolks
2 cups water
1 (8 ounce) package cream cheese, cut into cubes
2 cups miniature marshmallows
2 cups whipped topping or 2 cups whipped cream

Steps:

  • Heat oven to 400º.
  • Bake Pastry Crust.

No holiday is complete without ube pie. Ube is a purple yam from the Philippines used in many sweet dishes which gives the pie a deep shade of violet.

1 disk Our Favorite Pie Dough
All-purpose flour (for dusting)
2 large eggs
1 (12-oz.) jar ube halaya (such as Monika)
¾ cup unsweetened coconut milk (preferably Thai Kitchen)
¼ cup granulated sugar
½ tsp. Diamond Crystal or ¼ tsp. Morton kosher salt
½ tsp. vanilla extract
½ tsp. ube extract (optional)
1 cup heavy cream
¼ cup Marshmallow Fluff
1 Tbsp. powdered sugar

Steps:

  • Roll out dough on a lightly floured surface to a 12" round. Wrap dough around rolling pin and transfer to a standard 9"-diameter pie dish. Unfurl into dish, then lift edges and allow dough to slump down into edges. Trim overhang to 1". Fold overhang under to create a thick crust that is flush with rim; crimp as desired. Lightly prick bottom all over with a fork. Chill until firm, about 30 minutes.
  • Place a rack in middle of oven; preheat to 350°F. Line crust with parchment paper or foil and fill with pie weights or dried beans. Place on a rimmed baking sheet. Bake until edges are beginning to brown, 20-25 minutes. Carefully lift out parchment and weights. Return crust to oven and bake until golden brown all over, 10-15 minutes. Transfer to a wire rack and let cool.
  • Using an electric mixer on medium speed, beat eggs, ube halaya, coconut milk, granulated sugar, salt, vanilla extract, and ube extract (if using) in a large bowl until smooth, about 1 minute. Pour filling into pie crust.
  • Bake pie until edges of filling are set but center still jiggles slightly, 55-65 minutes. (Filling will puff as it bakes but will settle as it cools.) Transfer to a wire rack and let cool at least 2 hours. Pie can be served slightly warm or room temperature.
  • Using an electric mixer on medium-low speed, beat cream, Marshmallow Fluff, and powdered sugar in a medium bowl until medium peaks form, about 3 minutes. Transfer to a pastry bag fitted with a large star tip (or a resealable plastic bag with a corner snipped off). Chill marshmallow whip until ready to serve.
  • Pipe 8 dollops of marshmallow whip around edges of filling. Slice pie and transfer to plates. Serve with remaining marshmallow whip alongside. Do ahead: Crust can be baked 3 days ahead; store tightly wrapped at room temperature. Marshmallow whip can be made 8 hours ahead; keep chilled. Pie can be baked 1 day ahead; cover and chill. Bring to room temperature and top with marshmallow whip just before serving.
