LEMON PEPPER CHICKEN WITH CREAMY GARLIC-LEMON SAUCE image

This is one of our favorite recipes for chicken thighs. It comes together easily and tastes wonderful! The sauce is delicious on pasta. The chicken comes out nice and crispy. It's a great recipe to serve company, too!

6 chicken thighs
2 teaspoons lemon pepper seasoning, divided
1/4 cup flour (use gluten free flour for gluten free version)
2 tablespoons olive oil
1 teaspoon olive oil
1/2 tablespoon butter
5 garlic cloves, minced
3/4 cup chicken stock
1 teaspoon lemon, pepper seasoning
1/2 cup heavy cream
1/2 cup shredded mozzarella cheese or 1/2 cup parmesan cheese
2 tablespoons fresh lemon juice
3 green onions, green part only, chopped
2 tablespoons parsley, chopped
3 lemon slices, for garnish

Steps:

  • Chicken Thighs:.
  • Preheat oven to 375°F.
  • In zip-top bag, place 2 teaspoons of lemon pepper seasoning with flour and shake to mix thoroughly. Briefly shake thighs, 2 or 3 at a time, till coated.
  • Heat 2 tablespoons olive oil on medium-high heat in a large skillet. Add chicken thighs skin side down and cook for about 4 minutes until browned. Flip the chicken thighs over and cook for 2 minutes on the other side. Remove from heat. Put chicken thighs skin side up (crispy side up) on a baking sheet and bake at 375 F for about 20-25 minutes, until the chicken is fully cooked, the juices run clear and the chicken is no longer pink in the center.
  • Creamy Sauce:.
  • In the mean time, while the chicken is baking, make the sauce: Wipe the skillet you used for cooking the chicken thighs. Add 1 teaspoon olive oil and 1/2 tablespoon butter to skillet. Add minced garlic and cook, constantly stirring, for about 30 seconds. Add chicken stock and 1 teaspoon lemon-pepper seasoning to the skillet and bring to light boil. Add heavy cream and bring back to boil. Add shredded cheese and stir until melted. Reduce heat to simmer and keep stirring until the sauce is smooth. Remove from heat. Add 2 tablespoons freshly squeezed lemon juice and stir inches Top the sauce with chopped green onions (chop up only green portion of green onions and don't use white portion). Keep the sauce covered.
  • The chicken should be cooked by now. Check it for doneness and if chicken is completely cooked through, add it to the skillet on top of the sauce and on top of green onions. Top with chopped parsley and decorate with a few slices of lemon.

LEMON-GARLIC-PEPPER CHICKEN WINGS

3 pounds of chicken wings
1/3 cup olive oil
3 tablespoons lemon juice
2 tablespoons minced garlic
salt and lots of freshly ground black pepper

Steps:

  • Cut 3 pounds of chicken wings into 3 sections; save the wing tips for stock. Toss the wings with a little neutral oil to keep them from sticking.
  • Heat a charcoal or gas grill; the fire should be moderately hot and the rack 4 to 6 inches from the heat. Leave one side of the grill cooler for indirect cooking.
  • Put the wings on the cool side of the grill. Cover the grill, and cook, checking and turning once or twice, until most of the fat has been rendered and the wings are cooked through, 15 to 20 minutes.
  • While the wings cook, combine 1/3 cup olive oil, 3 tablespoons lemon juice, 2 tablespoons minced garlic, salt and lots of freshly ground black pepper in a large bowl.
  • When the wings are cooked, add them to the bowl with the sauce, and toss to coat. Now put the wings on the hot part of the grill and cook, uncovered, turning as necessary, until they're nicely browned on both sides.

Grilled Garlic, Lemon and Pepper Butterflied Chicken image

Five ingredients combine to create a simply delicious marinade for a whole chicken prepared on the grill.

1 whole chicken (3 to 3 1/2 lb)
1/4 cup fresh lemon juice
1/4 cup olive or vegetable oil
2 teaspoons cracked black pepper
6 cloves garlic, crushed
1 teaspoon salt

Steps:

  • Place chicken, breast side down, on cutting board. With kitchen scissors (or sharp knife), cut along one side of backbone from neck to tail, then cut along other side of backbone and remove bone.
  • Turn chicken breast side up, and place flat with legs and wings to the sides. Press down on breast bone with palm of hand to flatten chicken.
  • In large resealable food-storage plastic bag, mix remaining ingredients. Place chicken, breast side down, in bag; seal bag and turn to coat. Refrigerate 8 hours or overnight to marinate, turning once or twice.
  • Heat gas or charcoal grill on high heat at least 15 minutes before adding chicken.
  • Remove chicken from marinade; discard marinade. Reduce grill heat to medium. Place chicken, breast side up, on grill. Cover grill; cook 20 minutes. Turn chicken, breast side down. Cover grill; cook 10 to 15 minutes longer or until brown and juice of chicken is clear when thickest piece is cut to bone (170°F for breasts; 180°F for thighs and drumsticks). Cut chicken into 4 quarters to serve.

2 large lemons, zested
2 tablespoons course black pepper
1 teaspoon fennel seed
5 garlic cloves, grated
salt
1/2 cup extra virgin olive oil
2 sprigs fresh rosemary
2 tablespoons fresh thyme, chopped
2 tablespoons fresh parsley, chopped

Steps:

  • To prepare the garlic into a paste, salt each clove and smash with the side of your knife until it appears pasty.
  • Mix cloves of garlic paste with olive oil, rosemary, thyme, parsley, zest of both lemons, pepper and fennel seed.
  • Put chicken in the bowl with the mixture and allow it to sit in the mixture while you heat up the grill or skillet.

CHICKEN
4 bone in chicken thighs
2 tsp lemon pepper seasoning
1/2 tsp each cumin and paprika
1 Tbsp olive oil
SAUCE
2 Tbsp butter
6 clove garlic minced
1 c heavy cream
1/2 c chicken broth
1 Tbsp worcestershire sauce
3 Tbsp lemon juice fresh
zest of 1 lemon
1 Tbsp dijon mustard
salt and pepper to taste
fresh chopped parsley for garnish
hot buttered noodles
hot sauce

Steps:

  • 1. Mix the lemon pepper seasoning, paprika and cumin together. Season the chicken thighs. Add oil to oven proof skillet. Sear the chicken on both sides. Remove from pan.
  • 2. Preheat oven 400 degrees. Add butter to skillet. and stir in the garlic and cook 1 minute. Add the heavy cream, chicken broth, Worcestershire, Lemon juice, lemon zest and mustard. Cook over medium heat 2 minutes. Taste and season with salt and pepper. Add the chicken back to the skillet.
  • 3. Place the skillet in the oven and bake for 30 minutes until chicken is done. Remove the chicken and add the sauce to a saucepan and bring to a boil. Reduce for about 10 minutes. Top the noodles with the chicken thigh and spoon sauce over top. Garnish with parsley.
  • 4. drizzle some hot sauce on side of plate

GARLIC LEMON-PEPPER ROTISSERIE CHICKEN RECIPE



Garlic Lemon-Pepper Rotisserie Chicken Recipe image

This chicken is moist and delicious; it practically melts in your mouth. This recipe can also be roasted in the oven without the use of a rotisserie.

1 chicken (3 1/2 - 4 pounds)
2 lemons
3 teaspoons salt
1 teaspoon pepper divided
2 tablespoons butter softened
10 cloves garlic

Steps:

  • In a small bowl, grate the zest from 1 lemon and mix it with 2 tsp. of salt and the pepper. Add the lemon zest mixture to the butter and stir with a fork until the all the ingredients are evenly mixed. Set aside.
  • Salt the cavity of the chicken with the remaining 1 tsp. of salt. Cut the lemons into quarters and place them in the cavity of the chicken. Peel the cloves of garlic and place 5 of them in the cavity of the chicken along with the lemons.
  • Place the chicken on the rotisserie spit. Tie the legs tightly together so that the ingredients inside will not drop out when the chicken is rotating on the rotisserie.
  • Apply the lemon and butter mixture to the chicken. Rub approximately 1/2 of the butter under the skin of the chicken, spreading it out evenly. After rubbing the butter under the skin, place the remaining 5 garlic cloves sporadically under the skin. If the outside of the chicken is moist, dry it off with a paper towel and then rub the remaining lemon butter mixture on the chicken. Now finish tying the chicken around the fatty parts of the legs and tying the wings to the body.
  • Cook according to manufacturers directions, around 90-120 minutes or until the internal temperature of the thickest part of the thigh reaches 175°F. Remove from rotisserie and remove the items in the cavity. Tent the chicken with foil and allow it to rest for 15 to 20 minutes before carving.
