Grilled Veal or Pork Chops with Marsala Fig Sauce, Lemon-Ricotta Orzo, Celery and Mushroom Salad image

1/2 pound orzo
4 (1 1/2-inch thick) bone-in veal or pork chops
6 teaspoons grill seasoning
2 teaspoons fennel seeds
2 teaspoons ground coriander
16 dried figs, coarsely chopped
2/3 cup marsala wine
4 to 5 sprigs fresh thyme
Coarsely ground black pepper
6 tablespoons extra-virgin olive oil, divided
1 heart celery, thinly sliced on an angle, 3 to 4 cups
4 large portabella mushroom caps, thinly sliced
1 cup flat leaf parsley leaves
1 1/2 cups ricotta cheese
2 lemons, zest and juice divided
Parmigiano Reggiano, for shaving
1 box frozen peas
A handful of flat leaf parsley, finely chopped

Steps:

  • Heat the water to a boil for pasta. Season the water with salt and cook pasta to al dente. Heads up: you will need to add 1 box of peas the last minute of cooking time to the water.
  • Pat chops dry. Mix the grill seasoning, seeds and coriander and rub the mixture into the chops.
  • Preheat oven to 375 degrees F.
  • In a small pot over medium low heat combine the figs, Marsala and thyme. Season with some black pepper and gently reduce 15 minutes.
  • Heat about 2 tablespoons of oil in a skillet over medium-high heat. When oil smokes, sear chops 2 minutes on each side and transfer to oven for 10 minutes.
  • Slice the celery and mushrooms and combine with parsley.
  • In a pasta bowl, combine the zest of 2 lemons with ricotta cheese, salt and pepper.
  • Dress the celery and mushrooms with the juice of 2 lemons and 1/4 cup oil, season with salt and pepper and top with lots of shaved Parmesan.
  • Add peas to orzo, cook 1 minute. Drain the orzo and peas and add to the lemon ricotta. Toss to combine and adjust salt and pepper, to taste.
  • Serve chops with figs on top and ricotta orzo and celery and mushroom salad along side.

1/4 cup fresh lemon juice
1 lemon, zested
2 tablespoons prepared mayonnaise
2 teaspoons honey
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/4 cup fresh basil leaves
1/2 cup olive oil
1 lemon, cut in half and grilled, for garnish
1 pound cremini or white button mushrooms, stems trimmed
3 tablespoons canola oil
Salt and freshly ground black pepper
2 stalks celery (the white stalks from the heart), cut into 1/8-inch thick slices
1/4 cup chopped fresh parsley leaves

Steps:

  • For the vinaigrette:
  • Combine lemon juice, zest, mayonnaise, honey, salt, pepper, basil and olive oil in a blender and blend until smooth. Can be made 1 hour in advance and refrigerated.
  • For the mushrooms:
  • Heat the grill to high.
  • Place the mushrooms in a large bowl, add the canola oil and salt and pepper and toss to coat. Skewer mushrooms, 4 on a skewer. Place the mushrooms on the grill, until golden brown and slightly charred, 4 to 5 minutes. Turn over and continue grilling until just cooked through, 3 to 4 minutes longer. Remove from the grill to a cutting board and quarter.
  • Place the celery and parsley in a large bowl, add half of the vinaigrette and toss to combine, season with salt and pepper. Top with the mushrooms and drizzle with more of the vinaigrette. Squeeze lemon juice over the salad and serve.

3 tablespoons soy sauce
2 tablespoons fresh lemon juice
2 tablespoons vegetable oil
1 1/2 teaspoons sugar
1/2 teaspoon toasted sesame oil
1/2 pound white button or cremini mushrooms, trimmed and thinly sliced
1 1/2 cups cooked shredded chicken
1/2 head napa cabbage (about 1 pound), cored and shredded
6 radishes, thinly sliced
1 carrot, thinly sliced with a vegetable peeler
1 celery stalk, thinly sliced
1/4 cup fresh mint leaves
1 scallion, sliced into thin strips

Steps:

  • In a small saucepan, combine soy sauce, lemon juice, vegetable oil, sugar, and sesame oil. Bring to a boil, then let cool to room temperature.
  • Transfer soy mixture to a medium bowl and stir in mushrooms. Let stand, stirring occasionally, until mushrooms soften, about 3 to 5 minutes. Add chicken, cabbage, radishes, carrot, celery, and mint; toss to combine. Top salad with scallion.

1 lemon
Salt and freshly ground black pepper
3 tablespoons extra-virgin olive oil
1 1/2 ounces (3 cups) mixed baby greens
3 ounces cremini mushrooms, sliced 1/8 inch thick
3 ounces white button mushrooms, sliced 1/8 inch thick
1 celery heart, (the small white inner stalks), sliced diagonally into 1/8-inch-thick pieces (1/2 cup)

Steps:

  • Cut away peel and pith of lemon, and separate 3 segments from the white membranes. Thinly slice those 3 segments widthwise, and set aside. Into a small bowl, squeeze 1 tablespoon of lemon juice from remaining sections. Season with salt and pepper. Slowly whisk in olive oil until combined; set vinaigrette aside.
  • Divide greens between 2 salad plates.
  • In a medium bowl, toss mushrooms, celery heart, and all but several teaspoons of the vinaigrette. Arrange half the mushroom mixture in the center of each plate of greens; scatter chopped lemon over. Drizzle greens with remaining vinaigrette, and serve immediately.

1 c pearl barley, uncooked
2 c mushrooms, sliced thinly
1 large cucumber, chopped
1 c grape or cherry tomatoes, halved
1 can(s) kidney beans (or other canned bean)
feta cheese, crumbled
LEMON VINAIGRETTE
1/2 c lemon juice, fresh
1/2 c olive oil
1/4 c apple cider vinegar
2 Tbsp lemon peel, finley chopped
1 Tbsp agave or honey
1 Tbsp fresh basil leaves, finely chopped (or tsp dried)
2 clove garlic, minced
pinch salt & pepper to taste

Steps:

  • 1. Cook barley in rice cooker or according to package directions.
  • 2. Combine all ingredients for vinaigrette in glass jar with a lid and shake to combine.
  • 3. Combine mushroom, beans, vegetables, and barley in large bowl.
  • 4. Pour about half of the vinaigrette on salad, reserve rest for other recipe or use more if desired.
  • 5. Cover bowl and allow to marinade for 30-minutes up to 4 hours at room temperature.
  • 6. Serve with crumbled feta cheese as a main course salad or as a side.

A recipe inspired by Giada, of course with some tweaking of my own. So easy and refreshing. To my surprize loved by family, I really thought I would be eating on my own. But everybody enjoyed this lemony side dish.

3 - chopped green onions
1 small red onions, sliced
1 - juice of lemon
- equal parts of lemon thyme olive oil. or olive oil with springs of thyme
1 - chopped shallot
- salt & pepper
- sliced fresh parm

Steps:

  • Finely slice mushrooms and onions. Toss together w/green onions.
  • Combine lemon, oil, S&P,and chopped shallot, wisk together. Pour and combine over salad. Top with slices of fresh parm.
  • Serve with crusty bread for lite lunch, or makes great summer side.
