This recipe which I adopted from the RecipeZaar account has been changed. The ingredints did not match the directions and as I hadn't made it (and could find no close match on the internet to see where the error was) I have revised this recipe. I HAVE made these before and they are delicious. If you love lemon meringue pie, you are in for a treat.

2 cups plain flour
1/2 teaspoon baking soda
1/2 teaspoon salt
2 tablespoons extra finely granulated sugar
1 egg, separated
1 1/4 cups milk
1/8 cup unsalted butter, melted
2 teaspoons finely grated lemon zest
12 tablespoons yogurt
12 tablespoons lemon curd
12 small meringues, lightly crushed
mint leaf, to decorate

Steps:

  • Prepare and preheat the waffle iron or machine as directed.
  • Combine the flour with the baking soda, salt and sugar in a bowl and make a well in the center. Add the egg yolk and milk, and gradually work into the flour using a whisk. Beat gently until smooth. Carefully stir in the melted butter and lemon zest.
  • In a grease-free bowl, whisk the egg white until stiff and carefully fold into the batter using a large metal spoon.
  • Prepare the waffles & keep warm until you are ready to serve.
  • To serve, gently swirl the yogurt and lemon curd together and spoon on top of the waffles. Sprinkle with crushed meringue and decorate wih mint leaves.

Waffles are definitely a weekend breakfast treat - this recipe comes from Christine Cushing. Adding the softly whipped egg whites to the batter will make the waffles nice and fluffy. Serve with pure Canadian maple syrup, fresh berries & whipped cream or pair with blueberry sauce (#78222)...to use Christine's words...wicked! 1 3/4 cups all-purpose flour, sifted
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 lemon, zest of, grated
1 3/4 cups 2% low-fat milk, at room temperature
1/4 cup melted butter
3 eggs, separated, at room temperature
2 tablespoons icing sugar

Steps:

  • Sift together the flour, baking powder, baking soda and salt into a bowl.
  • Stir in the lemon zest.
  • In another bowl, whisk together the milk, melted butter and the egg yolks until smooth.
  • Make a well in the dry ingredients and gradually stir in the wet until just combined.
  • Do not continue to stir.
  • Cover with plastic wrap.
  • Let stand covered, about 30 minutes.
  • Preheat waffle iron according to manufacturer's instructions.
  • In a clean, dry bowl whisk the egg whites until fluffy.
  • Gradually add the icing sugar while continuing to beat until whites hold soft peaks.
  • Fold gently into batter.
  • Ladle batter into prepared waffle iron and cook according to manufacturer's instructions.

4 cups all-purpose flour
1 tablespoon baking powder
1/4 cup sugar, divided
1 teaspoon salt
6 eggs, separated
3 1/2 cups milk
1/2 cup vegetable oil
1 teaspoon lemon extract
1 lemon, zested
Oil, for waffle iron
1 cup chopped walnuts
Maple syrup, for serving

Steps:

  • Preheat the oven to 225 degrees F.
  • In a large bowl sift to combine the flour, baking powder, 2 tablespoons of the sugar and salt. In small bowl whisk the egg yolks until smooth, then add the milk, vegetable oil, lemon extract, and lemon zest. Make a well in the center of the dry ingredients. Pour in the liquid ingredients and gently stir the batter, with a wooden spoon, until just combined. Be careful not to overmix. You can use a hand beater or a stand mixer on low speed, if desired.
  • In a very clean bowl, whisk the egg whites until foamy. Add the remaining sugar and beat until soft peaks form. Gently fold the whites into the batter. Pour about 1/4 cup to 1/2 cup batter into an oiled waffle iron, sprinkle with walnuts, then close the iron. Cook until golden brown, about 5 minutes, depending on waffle iron settings. Transfer to a serving platter and keep warm in a low oven. Repeat with remaining batter. Serve warm with maple syrup.

1/2 teaspoon fresh lemon juice, plus 2 teaspoons finely grated lemon zest

1/4 cup plus 2 tablespoons sugar
40 squares (1/2 inch each) candied lemon peel (1/2 ounce)

Steps:

  • Preheat oven to 200 degrees. Whisk egg whites, lemon juice, and a pinch of salt until foamy. Slowly whisk in sugar. Whisk until stiff peaks just begin to form. Fold in lemon zest.
  • Transfer mixture to a pastrybag fitted with a 1/2-inch plainround tip. Pipe forty 5-petaled1 1/2-inch flowers onto parchment-linedbaking sheets. 1 cup cold water
1 large egg, lightly beaten

Immediately spread meringue over lemon mixture, sealing edges to sides of cups. Bake at 375° for 5-7 minutes or until golden brown.

2 lemons, juiced and zested

4 egg whites

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • To Make Lemon Filling: In a medium saucepan, whisk together 1 cup sugar, flour, cornstarch, and salt. Stir in water, lemon juice and lemon zest. Cook over medium-high heat, stirring frequently, until mixture comes to a boil. Stir in butter. Place egg yolks in a small bowl and gradually whisk in 1/2 cup of hot sugar mixture.   • Bake in preheated oven for 10 minutes, or until meringue is golden brown.
