This goat cheese with olives, lemon, and thyme is a ridiculously easy yet undeniably impressive appetizer made quite simply by infusing oil with thyme and lemon and then warming olives and setting them out alongside creamy goat cheese.

1/2 cup assorted olives (pitted if desired)
3 thyme sprigs (leaves stripped from stems if desired)
3 tablespoons extra-virgin olive oil
1/2 teaspoon finely grated lemon zest (preferably organic)
1/4 teaspoon coarsely ground black pepper
One (4-to 5- ounce) fresh goat cheese medallion or two 2-ounce (56-g) goat cheese buttons (at room temperature )
Crackers, flatbread, or baguette slices

Steps:

  • Gently heat the olives, thyme, oil, zest, and pepper in a skillet or saucepan over low heat until fragrant. Do not allow the oil to simmer.
  • Remove the pan from the heat and let cool to room temperature.
  • Pour the olive mixture over the goat cheese. (This can be done up to 2 hours ahead and kept, covered, at room temperature.)
  • Serve with crackers, flatbread, or baguette slices.

1 (4- to 5-ounce) fresh goat-cheese medallion or 2 (2-ounces) goat-cheese buttons

Steps:

3 tablespoons olive oil
36 (1/2-inch-thick) slices baguette
3 tablespoons finely chopped fresh Italian parsley leaves
2 1/2 teaspoons finely chopped fresh thyme leaves
2 teaspoons finely chopped fresh rosemary leaves
1 teaspoon lemon zest
1 teaspoon coarsely cracked black pepper
1/4 teaspoon salt
1 11-ounce log soft fresh goat cheese
1 1/2 tablespoons extra-virgin olive oil or Meyer lemon olive oil
Fresh herb sprigs, for garnish

Steps:

  • Preheat the oven to 375 degrees F.
  • Arrange the bread slices on 2 heavy baking sheets. Drizzle 3 tablespoons of olive oil over the bread slices. Bake until the crostini are pale golden and crisp, about 10 minutes.
  • Meanwhile, stir the herbs, lemon zest, pepper, and salt in a medium bowl to blend. Using about 2 teaspoons of cheese for each, form the goat cheese into 1-inch diameter balls. Roll the cheese balls in the herb mixture to coat completely. Arrange the cheese balls on a platter. Drizzle the extra-virgin olive oil over and around the cheese balls. Serve with the crostini. 4 ounces goat cheese, sliced into 6 rounds
2 teaspoons lemon peel, grated
2 tablespoons sun-dried tomatoes, drained and chopped (oil packed)
1/2 teaspoon capers, minced
1 teaspoon thyme leaves, chopped
kosher salt (or other coarse salt)
3 rosemary sprigs
1/2 cup olive oil
toasted baguette, slices or cracker

Steps:

  • In a shallow dish arrange the six pieces of cheese in one layer. Sprinkle lemon, tomatoes, capers thyme, and salt over the cheese pieces. Add the rosemary sprigs.
  • Pour olive oil over the cheese, making sure the oil covers the cheese (use more if necessary).
  • Place cheese dish in refrigerator and let marinate for 2-6 hours.
  • Bring dish to room temperature (about 45 minutes) before serving.
  • Spread cheese with marinade on crostini or crackers.
