LEMON HERB MARINADE

Lemon Herb Marinade image

This easy Lemon Herb Marinade can be whipped up in 10 minutes. Zesty herbs and simple ingredients work together to elevate chicken, fish or pork. Feel free to switch up the herbs you use in this Lemon Herb Marinade. For example, for a lemon-rosemary marinade, consider substituting parsley for the basil and rosemary for the thyme. A good rule of thumb when mixing up marinades is, for fish, chicken and pork, light herbal notes tend to work well. This lemon and herb marinade is not to be missed.

SALMON WITH LEMON-HERB MARINADE

Salmon With Lemon-Herb Marinade image

Here's one of the easiest ways to entertain: broil or grill a large salmon fillet, then adorn it with lemon wedges and rosemary sprigs. This recipe marinates the rich salmon in lemon juice, soy sauce and herbs. Serve it with a sharply flavored potato salad (like this one, with red Bliss potatoes and watercress in a yogurt-horseradish dressing) and a large bowl of greens.

GRILLED LEG OF LAMB WITH GARLIC AND HERB LEMON MARINADE

Grilled Leg of Lamb With Garlic and Herb Lemon Marinade image

This is really the only recipe I use when I grill a leg of lamb. Plan ahead, the lamb needs to marinate 24 hours or overnight. This marinade can also be used for lamb chops. A butterflied leg of lamb is with the bones removed and cut to spread open, you can ask your butcher to remove the bones and butterfly it for you. If you prefer a more lemony taste then thinly slice half of another lemon, leave the peel on, and just throw the slices inside the bag or bowl with along with the other marinade. If desired you can also stuff the lamb with garlic cloves as well as adding the minced garlic in with the marinade. Grilling time depends on size of lamb. This recipe produces an excellent grilled lamb that melts in your mouth, try to not overcook the lamb, for best results leave slightly pink in the middle.

LEMON, HERB & GARLIC MARINADE

Lemon, Herb & Garlic Marinade image

I've adapted this from a Jamie Oliver recipe. Jamie makes it with his 'flavour shaker' but as most people probably don't have one - you can use a mortar and pestle. Use this marinade for steak, chicken or fish. It imparts a wonderful flavour. We had it with steak and it made it beautifully moist and tender and lemony - quite a different taste for steak but absolutely delicious! Quantities given should make enough to marinade 2-3 steaks or 2 large chicken breasts or 4 fillets of fish.

ROASTED PORK TENDERLOIN WITH LEMON-HERB MARINADE

Roasted Pork Tenderloin with Lemon-Herb Marinade image

This pork roast is tender, juicy, and full of flavor. If you don't have fresh sage, substitute 1 tsp. dried.

Provided by Gretchen ***

Categories     Roasts

Time 35m

Number Of Ingredients 11

1 1 1/4 lb pork tenderloin
2 Tbsp olive oil, extra virgin
1/4 c lemon juice
2 tsp lemon zest, grated
2 garlic cloves, minced
1 Tbsp fresh sage, chopped (5 or 6 leaves)
1/4 tsp poultry seasoning
1/4 tsp onion powder
1/2 tsp salt
freshly ground black pepper
1 c low sodium chicken stock

Steps:

  • 1. Rinse pork tenderloin and pat dry. Using a small sharp knife, cut away sinew ( this is also called silver skin) from pork. If left on, this will shrink the meat and make it tough.
  • 2. In a large Ziploc bag, combine olive oil, lemon juice, zest, garlic, sage, poultry seasoning, onion powder, and salt. Add tenderloin to bag and coat with the marinade. Squeeze out all the air and seal. Marinate in the refrigerator 2 to 4 hours.
  • 3. Remove tenderloin from bag and discard marinade. Blot with paper towel. Sprinkle salt and pepper all over.
  • 4. Preheat oven to 400 degrees. Heat 2 tablespoons oil in a large oven-proof sauté pan over medium-high heat. Brown tenderloin in oil on all four sides. Place in the oven and roast for 20 minutes, or until internal temp is 145 degrees. Transfer to serving plate, cover loosely with foil, and let rest for 10 minutes.
  • 5. While meat is resting, make a pan sauce. Discard oil from pan, reserving 1 tablespoon. Heat pan over medium high heat. Add 1 cup low sodium chicken stock. Bring to a boil, stirring with a wire whisk to loosen up all the brown bits from the bottom of the pan.Reduce heat to medium. Combine 1 teaspoon cornstarch with 1 teaspoon cold water. Whisk cornstarch mixture into sauce and cook until thickened. Spoon sauce over sliced pork roast.

LEMON HERB MARINADE / PASTE FOR CHICKEN, PORK AND FISH

Lemon Herb Marinade / Paste for Chicken, Pork and Fish image

This is an awesome and simple, universal marinade that can be used for nearly anything. I've used it on many different cuts of pork and chicken, including whole rotisserie chickens and pork shoulders! It will likely work on beef too and I'll update the recipe after I try it on beef.

Provided by rashafaa

Categories     Lunch/Snacks

Time 10m

Yield 1 Batch, 1 serving(s)

Number Of Ingredients 8

2 lemons
8 garlic cloves
8 sprigs fresh rosemary
1 tablespoon dried thyme
2 tablespoons Dijon mustard
1 tablespoon kosher salt
2 tablespoons fresh ground black pepper
1/3 cup olive oil

Steps:

  • Drop everything into a food processor as is. Rind on lemon and all. The finished product is a thick paste. If you want to thin it out, you can add more olive oil, or omit the rind of the lemons. I prefer the paste and dip each piece of meat in the food processor by hand before transferring to the Ziploc bag to make sure it's well coated. Depending on what I'm marinating, I will let it sit in the mixture for 24-72 hours. I've used it in as few as 6 hours and it's still excellent.
  • Because this is more of a paste than a marinade, you can stretch it a long way. While this only yields a few cups, it is more than enough for a pack of boneless skinless breasts and family pack of pork chops.
