1 cup mayonnaise
1/4 cup fresh basil leaves
1 lemon, zested and juiced
1/2 clove garlic, finely grated
Kosher salt
Nonstick cooking spray, for the wire rack and carrots
1 1/2 cups panko breadcrumbs
1 cup grated Parmesan
1 tablespoon dried parsley
1/8 teaspoon cayenne
Kosher salt
1 tablespoon milk
3 large eggs
4 medium carrots, cut into thin 3-inch batons
2 tablespoons all-purpose flour

Steps:

  • For the aioli: Combine the mayonnaise, basil, lemon zest and juice and garlic in a blender and blend until almost smooth. Season with salt. Transfer to a bowl and refrigerate until ready to serve.
  • For the carrot fries: Preheat the oven to 425 degrees F. Fit a large baking pan with a wire rack and spray the rack with cooking spray.
  • Mix together the panko, Parmesan, parsley, cayenne and 1/2 teaspoon salt in a wide shallow bowl. Whisk the milk and eggs together in another shallow bowl.
  • Toss the carrots with the flour. Working with a few carrots at a time, shake off the excess flour, then dip them in the egg. Let the excess egg drip off, then toss them in the panko mixture, patting them so the crumbs adhere. Arrange them on the wire rack in a single layer.
  • Spray the coated carrots thoroughly with cooking spray, then bake until golden brown and crisp-tender, 10 to 15 minutes.
  • Serve the carrot fries with the aioli for dipping.

1 lb thin asparagus stalks, trimmed
2 large eggs, whisked
⅓ cup all purpose flour
non-stick cooking spray
½ cup shredded parmesan cheese
2 cups seasoned panko bread crumbs
salt & pepper
½ cup mayonnaise
2 ½ tablespoons lemon juice
1 teaspoon thyme OR two teaspoons fresh minced thyme
1 tablespoon Italian parsley fresh, minced
1 large scallions/green onions, minced
½ teaspoon salt
ground black pepper, to taste

Steps:

  • Preheat oven to 375°F.
  • Line a baking sheet with parchment paper or silicone baking mat.
  • Spread panko crumbs in one layer across the lined baking sheet. Spray panko crumbs surface with cooking oil spray.
  • Bake panko crumbs for about 4-5 minutes or until golden - be sure not to let them burn. Remove from oven and let cool.
  • Turn oven up to to 425°F.
  • Mix in ½ cup parmesan cheese with the breadcrumbs while still on the baking pan. Then spread out mixture evenly across baking sheet again in one layer.
  • Line a separate baking sheet with parchment paper or non-stick baking mat.
  • In a large bowl/pan long enough to fit asparagus, pour in whisked eggs. In a separate container long enough to fit asparagus, pour in flour and season four with salt and pepper.
  • Coat asparagus lightly in egg. Shake off excess egg and then lightly coat asparagus in flour. Shake off excess flour. Coat asparagus in egg again and shake off excess egg.
  • Place asparagus in panko mixture (that is still on the baking sheet) and press panko crumbs onto the asparagus.
  • Set coated asparagus onto empty lined baking sheet.
  • Bake for 10-12 minutes at 425 degrees, or until asparagus is cooked on the inside and the outside coating is nice and crispy, flipping asparagus halfway through cooking.
  • Serve with the lemon dipping sauce OR your favorite dipping sauce/ketchup/BBQ sauce.
  • Add all ingredients into a small bowl and whisk together.
  • Cover with plastic wrap and refrigerate for at least 30 minutes or overnight to allow the flavors to blend.
  • Store for up to one week in the refrigerator.

1/4 cup extra-virgin olive oil
1 tablespoon salt
1/2 teaspoon freshly ground black pepper
3 Meyer lemons, zested
2 tablespoons freshly chopped Italian parsley leaves

Steps:

  • Preheat the oven to 450 degrees F.
  • Peel potatoes and cut into 3/8-inch thick slices (lengthwise) cut again into 3/8-inch thick fries. Place the potatoes into a bowl with cold water; this will help keep the fries crisp and white. Just before cooking, drain water and place on paper towel, pat dry completely. Put in a bowl; add olive oil, 1 tablespoon salt, 1/2 teaspoon black pepper. Toss well and lay out in 1 layer on nonstick baking sheets. Bake until light brown. Cook for approximately 30 to 40 minutes, turning frequently until golden brown.

1 tbsp chopped fresh dill
1 clove garlic, minced
2 tsp sirarcha
1 tsp grated lemon zest

Steps:

  • Preheat oven to 425. Line a baking sheet with parchment paper. In a skillet over medium low heat toast the panko breadcrumbs until lightly golden. Transfer to a plate and add salt. In a bowl beat eggs and water together to create an egg wash and pour onto a plate. Set up a workstation with the asparagus, flour that has been placed on a plate, egg wash, toasted panko crumbs, and baking sheet. Roll an asparagus spear in flour, then egg wash, and then panko crumbs, pressing to adhere. Repeat with remaining asparagus. Place the breaded asparagus on the baking sheet and place in the oven. Bake for 10 minutes until the asparagus is cooked but still crunchy. While the asparagus is baking combine all dipping sauce ingredients and stir to combine.

2 russet potatoes (about 1 1/2 pounds)
1 1/2 teaspoons freshly ground black pepper
1 1/2 teaspoons grated lemon zest (from 1 lemon)
1 teaspoon kosher salt
1/4 teaspoon garlic powder
1/4 teaspoon mustard powder
1/4 teaspoon onion powder
Vegetable or canola oil, for deep-frying
2 tablespoons chopped fresh parsley

Steps:

  • Peel and rinse the potatoes. Slice them lengthwise into thin slices, and then into thin sticks. Place the potato sticks in a bowl and cover them with cold water. Swish them around, then pour off the water and replace it with fresh water. Swish them around again and pour off the water, then cover with fresh water and let soak for 2 to 3 hours.
  • Make the seasoning: Mix the pepper, lemon zest, salt, garlic powder, mustard powder and onion powder in a large bowl and set aside.
  • When you're ready to make the fries, heat about 3 inches of oil in a heavy pot until a deep-fry thermometer registers 300 degrees F.
  • Drain the potatoes and lay them out on baking sheets lined with paper towels. Blot them with more paper towels to dry. Carefully drop half of the fries into the oil and cook until they start to soften, 2 to 5 minutes. Remove with a slotted spoon and drain on fresh paper towels. Repeat with the remaining fries.
  • Increase the oil temperature to 400 degrees F. Fry the potatoes in two batches again until golden brown and crisp, 2 to 5 minutes, returning the oil to 400 degrees F between batches. Remove the fries from the oil, add to the bowl with the seasoning and toss to coat. When all the fries are cooked, toss with the parsley.

As happens with many baked eggplant dishes, when the fries have a chance to cool fully, they can get a little limp and not nearly as delicious. Steps:

  • To make the eggplant fries, preheat the oven to 425°F Wedge a wire rack atop a baking sheet (so the fries will be slightly elevated and not directly touching the baking sheet).
  • Cut the eggplant into 1/2-inch thick rounds. Then cut each round into 1/2-inch thick spears. Set aside.
  • Pour the flour into a small bowl. Beat the eggs together in another small bowl. In a third small bowl, combine the breadcrumbs, Parmesan, za'atar, salt and cayenne.
  • Roll the eggplant spears in the flour, dunk them in the egg, and then roll them into the bread crumb mixture. Lay each spear close to one another on the prepared baking sheet. Bake until golden brown and crispy, about 15 minutes. Sprinkle the tops with flaky salt.
  • While the fries are baking, combine all the ingredients for the dip except the water in a small bowl. To thin, add a drizzle of water and stir vigorously until you reach the desired consistency.
  • Serve the fries with the dipping sauce while the fries are still hot.

Remove the carrot sticks, allowing any excess egg white to drip back into the bowl. Drop the carrot sticks in the panko; toss gently to coat.
  • Working in batches, fry the carrot sticks until deep brown, 3 to 4 minutes, turning and separating with a wooden spoon and adjusting the temperature to maintain 350 degrees F. Drain on paper towels.
  • Place a bowl of the dip in the center of a platter. Sprinkle the fries with salt and pepper. Arrange the fries around the dip, and serve.

1 tsp. zest and the juice from 1 lemon
1/4 cup olive oil
1 tsp. sugar
2 Tbsp. chopped shallots
6 small boneless skinless chicken breasts (1-1/2 lb.)
1 pkg. (19 oz.) ORE-IDA Sweet Potato Steak Fries

Steps:

  • Mix Worcestershire sauce, lemon zest, juice, oil, sugar and shallots until blended. Reserve 1/4 cup for later use; pour remaining over chicken in shallow dish. Turn to evenly coat both sides of each chicken breast. Refrigerate I hour to marinate, turning chicken occasionally.
  • Heat grill to medium heat and heat oven to 400ºF. Bake fries in oven as directed on package. Meanwhile, remove chicken from marinade; discard marinade. Grill chicken 6 to 8 min. on each side or until done (165ºF), brushing frequently with the reserved Worcestershire sauce mixture for the first 5 min. of the grilling time.

That version used lime and cilantro, which I think would be a great combo, the difference would be that you'd wait to toss in the cilantro until the very end. Their cooking time was also way off, although with something like fries different ovens can make a big difference.

2 tablespoons olive oil
1/2 teaspoon salt (plus possibly more to taste)
2 fresh garlic cloves, minced (I grate mine)
1/4 teaspoon red pepper flakes (optional)
1/2 teaspoon lemon zest, finely grated
1 tablespoon fresh lemon juice
1 teaspoon dried basil

Steps:

  • Put the oven rack in the middle position and preheat oven to 375 degrees F.
  • Toss the yam fries with 1 tbsp of the olives oil, 1/4 tsp of the salt and the garlic.
  • Arrange in one layer on a baking sheet and roast them for 20 minutes.
  • Meanwhile whisk together the other tbsp of olive oil, the lemon zest, lemon juice, basil and remaning 1/4 tsp salt -- and red pepper flakes if using.
  • Remove the yam fries from the oven, drizzle over the olive oil/lemon mixture then flip the fries over. You want to flip the fries at this point to help them crisp up as well as distribute the lemon/basil seasonings.
  • Return to oven and cook for about another 20 minutes until done. I like mine to crisp up a bit so I like to turn on the broiler for the last few minutes.
  • Spinkle with a little extra salt if you like.

1 tablespoon fresh lemon zest
2 teaspoons lemon juice

  • 1. Cut the potatoes lengthwise into thin strips, about 1/3-inch in width. *Soak the potatoes in ice-cold water for 1 hour, drain, and pat completely dry.
  • 2. Heat the oil in a deep fryer or deep skillet to 325*F. and fry the potatoes, in batches, for 2 minutes. Drain the fries on fresh kitchen towels and heat the oil to 375*F. Fry the potatoes for a second time, in batches, for 1 1/2 minutes. Drain the fries on baking sheets lined with fresh kitchen towels. Gently toss the fries with the lemon zest, juice, salt, and pepper. Serve the lemon fries hot.

  • Remove the yam fries from the oven, drizzle over the olive oil/lemon mixture then flip the fries over. You want to flip the fries at this point to help them crisp up as well as distribute the lemon/basil seasonings.
  • Return to oven and cook for about another 20 minutes until done. I like mine to crisp up a bit so I like to turn on the broiler for the last few minutes.
  • Spinkle with a little extra salt if you like.

1 cup mayonnaise
1/4 cup fresh basil leaves
1 lemon, zested and juiced
1/2 clove garlic, finely grated
Kosher salt
Nonstick cooking spray, for the wire rack and carrots
1 1/2 cups panko breadcrumbs
1 cup grated Parmesan
1 tablespoon dried parsley
1/8 teaspoon cayenne
Kosher salt
1 tablespoon milk
3 large eggs
4 medium carrots, cut into thin 3-inch batons
2 tablespoons all-purpose flour

Steps:

  • For the aioli: Combine the mayonnaise, basil, lemon zest and juice and garlic in a blender and blend until almost smooth. Season with salt. Transfer to a bowl and refrigerate until ready to serve.
  • For the carrot fries: Preheat the oven to 425 degrees F. Fit a large baking pan with a wire rack and spray the rack with cooking spray.
  • Mix together the panko, Parmesan, parsley, cayenne and 1/2 teaspoon salt in a wide shallow bowl. Whisk the milk and eggs together in another shallow bowl.
  • Toss the carrots with the flour. Working with a few carrots at a time, shake off the excess flour, then dip them in the egg. Let the excess egg drip off, then toss them in the panko mixture, patting them so the crumbs adhere. Arrange them on the wire rack in a single layer.
  • Spray the coated carrots thoroughly with cooking spray, then bake until golden brown and crisp-tender, 10 to 15 minutes.
  • Serve the carrot fries with the aioli for dipping.

1 pkt. SHAKE 'N BAKE Chicken Coating Mix
1 egg
1/2 cup KRAFT Mayo with Olive Oil Reduced Fat Mayonnaise
1/2 tsp. lemon zest
1 small garlic clove, minced

Steps:

  • Heat oven to 450ºF.
  • Cut zucchini crosswise in half, then cut each piece into 1/4-inch-thick matchlike sticks. Add cheese to coating mix in shaker bag; shake gently to combine. Whisk egg in medium bowl until blended.
  • Add zucchini, in batches, to egg; toss until evenly coated. Use tongs to add 1/4 of the zucchini to coating mixture in shaker bag; close bag, then shake to evenly coat zucchini. Spread onto rimmed baking sheet sprayed with cooking spray. Repeat with remaining zucchini.
  • Bake 12 to 13 min. or until zucchini is golden brown, turning after 7 min. Meanwhile, mix remaining ingredients until blended.

1 bunch asparagus, washed
salt
water
Garlic Lemon Aioli (recipe below)
2 medium cloves garlic, peeled
1/4 teaspoon kosher salt
1/4 teaspoon lemon zest, finely grated or minced
1 tablespoon lemon juice
1 teaspoon olive oil
3 tablespoons mayonnaise

Steps:

  • Aioli: Using a garlic press, smash the cloves into a small mixing bowl. Add salt, lemon zest, and lemon juice, and stir until salt is dissolved. Add olive oil and mayo and stir to combine. First remove the ends from the asparagus using my tried and true method: snap them off with your fingers. The asparagus will automatically break where the woody tough part ends and you will never have to gnaw through tough asparagus again. In a pot large enough to hold the asparagus, bring 4 inches of well-salted water to a boil (salty like the sea). Reduce heat to medium and add asparagus. Cooking time will depend on the thickness of the spears, 1 to 3 minutes. The desired result here is crisp-tender, not limp. Watch closely and test often. Drain asparagus, and serve hot with Garlic Lemon Aioli

Asparagus Fries
1 bunch of asparagus
1 cup panko bread crumbs
1/2 teaspoon salt
2 eggs
2 tablespoons water
1/2 cup all-purpose flour
1/2 cup of grated Parmesan Cheese
Lemon Herb Sriracha Dip
1 cup plain yogurt
2 tablespoons lemon juice
1 tablespoon fresh parsley, chopped
1 tablespoon fresh dill, chopped
1 clove garlic, minced
2 teaspoons Sriracha Hot Chili Sauce
1 teaspoon grated lemon zest
1/4 teaspoon salt
Fresh ground pepper to taste
Panko Breadcrumbs and Sriracha can be found at most major grocery stores or on-line.

Steps:

  • Lemon Herb Sriracha Dip: Mix all ingredients together, cover and refrigerate for a minimum of 30 minutes. Asparagus: 1. Preheat oven to 425°F. Line a baking sheet with parchment paper. In a skillet over medium-low heat, toast the panko breadcrumbs until lightly golden. Transfer to a plate and add salt. Toss to combine. 2. In a bowl beat eggs and water together to create an egg wash and pour onto a plate. Set up a "work station" with the asparagus, flour that has been placed on a plate, egg wash, toasted panko crumbs with parmesan cheese mixed together, and a baking sheet. 3. To bread the asparagus: First roll an asparagus spear in flour, then egg wash, and then panko crumbs - pressing to adhere. Repeat with remaining asparagus. Place the breaded asparagus on the baking sheet and place in the oven. Bake for 10 minutes until the asparagus is cooked but still crunchy. 4. If you had not not completed the sauce yet...While the asparagus is baking, make the dipping sauce. Place all ingredients for the sauce in a bowl and stir to combine, it still needs to sit for at least 30 minutes, so it is best to do this first. 5. Plate, serve, and watch these disappear.
